What Are You Fixing For Your Evening Meal?

I think I am fixing grilled fish, a green salad, and a baked potato. I have beef in the crock pot for vegetable soup tomorrow. Anyone else have their evening meal planned?

Since it's Ash Wednesday, it will be a tuna sandwich or mac&cheese.

DH visits his mom with his brother every Wednesday evening for dinner and conversation. That leaves me free time to catch up on reading and a bubble bath.

I never plan this early. Jammer is home so I guess I'll cook something. Maybe tacos.

I made lasagna. I make it with ricotta, mozarella and sweet Italian turkey sausage (much less greasy). My 6 y/o DS *loves* lasagna. It's always good when I can make at least one of the family very, very happy. ;o) He eats it like it's chocolate cake! Just as I took it out of the oven, he came bouncing down the stairs licking his lips saying "I know what's for dinner! I smell lasagna!" Lasagna night is the night he will out-eat even his 15 y/o brother. Can't get enough. Tomorrow night he will ask me for leftovers. Too cute!

I will be having the family at my home this year. My three kids and their families alternate with us and their in-laws for the major holidays. The kids all like to be here at the same time, so it is the 3 of them, their spouses, 4 grandchildren, my Mom and Dad (they live an hour and a half away), two of my Aunts, two cousins, and my cousin's daughter, and her husband and son. And my BIL. In all that's 22. I will have to do this buffet style, and set up tables in the living room. I'm sure it will be chaotic, especially since my one son and DIL will be staying with us with the two babies. And then my parents will stay over too. Wish my house was a little bit (or a lot) bigger. But we will make due. I'm just grateful that we can all be together.

I have finally regained a little bit of function in my arms and hand so I am going to attempt to cook. I have so many people who like one thing or the other that I try to make a little variety in meat. Some don't eat Ham some don't eat Turkey. Sigh. I really don't care for either lol. So on New Years Day I have my perfect dinner for me which is Prime Rib, Roasted Brussels Sprouts and Loaded Baked Potato. That has always been my reward to myself for making Thanksgiving, Christmas Eve and Christmas dinner. I finally get to eat what I enjoy. For Christmas I will attempt to make: Spiral Ham Turkey Sausage Stuffing Regular Stuffing for those who don't like sausage stuffing Butter and Onion Potatoes to go with Ham Mashed Potatoes and Gravy Roasted Asparagus Green Beans Baked Sweet Potatoes Rolls Pumpkin Pie Cranberry Apple Crisp I am going to start cooking what I can on Thursday and everyday until Christmas so I don't overwhelm myself. The last few years with the neurological issues I have had a hard time. I am having people over this year who don't have family to have dinner with and I want to make sure the kids have a nice family atmosphere to have dinner that they wouldn't normally get to experience. It amazes me that only 2 years ago I was doing all of Thanksgiving Dinner for 25 people, Christmas Eve party with full buffet for at least 50 people, cleaning up Christmas Eve night to do a full Christmas dinner for another 25 and then doing a full New Year's Eve party just a week after. After I got sick I just wasn't able to do it anymore and no one picked up and took over so it all just ended. To think about doing all of that now makes me want crawl under the covers and hide :)

Drinks from the bar before dinner - lots of bourbon drinkers. In winter, I prefer a glass of dry sherry $ dont like holding a cold glass with ice in cold weather, and I could drink ant whiskey “neat” if a gun where put to my head! With Thanksgiving Turkey, Beaujolais Nouveau is served - perfect with the richness of turkey. With lobster stew dinner champagne before and during the meal. Christmas Eve beef tenderloin means a good red wine. Water goblets are always at each place as well, and children /teens still prefer milk. Beer and soft drinks are onky served at a very informal cookout. I never serve ice tea. I know - a sacrilege in the south! I used to drink it all the time - leftover from breakfast pot of tea. I no longer make a breakfast pot and don’t like instant.

Tobygirl, those burgers sound soooo good! So does the spanakopita pizza recipe just below that recipe. Yummo--as RR would say.

We're having leftover stew beef and gravy I made in the crockpot yesterday over rice with broccoli. I love my crockpot.

Took some of that good Taco soup out of the freezer, and I made Broccoli Cornbread and Peach Cobbler.

Now I'm stuffed!

meatloaf...mashed potato's and gravy...corn...green beans...noodles...baked beans and rolls...now who wants to clean up...I made lots for leftovers since I wont be here the next three nights and we still have some Veggie Soup and a Pasta Dish I made last night in the frig...no one is going hungry around here unless their blind and can't see what's in the frig!!

My son got a nook in his crawl last week and cleaned my refrigerator...I swear he even alphabetized the stuff in the door...LOL...It is soo clean...I wish he'd get these bursts of energy more often around here!!
