Promise not to laugh? Ring Bologna Spread. Kim loves the stuff. I had it ready on Friday as soon as she got home from work. She loves to watch the US Open and football. Yesterday she was flipping back and forth all day.

It's more healthful and less filling than chips and dip. It's good with beer.

Well, last night while a game was on, I made a small tray of sliced calamata baguettes (Wegmans) topped with balsamic vinegar, olive oil, a slice of fresh parm and a piece of roasted red pepper on top (from a jar). Served with a glass of red.

I just wanted something to munch on, but it had to go with red wine.

For a poof/p snack, it was really good.

DH is BBQing wings for the Pat's game this afternoon & we'll have baked beans cooked with some onion, & our home smoked bacon and fresh corn. Don't know about dessert. I've been fighting bronchitis for about 10 days & can't have dairy so dessert might be something like grilled fresh pineapple.

I'm making some california rolls for the 1pm game. Serving them with wasabi mayo dipping sauce and low sodium soy sauce. I'm using fake (kosher) crab stick, avocado, cucumber and shredded carrot. I was in a hockey rink all morning and freezing, so I'll probably heat up some hot and sour soup as well.

Since Pennsylvania has the largest per capita consumption of both pretzels and dried beef (the type sliced from dried and smoked beef round, not the sliced "flaked and formed" loaf type like Budding), I often make this dip when I have to take a football snack to represent the Philadelphia Eagles.

BEEFY PRETZEL DIP

8 oz. cream cheese, softened to room temperature
3 Tbs. crumbled blue cheese
1 tsp. Worcestershire sauce
2 to 3 tsp. horseradish
1/8 tsp. ground black pepper
1/4 cup finely chopped dried beef
1 bag of pretzel sticks

In a medium bowl, combine cream cheese, blue cheese, Worcestershire sauce, 2 tsp. horseradish and pepper until smooth. Taste and add the additional teaspoon of horseradish, if needed. Stir in dried beef. Refrigerate until 30 minutes before the game; then remove to let dip come to room temperature. Serve with pretzel sticks for dipping. Makes about 1 cup

Note: Recipe can be doubled. A 3-oz. package of dried beef yields approx. 1/2 cup + 2 Tbs. of chopped meat.

Last weekend for the start of college games we smoked a ton pork and a TV out by the pool.

Thurday's start for the NFL was at a sports bar with munchies and cold ones.

Yesterday was loaded nachos for just me while I watched the Sooners and canned.

Today it was Ginger's Crock Pot French Dip sandwiches in the afternoon. Now it's a big bowl of popcorn watching Dallas and Washington duke it out.

Oh, the list could go on and on. A new one for us is stuffed ribs thanks to our friends up north. Later in the season but it has become a regular over the years. First time I made them the Manning brothers were duking it out when I was back at the ole cabin on the lake.

LOL, Sharon. I don't even pay attention to football but if David's smokin' TVs and there's a party, I'll cave in, even if I won't know what the heck is going on in the game.

Heck, enough bourbon and no one will know what's going on anyway. Or maybe they just won't care...

Now I want to get a flat screen to hang on the side of the house by the pool. It was so cool having the games on out by the pool for the party. I can see movie nights too. I know several here have done the same with some kind of projector. I learned they even sell weather proof covers for them too.

David, the projector plugs right into the computer, which recognizes it automatically - I didn't even need any software, which is good because I usually get frustrated and give up halfway through the loading process. It was a business expense, since both DH and I use it for presentations to large groups, but movies on the house are an added bonus.

I never thougth of projecting games. Hmmm.... now I'm thinking of this winter. We could show hockey games while the kids are playing on the outdoor rink..... I'll have to look into the weatherproof cover!
