No Sugar Apple Pie & Others

I'm going to start a new post with this recipe in case others have not read my first post about eliminating all refined sugar from our diet.

I've tried this apple pie with frozen cherries and while it is good, I prefer apple pie. I was not sure about using Crisco shortening in pie crust, so I've been using a really good shortening that is 100% palm oil. Anyone know if this is bad for us?

Anyway, here is my apple pie, a dressing without sugar that is excellent on cole slaw and a very good rice dish that I love. It's even better the next day for my lunch.

No Sugar Apple Pie

Pie shells

3 tbls. cornstarch

1 tsp cinnamon

1/4 tsp. nutmeg (this is my own addition)

1 (12 oz) can unsweetened apple juice concentrate (thawed)

6 cups sliced green apples (I use Gala because we found Granny Smith a little too tart).

Preheat oven to 350. In a small bowl whisk together corn starch, spices and 1/3 cup apple juice. Set aside.

In large saucepan, simmer apples with remaining apple juice until apples are tender (about 10 minutes). Stir in cornstarch mixture and continue to simmer until thickened. Spoon apple mixture into pastry lined pie plate and cover with top crust. Seal and cut vents in top. Bake for 45 minutes or until crust is golden brown.

The last time I tried this I made small folded pies which were just about the right size for his lunches. This way I could freeze them and have them handy. Sometimes a whole pie seemed to go to waste.

Dressing Without Vinegar (as you know, he can't have vinegar, so this is my substitute).

1/4 cup lemon juice

1 1/2 tsp. honey

1/4 tsp. dry mustard

1/8 tsp. garlic powder

2 tbls. oil

1/8 tsp. pepper

1/8 tsp. onion powder

1/8 tsp cayenne pepper

I also add a good sprinkle of celery seeds.

Whisk ingredients together. For use with pasta salad, three-bean salad, coleslaw, etc. Let salad stand for about 2 hours before serving.

This rice dish is fast on nights when we bowl or have to be out of the house quickly. It has all he needs in his diet, but sometimes I add a little chicken just so he thinks he's getting his meat.

Easy Vegetable Rice Medley

1 tbls. oil

1 cup chopped onions (I don't use this much)

1/2 cup chopped carrots

1/2 cup chopped celery

1/2 cup red peppers (I also add green)

14 oz. chicken broth

1 1/2 cups brown Minute Rice (white rice is bad for us)

1 cup frozen peas

Heat oil, add onions, carrots and peppers. Cook 5 minutes. Add broth and bring to boil. Cover and simmer 5 mintues. Remove from heat and let stand 5 minutes before serving.

I hope someone enjoys these recipies. I swear I'm going to write a cookbook when I get better at this. So many of the cookbooks I've found have fancy ingredients this Kansas farmgirl hasn't even heard of. We need simple stuff. I've never been one to use much seasonings, but my spice rack is full now and I experiment some.
