I peel the apples. Never tried to freeze it, so I'm not sure about that. You can do the BWB in any pot that is deep enough to have water come over the top of the jars.

Where is that recipe? Is that the same as apple pie jam?

Linda, it's not the same recipe, and I haven't made this version YET, but it looks yummy.

APPLE MAPLE JAM

12 C finely chopped apples (about 6lbs) I used the food processor
6 C sugar
1 C Maple syrup (grade B if possible)
1 tsp cinnamon
1/2 tsp Allspice
1/2 tsp Nutmeg
1/4 tsp cloves

Combine all in a large deep pan. Slowly bring to a boil. Cook to the jellying point. Stir frequently, so it doesn't stick. Pour into hot jars leaving 1/4 inch headspace. Adjust caps. Process 10 min in BWB.

Yields about 8 half pints. I double this recipe and it works fine.

The notes are Nancy's and the jam is wonderful if you like maple and apple, two of my favorite fall flavors.
The jellying point is 220oF on a jelly thermometer. You have to subtract 2o from that for every 1000 ft. above sea level. (Info from Rodale's Stocking Up III, p. 246)
There are other tests but this is by far the most reliable.

Just make sure you do "the plate test" to make sure it's going to gel. Mine didn't. I'm calling it Apple Maple Syrup! Not a bad thing.

I don't want to buy apples this year..so I went on a neighborhood walk today and checked out all the neighbors with apple trees...I have a few doors to knock on..Why do people just let all their fruit fall to the ground???
One house I always picked at, but it was sold a few months ago...So I have to reask...

My apple trees didn't produce anything!!!

I have the same frustration.
For pete's sake, if you can't use the fruit, at least let the gleaners come get it, put a sign "Free Fruit" in the yard, donate to a shelter or SOMETHING!!

I've got a neighbor to call on too.......I just don't know that I need anymore apples! LOL I drive by every day and shake my head at all the waste.

The place across the road is for sale and the owners have already moved out. There's a crabapple tree, grapes, wild blackberries, plums and more that I can't see very well........all wasted. I don't think they knew what they were getting into when they bought 7 acres with a small orchard. They've only been there about 3-4 years. It may be a health issue too.

Well this am, I went to an abandoned house, thinking I could atleast glean some wild Blackberries...the neighbor directly across from me...their backyard partly meets on this properties line..she thought they had fruit trees down in the back too..so I went and looked today...they do..but the deer are enjoying everything..blackberries included...
So I came home empty handed...durn it...

DH and I walk each morning and there is a house with two apples trees and the apples lying on the ground, so I got up the nerve to ask can I pick some (lots left on the tree) ... the lady said help yourself. I went over this afternoon and picked the ones I could reach ... I need someone tall and/or a ladder. Oh, and btw, when a kindly gentleman tells you "just shake the branches" don't be standing under it, like a certain city girl who will remain anonymous LOL !

That was the plan, but I only got a small baggie full of apples by the time I cut out the bad parts. I am thinking that I will leave my apple picking for my trips to the farmers market :) There is just no way for me to reach those suckers. It seemed like a good idea at the time, till I realized just high up they are.

Kframe, no pressure cooker. I'm afraid it would just turn to mush.

Use a good pie apple, it's not a problem having the apple pieces get cooked. Some apples will fall apart, like Macintosh, which turns to sauce real easy...not a good choice for this jam. You want the apple pieces to hold their shape, while cooking it enough to reach the jelly stage. I use a crank type of peeler/slicer, then zap the slices quick in the FP. I also use Fruit Fresh to deter browning.

kframe, the jar I sent to you was made with Ida Reds, and I peeled them. I've never tried to freeze them and I agree, I think pressure cooking them would make a very nice apple sauce.

I cook mine until it's thick, and I do the frozen plate test to make sure it's thick enough. I like it better than the Apple Pie Jam because I love the addition of the maple.

I got the recipe from Nancy (wizardnm) and it's sure become one of my favorites. I like to drop a spoonful into the middle of bran muffins before baking. MMMMM.

I decided on a combination of Courtlands and Jonathans. I ended up getting something like 15 pounds so I'll have extra. They're chilling nicely in my spare fridge right now.

I got the jars and lids, but I'll be darned if I can find a canning funnel for the 8 ounce jelly jars.

Yeah, I should have realized that the pressure cooker wouldn't work and would mush the apples. It doesn't a incredible job of mushing sweet potatoes!

Don't ever to concerned about asking to pick apples or any fruit from a neighbor's tree. Being the past owner of 3 heavy producing apple trees, I loved it that my apples were not going to waste.

Besides we had to pick up all the fallen apples to mow the lawn, otherwise the lawn mower made applesauce and we had a terrible problem with wasps.

I had several people come every year. And 1 man would only take the fallen apples for his father to feed the deer.

BTW, apples make great compost!
