Lathe and plaster removal for rotten wood

I was examining the attic space and noticed that a have alot of damaged wood from termites, the studs are 90% eaten, so i must have the same problem behind the plaster walls, that same wall is also in bad shape a lot of termite droppings in the area. i was reading that most people don't recommend to replace the plaster with drywall but my plaster is in really bad shape. my house was built in '25. So the question is when i pull off the plaster/lathe will i have a wooden frame underneath?. do i pull the old frame off one by one or just sister new 2x4 next to them?the tools i have right now are. What type of wood should i use?, sorry for all the questions but i'm learning.

oh and i wanted to install a plasma so i was thinking on reinforcing the wall with extra studs and adding r13 insulation on that one wall, thanks agian
