Google for the Southern Comfort cake. It is the same as the Bacardi Rum cake and always is a hit with company or a pot luck. Well worth the effort and don't skimp on the nuts. That would be a crime!

Linda, I make this every Thanksgiving. Obviously it's more of a dessert than a vegetable side dish. The brandy is one on my additions (the topping being the other) as the original recipe didn't call for any booze. You would know best, could SC be a substitute for the brandy?

Sweetnana Casserole
i.e. Sweet Potato Puree with Bananas and Buttered Pecans 6 pounds (about 6) sweet potatoes
4 ripe bananas, skins on
2 ounces (1/2 stick) unsalted butter, softened
1 cup pure maple syrup
½ cup Brandy
2 tablespoons ground cinnamon
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 pound pecans
1/2 cup unsalted butter
1 tablespoon salt
2 tablespoons brown sugar

Preheat oven to 425 degrees F.

Pierce the sweet potatoes with a fork and bake until tender, about 1 hour. Roast the bananas, with the skins on, for the last 15 minutes of cooking time. When cool enough to handle, peel the potatoes and bananas, and transfer to a food processor. Pulse until the potatoes are chunky.

Add the butter and maple syrup, puree until smooth. Add the cinnamon, pumpkin pie spice and salt; puree to combine. Transfer to a shallow baking pan and smooth out the surface with a spatula.

In a skillet, cook the pecans in butter over low heat and sprinkle with salt. Sauté until well-coated, stirring occasionally, for about 5 minutes. Transfer the pecans to paper towels to drain. Arrange pecans on top of puree and sprinkle with brown sugar.

Bake at 300 degrees F until heated through, about 20 minutes.

I have some family members who don't "do" bananas....so much so that the smell of that baking in the oven would send them out the door....but others do...
I wonder if I could sub apples for the bananas for the family....and save the banana version for those who would love it?
Amazing thing to me...I love bananas, my father loved bananas, my mother loved them but they would cause her mouth and lips to get sores.
My husband and both his parents love bananas. My daughter gagged on bananas from the times he was 3 months old. They caused her to throw up and as she got older she couldn't even stand to be in the kitchen with anyone eating bananas.
Fast Forward several years...she has a child of her own. Comes time to introduce solids, Dr recommends bananas as well as rice cereal...yadda yadda.
She holds her nose and fixes the banana.....and he gags!! She is vindicated! Tosses his cookies at the smell of a banana.
Number 2 comes along....Dr starts him on solids....bananas....she holds her nose and mashes it up and, smiles because she knows what will happen, But this baby LOVES banana!! It's a major food group!!
Anyhow....she has 4 kids 2 banana lovers and 2 who gag at the smell of a banana. Makes me think that there's some allergy thing going on there...

I read the recipe twice.....do you put the brandy in with the other ingredients, or drink it during the process??

Jan, Good catch! I added brandy to the original list of ingredients but neglected to include it in the directions. The brandy can be added at the same time as the maple syrup.

I just never have a banana in anything when any of my daughter's family are around....I do remember, though that Pat is a nana lover.
My daughter doesn't even want a bowl of bananas on the counter....she can smell them.
