Somewhere in my yet to be organized recipe box is a recipe I haven't tried. I know it has ground beef, bell peppers, onion and hash brown potatoes. Does anyone have a clue what the recipe might be or have a similar one? Bob loves ground beef stuff. I've made spaghetti, lasagna, hamburger steak, pizza with ground beef topping, soup with ground beef, tacos etc. I'm really sick of it myself, but would like to find something a little different for him to eat.

Wish I could help, but no idea of which one you're looking for; however, a few strips of bacon while browning ground beef adds a totally new flavor.

Default Sauerkraut Hotdish

This recipe was given to my Mom years ago. It is SO good you WILL love it!! It is amazing!

1 lb ground beef
1 cup onions, finely chopped
1 teaspoon salt
1/4 teaspoon pepper
28 ounces sauerkraut, drained
2 cups wide egg noodles
12 ounces cream of celery soup
12 ounces cream of mushroom soup
1/2 cup cheddar cheese, grated

Brown ground beef and onion.
Drain off fat.
Layer half of been and onion in 7x11 casserole.
Cover with sauerkraut
Top with remaining onion and beef mixture.
Put uncooked egg noodles on top.
Spread soups over noodles.
Bake 30 minutes at 350 degrees, covered.
Sprinkle cheese over top and bake an additional 30 minutes more.
I often double this recipe for a 9x13 pan.

Hint: Make sure you cover all your noodles with soup or they will be rock hard along the edges.

I don't know what kind of cocoa you used but unless it's Dutch process, it will have a bit of a bitter taste.....due to the alkalai used in the processing. You can't successfully substitite cocoa powder for semi sweet chocolate.....you are also forgetting that semi sweet chocolate contains some sugar....as well as the cocoa butter removed to make the powder. Here's a recipe using just cocoa powder......it's simple enough, but not outrageously chocolate as Martha Stewart's. But if you try to sub milk for the yogurt or oil for the butter, they won't turn out.....they need the acid of the yogurt, brown sugar and the cocoa to make them light. COCOA FUDGE COOKIES 1 cup flour Â¼ tsp baking soda 1/8 tsp salt 5 Tbsp butter 7 Tbsp unsweetened cocoa 2/3 cup sugar 1/3 cup packed brown sugar 1/3 cup plain low-fat yogurt 1 tsp vanilla extract Cooking spray 1. Preheat oven to 350Â° 2. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, soda and salt; set aside. Melt butter in a large saucepan over medium heat. Remove from heat; stir in cocoa powder and sugars (mixture will resemble coarse sand). Add yogurt and vanilla, stirring to combine Add flour mixture, stirring until moist. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. 3. Bake at 350Â° for 8-10 minutes or until almost set. Cool on pans 2-3 minutes or until firm. Remove cookies from pans; cool on wire racks. Yield: 2 dozen cookies.

I have brought this up at least once before, but here it is again. I'm sure that all of the advise or recipes will be useful particularly if this relative is a Type A personality. But most of us would prefer to be a little more relaxed and not over-react and then burn out from minor or major failure to maintain a stiff diet. I am certainly not an expert, but I spent many years with the group that is currently known for study and naming of Syndrome X, a set of conditions that often lead to type 2 diabetes. In addition, my supervisor was a type 1 diabetic. I am sure that current ideas for good diets for diabetics, most specifically low glycemic index foods, is the best approach. But that doesn't mean that one is required to eat those foods all the time. Moderation In All Things! Low glycemic foods are those that are low in sugar and slower to turn any starch into its sugars. The point is to keep blood sugars from rocketing up from a quick sugar dose. Therefore, cake and ice cream are mostly Out. Even there, moderation is the point. My supervisor's wife was the best baker of cakes. I guess he would have a very small slice and leave the rest for some family and bring it to the lab the next day for the rest of us to finish off. Occasionally, he would forget to bring lunch. He would then put a regular Coke in an ice bath to keep it cold for hours as he consumed it over several hours. I note pillogs mention of chili without beans. I doubt that the beans would be a serious problem. A slightly greater issue might be the brown sugar. Even there, the real issue is not over eating of that chili. One can eat cake too, if it were consumed like the slow Coke. Everything in moderation; a little more activity; a little less food (unless underweight); snacking ok if total is the same.

the amount of water used is to keep the sugar from burning, which is why it will take awhile. I usually just put sugar in a pan and melt it. No touchy with utensils. no stirring. Just keep rotating the pan back and forth. just remember to get it poured into your vessel quickly, because it hardens fast. And it is hot, don't let it splash and burn you. you can google flan and look at food network flan recipes too. dave

I like the idea of quiche or frittata, or you could go in another direction altogether and make bean burritos, or a "make your own" type of burrito bar which would cut down on assembly for the kitchen workers. Around here it's all fish fries, which I love. My old boss is Catholic and attended our local Lenten breakfasts before work every year. She once remarked that she almost felt slanderous, but that the Methodist women were the best cooks in the county. I just happen to attend the Methodist church, LOL, so maybe she was angling for breakroom treats... Annie

I have one with premade gnocchi, with italian sausage (which can easily be substituted with hmbgr), tomato sauce and cheese.
Very simple and tasty.

Angela, I printed that recipe. I don't know if Bob would like it because of the sauerkraut, but it sounds like something I would be interested in. I think I have all thre ingredients too.

We have a winter advisory watch for tonight so I went to the store to get a few things we can eat if we lose power. I started feeling achy last night, but not bad. It was a little worse today. I don't feel bad, but I don't feel well either. I decided to buy a roasted chicken to fix for supper in case I feel worse later. I sliced the breast meat and topped it with some cheese sauce and cilantro. I'll nuke it to heat the cheese sauce and fix some asparagus and reheat some mashed potatoes.
If I feel better tomorrow I'll cook the groundbeef.

I just love gnocchi. Have made it from scratch, but THE BOXED ones are just as good and not near as much trouble!
Gnocchi bake
1 (18 ounce) package frozen or fresh gnocchi ***I buy my gnocchi at Publix in the pasta isle, not the frozen
1 pound bulk Italian sausage
1 (14 ounce) jar spaghetti sauce
1 1/2 cups shredded mozzarella cheese

****Being as my DIL does not like italian sausage, ground beef works just fine. You can add your green peppers to the meat when browning as well as onions. Season the meat to taste,

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add gnocchi, and cook until tender, 5 to 8 minutes.
Meanwhile, crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and stir in the spaghetti sauce. Remove from heat, and carefully mix in the cooked gnocchi and half of the mozzarella cheese. Transfer to a casserole dish. Sprinkle the remaining cheese on top.
Bake for 15 to 20 minutes in the preheated oven, until the cheese is melted and the sauce is bubbly.

Ooooh, I want to try Glenda's recipe. Yummm! I just love gnocchi. My mom used to laugh when I ordered it at our favorite Italian restaurant, thinking I was saying "nookie"! :)

This is really good, Linda. Not what you're looking for but a little different, anyway.

BEEF QUESADILLA PIE

1 lb. ground beef
1 c. salsa
1/4 c. ripe olives, sliced
1 - 4.5 oz. can chopped green chilies
2 pie crusts (I use Pillsbury refrigerated)
4 oz. cheddar cheese, shredded

Optional toppings: shredded lettuce, chopped tomato, chopped green onion, sour cream, guacamole

Brown beef, drain. Stir in salsa, olives and chilies. Place one pie crust on greased cookie sheet. Spoon on mixture 2/3" from the edge of crust. Sprinkle with cheese. Top with second crust. Seal edges with a fork. Cut slits in top to vent. Bake in preheated 425 degree oven for 17-27 minutes or until crust is brown. You may need to put foil around the edges of the crust. Serve with toppings.

Gnocchi I make and buy is made with potatoes.
They are really little dumplings,that are rolled up and cut. Then you drop them in boiling water for 2-3 minutes, till they rise to top, and they are done and serve with a sauce.
