Hey, I got on the scales at the Y this morning and I've lost 10 LBS. Well, cause I was sick :o(

Finally made it downtown to Nikki's Downtown: and they had my snapper fingers already ordered and my bowls of spinach and hominy on the counter!

Today is Alyssa's first birthday and we are going to Amber and Mike's. I am taking the leftover beef and pork barbecue and baked beans from the party yesterday. I made some coleslaw today and also some deviled eggs. I am also taking chips and the leftover cookies, plus the smash cake. It has been nice and sunny here today.

I browned some pork chops and sauteed some carrots, onions and celery briefly. Threw in some rice and chicken broth and baked it all in the oven. Broccoli on the side. Should be ready to eat now.

Ah, glad you got your snapper, Glenda. I'd take the spinach, but you could have my hominy. Great weight loss--I don't think all of it was the flu. You've been a really good girl lately!

Yum, Jas--lots of veggies. I love 'em. Did you make that up? Sure sounds good, but I just don't have a creative bone in my body. Sigh!

We made a chicken stir fry tonight. It was very good.

We are outside Baton Rouge, LA for the night. Mike drove in rain all day and sometimes so heavy you could hardly see. The sun is peaking through right now but more rain is predicted.

Tonight we are having unstuffed pepper soup that I made and froze before we left home in January. I have rice cooking in my rice cooker. We have some gingerbread cookies for dessert.

Pam, I don't know why I don't think of stir-fry more often. It's pretty healthy and so easy. I need to make a note!

I have this chicken dish I make, chicken breast and sliced potatoes baked in a creamy cheddar cheese sauce it is so good and so easy.

I still have my bad cold so it will be Chicken noodle soup for me again.

Finished up my parmeson asparagus that I roasted last night, with buttered rice and butterscotch pudding. Made a sandwich for a late lunch today so wasn't very hungry tonight.

Hash from leftover roast beef and salad. Not really in the mood but gotta use it up.

I am happy to, it is amazingly simple. I use chicken breast but any chicken parts can be used. You need potatoes sliced fairly thin, I like red, but any will work, one onion sliced up, if you don't want onions skip them. One jar of Ragu cheese creations double cheddar, I have used cheese whiz but it is not as good.
Spray Pam in a baking dish layer in the sliced potatoes and onion, season with salt and pepper or your favorite seasonings. Pour some of the cheese sauce over that, put your chicken on top, season, pour remaining sauce over the chicken. I like to sprinkle a big hand full of grated cheese on top, usually I have colby jack on hand.
Put in 375 oven for about an hour, depending on the chicken pieces size.
It will be all melted gooey good.

By the way if you can not find the Ragu cheese creations double cheddar then you can use any of the other Ragu cheese creations sauces they are all good and will work. I also really like the roasted garlic Parmasean sauce.

Thanks for the recipe. It sounds very good. I think I'd especially like the Parmesan cheese sauce.
