Lindac - your 'snackers' recipe please!

All my recipes are trapped on my old computer - problems with the drive and until I can get my tech guru to retrieve them, I am flying by the seat of my pants.

I picked up a Ring Bologna yesterday in anticipation of making your snackers and realized I dont have the recipe. can you help?

Here ya go.....
Snackers
1 ring Dutch Balogna ( about a pound )
2 medium yellow onions ( about the size of a baseball)
Slice and layer in a crock or straight sided bowl
In a sauce pan place 1 c. cider vinegar, 1 cup water and 3/4 c sugar and 1 tsp mustard seed ( whole). Bring to a boil and pour over meat and let stand un refrigerated for 24 hours. Serve with cocktail rye.

And of course you know you can eat them before 24 hours is up!

Here's the one I use: Navy Bean Soup From Food Network Kitchens 1 lb navy beans, picked over, rinsed and drained 10 sprigs parsley 2 sprigs fresh thyme 1 bay leaf 2 large smoked ham hocks, about 1-1/2 lb 1 medium onion, coarsely chopped 1 clove garlic, coarsely chopped 8 c cold water 1 medium carrot, coarsely chopped Kosher salt and fresh ground pepper Butter for garnish Place beans in a large saucepan and cover with cold water by about 2 inches. Bring to a boil and lower the heat to simmer. Cook for 5 minutes, remove from heat, cover and let sit for one hour. Drain and reserve. Tie parsley, thyme and bay leaf together with kitchen twine. In large soup pot or dutch oven, combine the beans, herb bundle, hocks, onions and garlic with the water. Bring to a boil, cover and adjust the heat so that the soup cooks at a gentle simmer. Cook until the beans and hocks are completely tender, about 1-1/2 hours. Turn off heat and remove hocks. Cool slightly. Remove meat from hocks, discarding the bones, fat and skin. Cut meat into small cubes. Remove herb bundle from soup and discard. Puree about 3 cups of the beans with some of the liquid in a blender. (For a smooth soup, you may puree all the beans). Stir the puree and diced meat into the soup. Heat the soup and adjust seasoning as needed with salt & pepper. Ladle into heated bowls, place a small pat of butter on top of each bowl of soup, serve. I find that potatoes absorb all the flavor and leave the meat bland. I cook them separately. I don't add any fat to the pan but put the meat in the very hot pan, let it sear and turn it when it releases. If you leave it alone until it is ready to release you will be able to turn it without tearing the browned bits off. Sear all sides then add chopped onion, several cloves of crushed garlic, herbs and carrots if you like them. I often add either fresh Italian plum tomatoes or a can of whole tomatoes, in which case my herbs will be thyme and oregano. Cover and simmer for an hour or more. Cool the meat completely in the fridge. Remove from pan and slice across the grain, return slices to pan, cover slices with the gravy, cover with tight lid and simmer for another hour. Slicing the cold meat and returning to simmer guarantees a tender, not stringy pot roast. You can cook pot roast without adding any liquid. After searing and adding the herbs and aromatics cover tightly and cook over low heat. The meat will release its own juices.You can adjust seasonings according to your own tastes. There is nothing in the world like a well cooked, tender pot roast and there are many ways to accomplish it, but slicing against the grain is essential. I don't know why. This I learned from my mother in law and I have never seen it to fail.

Silvia, those pickled carrots are beautiful. I also plant the multi colored carrots instead of just orange. My favorite color is the Purple Dragon, they are purple outside but orange-ish inside. Last year I planted a mix of orange, purple, white and yellow, but the kids love them fresh from the garden and so I seldom have them anyway except raw, and if my great-nephew, Noah, beats me to the garden, I don't have any, LOL. Jim, Elery uses mirepoix in nearly every soup and sauce he makes, I think. He also adds carrots to chili and tomato based sauces to add some sweetness, so although I seldom cook carrots by themselves, we use them in a lot of things. They are grown here and sold as deer bait for $4 a fifty pound bag, bug those are usually the really big ones. I ought to use those (and cabbage) more often, they're cheap and local and usually very good. The ones from the grocery that come from across the country? Not so good, usually. We don't have ring bologna here. What could I sub instead.... maybe Hillshire Farm Kielbasa sausage?

Can you explain a little more about the "snackers"? I'm not sure how to cut the bologna (little slabs to serve on the rye?).

I'm assuming that "cocktail rye" are small rye crackers... so I'm thinking that the bologna is not just sliced in rounds like for a sandwich.

Sorry, but I'm the type that needs detailed info in a recipe! I can follow recipes to a T... but please don't leave anything up to MY interpretation! You never know what the end product will be ;)

This sounds like something my family would love.... if I can just pin down the details.

Starlight--Not crackers, cocktail rye is a dense bread that is packaged in those little cello wrapped 2 inch square loaves.

(Slice the bologna crosswise into little discs that will sit nicely on a 2" square piece of rye.)

The only bologna around here is either Lebanon bologna in the deli case at the grocery store or bologna lunch meat like Oscar Meyer.

I found the Ring Bologna in the self serve deli section near the pre-packaged cole slaw, potato salad, hummus, etc.... Johnsonville brand is nationally available I think - you might ask your grocery to special order it from them....

I am having a hard time figuring out how bologna can ever be delicious and how that sliced 4" round gets eaten but obviously I don't know what ring bologna is.

ring balogna is not like regular baloney...it has more the texture of brat wurst and is spicier....it's not made of "meat paste" like baloney and some hot dogs.
Snackers are pretty much slices of ring balogna and slices of onions, in a pickling brine...served on a slice of cocktail rye.

ci lantro, these are more a finger snack than something to put on a cracker but you could. My son loves to serve them along with pickled eggs and wings for football noshing.

Ring bologna is much smaller in diameter than regular bologna. Closer in size to kielbasa.

Sorry starlightfarm, I should have addressed my post to you not ci lantro.

I just went back and looked at Linda's recipe and see that she mentions the rye rounds. I'll have to give that a try, we've always just eaten "them out of hand"
