Pork - whats with the additives???

Ok, so first it started with a raw Smithfield pork loin roast. It didn't appear 'fresh' but rather a bit 'processed'. I looked on the label and it there was a sodium or some kind of solution. It grossed me out but I cooked it anyway. Next day, my ankles blew up like a tick.

Next, bought pork tenderloins and noticed the same thing. Even my Italian store doesn't have non-solutionized tenderloins!

What's all this about? Is every pork product put into a solution? Why? When the heck did all this start? Where have I been? (actually, you don't need to answer that one).
