Can't believe the difference - local vs. store chicken

I just roasted my first locally raised, organic chicken and it tastes so different from grocery store chickens! I normally don't even eat dark meat, but this dark meat is delicious.

When I defrosted it, there was no sliminess - just clean, fresh-looking skin. It's smaller than many of the store-bought chickens, but I'm assuming that's because it's not a pumped up bird like Annie has mentioned.

I salted it the day before, and then tried Ann's high-heat method. I goofed on the time - because it's a smaller bird, I took it out at 45 minutes since the juices appeared to run clear, but when I cut through one leg it was still very red. So, I popped it back in for a little more time.

The skin is so crispy and I love that it took so little time. The only issue I had was the smoke alarm going off and the mess in the oven. Still worth it though!
