Apple Cinnamon Oatmeal Bread

Everyone on this forum has been so nice and helpful I wanted to share a good recipe with you.

For a quick bread called Apple Cinnamon Oatmeal Bread. Figure it is rapidly becoming the time of year that we are thinking of those flavors and seasonings.

I made this exactly as written except I doubled it. Really tasty and easy. One of the great things about this recipe is it contains no oil. However even being only appr. 5 grams of fat per slice it is not dry or rubbery. Good consistency.

You are very welcome. Although this recipe features apple flavored oatmeal rather than real apples they could be added easily. I also am contemplating golden raisins or chopped dates. Really you could add whatever pleases your palate to this recipe.

Resurrecting this old thread because I was sorting through my print-out recipes a couple of days ago, filing the one's that I had tried and sorting the untried ones. For some reason, I had failed to annotate Rusty's recipe so, thinking it was untried, I made it again. Those loaves are gone so I made it again today. I mixed the two loaf version in the bread machine and removed to rise, shape loaves, rise & bake again... Using quick-cooking oats (cuz' that's what I had & they need to be used up)--1 c. oats in 2 cups boiling water--I didn't need to add any addt'l. water at all. Dry yeast into the breadmaker...total amount of water for the recipe was 2 cups. Of course, weather conditions, your flour, etc. & YMMV. If you're using whole, old-fashioned oats, you may need the additional hydration.

Thanks guys! Grainlady - you are just a font of information!! I keep copying and pasting your little "gems" into a separate document that I then keep in front of the "breads" section of my three ring binder where I keep all the recipes I collect - keep them coming! Unfortunately, the bread's already long eaten so I don't have any pics! Sorry - I'll remember to take some next time! I just made two free form round loaves. Off the top of my head, the recipe I used called for 1 1/2 cups oatmeal and 3 cups of all purpose flour. I simply used 1 1/2 cups oat flour instead of the oatmeal. So there was 4 1/2 cups total flour. I used 1/2 cup honey because of the other recipe calling for 1/2 cup maple syrup. It was my first time making it and since I wasn't following the recipe exactly I figured I'd just do it and see what the results where. It made two small to medium loaves of bread. It seemed to rise fine - I'm no expert bread maker by any means, but it did double in size for the first rise, then I halved it and made the two loaves and let them rise again. I read the Pig's label and theirs had oats, flour, yeast, and cider and I think that was about it. The recipe I used had the two flours, the yeast of course, milk, butter, and the honey. I'm one that likes "heavy" bread tho. I'm after a hearty, dense bread. I like lots of fiber and whole bits of seed and groats and things in my bread. Chewey center and crusty outsides. I've gone to the When Pig's Fly store a couple of times myself when we take a trip up to Kittery. The 7 grain one is my favorite, but I also like the oat & honey. I love their apple, chocolate, orange pistachio cranberry, the olive and red pepper - hell, I love every one I've ever tried! I try to not eat too much bread because I'm trying to watch my weight and I could easily sit down and polish off a loaf of good bread all by myself and be perfectly happy. But I do have the "taste" for it now so I do plan on making some now and then. I'll try to keep it to a couple times a month so I can fit in my clothes tho!! Lisa

Bigshoes, I'm certainly not as ambitious as you. I start out with grocery store unsalted butter. I just follow the recipe posted on my blog. We had Saanen goats for a while, five of them. We loved them; they were so friendly and fun. We had three females and two "fixed" males. So, no milk. They were great natural lawnmowers for our five acre property. But, unfortunately, once my husband became so ill with congestive heart failure, etc., we had to sell them. We just couldn't take care of them any longer. But we do miss their antics.

Hi May, I have made the same recipe for years. I just roll the dough into an 18" square as noted. Spread with the apples, eggs, cinnamon sugar and then bring each corner to the middle. Seal the seams. Now all the apples mixture is in cased in dough. Now the fun part.... I like to place the 'bundle' on a cookie sheet with side. Using my biggest chefs knife, I chop at random, cutting all the way through, until I have what looks like a big mess, and pieces of dough are about 1 inch, random cuts, so some are larger and some smaller, odd angles. There will be apple, eggs and dough everywhere, it's messy! Hence the cookie sheet. Then you scoop into the pans. I used to buy a bread like this at an apple orchard. I'd wait every fall to be able to get it. They drizzled the cooled loaves with confectioners sugar glaze. Yummy. My favorite way to enjoy...thick slices, toasted. Nancy

Thank you, Kate. I could see making this with chopped apple and some maple/brown sugar oatmeal. I have the high fiber variety for breakfast at work, that might make it even more healthy!

Oh yeah, I'm definitely giving this to Makayla, she'd love to bake it.

Oh yes that sounds good! As I was laying out my ingredients for this last night I kept thinking of good modifications like mixing up the oatmeal as you say. I had to slap myself a couple of times because I am SO guilty of 'fixing' a recipe and not making it the way it is written. I wanted to be able to come here and say I did not change this recipe and that is was really great just as it stands:)

Kate, that's not "fixing", that's "tweaking" and it's absolutely allowed. (grin) Unless you tweak and the recipe is awful, then you aren't allowed to blame the recipe unless you made it according to directions first and it was awful. LOL

Does anyone know how much oatmeal is in "two packets of instant oatmeal?" I have some instant I bought by mistake in a the big round container and I'd like to use it up so this would be a good recipe. Plus I'm always trying to find a way to use up applesauce. Even the smallest store bought jars go bad on me before I can eat them. I can't bring myself to pay all the extra money to buy the little individual plastic container sizes. When I manage to find the time, I make my own and can it in the 1/2 pint jars. Those I can finish before they go bad.

L, I'll open one and measure it tonight, when I get home. You know, in a kitchen where I actually have a measuring cup, LOL. You'd have to add some flavoring, though, because I think some of the sweetness/flavor of the bread would be obtained through the flavored instant oatmeal.

Sounds good. The instant apple cinnamon oatmeal is one of my DS's favorite flavors. And apples are just starting to come in so will make some homemade applesauce. Thanks.

I use a lot of applesauce for baking, so when I run out of homemade (which I can in pints), I buy big jars and freeze in 1/2 cup portions in zip lock bags. They thaw very quickly.

lpinkmountain - I don't if you ever found out how much are in those instant oatmeal packets. I measured one packet this morning and it was a heaping 1/3 cup. So for 2 packets it would be a heaping 2/3's.

Thanks for the tips and thanks for measuring that oatmeal!! I don't know why I always forget about freezing! I have a nice big freezer in the basement that is only about half full.
