Dutch Apple Pie? French Apple Pie?

Years ago I used to make an apple pie with a crumb topping. Maybe brown sugar and something else? I can't find my recipe and can't remember if it was, maybe, Dutch Apple or French Apple pie??

That is what I consider to be Dutch Apple. But, I don't bake, I buy frozen pies. LOL!

I am well known in our family for this type of apple pie. My recipe calls it "English" apple pie.

Get some good baking type apples. Peel and slice. I like the little cranking machine that cores and peels, as well as slices all in a few turns of the crank. To can, you must use acorbic acid to prevent oxidation. Adding citric acid or lemon juice is also necessary. The apples are cooked a bit using sugar to your taste. If you wnat more apple taste, add a can of frozen concentrated apple juice. Clear Jel is the modified starch used as a thickener. Only thicken slightly, so its density isnt too heavy. If more thickness needs to be done, that can be at the pie making stage. Its up to you as to spices, most commonly cinnamon. Also, Alton Browns favorite is 'Grains of Paradise' which as a peppery flavor.

I did a test today of three apple varieties. I cut half of each into about 1/2 inch pieces and added 1/4 cup of water and placed it in a coffee cup into the microwave on high for 2 minutes. Wealthy stayed in chunks and held up very well after stirring but tasted blah. Gala turned to mush and absorbed all the liquid.[good for apple sauce]. My favorite was Honey Crisp. Pieces held up very well and the taste was wonderful. May I suggest you go to the supermarket and buy one of several varieties and do this test. I didn't try the McIntosh or the JonaMac as I only had half hour lunch break at the Farm Market. The Crispins and Northern Spies are much later here.

It may be that the old apple is a Baldwin type. When I planted my apple trees a few years ago, I chose types that had a high resistance to diseases, as well as remaining firm when they were partially cooked or baked. Red Free, and Williams Pride are the two I chose. Right now, McCoun apples are in stores and these also hold up very well to cooking. If your making apple pie jam, use fresh apple cider for the added liquid as opposed to water. Add the chopped apple bits about a minute or two before you start filling the jars with the boiling jam. In most cases the apple bits will float in the jars, so flipping the jars over a few times before the jam sets up, will help to suspend the apple bits. Macs, get very mushy, and even Granny Smith also get quite mushy once they get heated. If your making an apple jam, use several different types of apples, from Fuji, Delicious, to Cortlands and others. The more the merrier!

I've done it....but didn't use a recipe...other than that for the crust and the filling . I made 2 times the crust recipe, patted it into the bottom of a jelly roll pan and up the sides using my fingers. Then I mixed up the filling, gently poured and spread it around on the crust, layed slices of apple over the top overlapping slightly, sprinkled with sugar and cinnamon and baked at 350 until done. Think it took about40 minutes. The crust: Pastry 1 1/4 cups AP flour 1 /4 cup cake flour !/4 cup sugar 1/4tsp salt !/4 lb chilled bitter 2 egg yolks Water if needed Pastry Mix dry ingredients in a bowl, cut in ( or work in with your fingers) the butter until mix resembles coarse meal Work in beaten egg yolks And add water if needed to hold dough together. Form into flattened ball, wrap and chill at least 30 minutes ( or up to 2 days) filling 2 8 oz blocks of cream cheese 2 eggs 2/3 cup sugar 1 tsp vanilla Beat until smooth. I'd be happy to, but I'm at work right now. If you can wait until this evening (about 6 hours from now) I'll post it then. If not, this one seems very close. I forgot to mention that it is a crustless pie, more like a crisp and I bake it in a quiche dish. But I'm sure you could use a crust. My family likes it still warm, with ice cream or just cream on top.

There are 2 kinds. One has oatmeal and the other has a mixture that has mostly flour instead of oatmeal.

OK -- This is what I found in my old Betty Crocker Cook Book.

French Apple Pie
Use a one crust pie then top with this topping:

1/2 cup butter
1/2 brown sugar(I like white sugar for this one)
1 cup flour

Dutch Apple pie:

Make regular two crust apple pie, only make the slits in the top crust bigger. Five min. before the pie is done, pour 1/2 cup whipping cream into the slits and return the pie to the oven for the remaining five min.

This is what I usually do: (this is for French apple, but I called it Dutch)

Mix together:
1 cup oatmeal (either old fashion or quick)
1/2 cup brown sugar
then work 1/2 cup soft butter into the mixture with a fork

A Dutch apple pies has cinnamon and brown sugar added to the apples and a lattice crust.

A French apple pie is a crumb topping of flour cinnamon sugar and butter.

An American apple pie is a standard two crust by made with regular sugar and sometimes cinnamon but not always.

Here's my English Apple Pie recipe:

1/2 cup butter
1/2 cup packed brown sugar
1 cup flour
2 tsps. ground cinnamon
3 Tbsp. water
1/2 cup chopped pecans
4 large cooking apples, peeled and sliced (about 6 cups)
1/2 cup granulated sugar
heavy cream or half-and-half

In a medium bowl beat butter and brown sugar with a wooden spoon or electric mixer until pale and fluffy. Stir in flour, 1 tsp. cinnamon and the water until smooth and thick. Stir in pecans. Mound apples in a 9"quiche dish. Mix granulated sugar with 1 tsp. cinnamon; sprinkle over apples. Spoon pecan topping over apples in dollops. Bake on lowest rack of preheated 375Â° oven 45 to 50 minutes, until apples are tender when pierced. Serve in bowls. Top with cream. Serves 8.

Guess what I had for dinner last night? LOL
Scott's having a piece for breakfast this morning.
I used the butter/brown sugar/flour mixture. Top crust got a little too brown for me, I made a note to check it after 20 minutes next time to cover with foil instead of 30 minutes, but it was still yummy.
