Doughnut pans

I was out this afternoon and had a few minutes to kill. Walked into a Goodwill store and found two doughnut pans; one 6-cavity and one 12-mini. They looked so cute that I couldn't resist and paid $9 for both of them. Now, the problem is... we don't eat doughnuts or bagels at home. What am I going to do with these cute pans? Any suggestions?

Sorry....but, frankly I never heard of dough nut pans!

I thought about using them for cream cheese molds, or use them to bake doughnut shape dinner rolls LOL not sure how well they will turn out though. Here's a link to something like what I've just bought.

Definitely need to stir porridges with MB units. Ran an experiment this morning with cooking oatmeal in a small, 1 qt saucepan (5" diameter magnetic base). The MB had trouble with low heat settings with the small saucepan. At a "2" setting, the small pan would intermittently boil furiously in a torodial pattern and then shut down, boil, shut down, etc. A "3" setting was manageable with frequent stirring. With the previous experiment with the 2 qt sauce pan, the small bubbles started out in a ring shaped band, but quickly spread across the whole bottom and gave an very even boiling. Did not think to look with smaller pan this am, but note the cooking description above. I agree that overnight in a crockpot is much the better way to cook steel cut oats. I was only experimenting because of amck's posting. I use my MB for pretty much the same reasons you do and for "cooking stations" at some large parties. Sounds like Tuesday Morning could be a good deal. We used to have one in the nearest big town (actually, our state's largest city), but they pulled out a year ago. Apparently, our market area was deemed too small for the turnover they wanted.

Yes, Cathy, he and I both managed to put on some weight. I put on about 15 pounds he put on a LOT more than that. I think it was sitting every night with a couple of glasses of wine and cheese "for Cooper". Yeah, Cooper got fatter too, the vet isn't impressed, LOL, but Cooper's happy! Blue Cross insurance isn't though, if your BMI is over a certain number, they make you pay more, so it's got to come off. Dang, now I want muffins and not healthy ones either! Annie

Well, one disadvantage of a ceramic or cast iron pan is they don't transfer the heat as quickly as an aluminum pan. On the other hand, they cook more evenly. So you do have to adjust your cooking times and temps. to suit what kind of pan you use. Particularly with something that browns like meatloaf. I know we had to cook our meatlof much longer than the instructions said when we switched to the ceramic pan. I like the idea of making the free form loaves, but we use ground turkey for our meatloaf and it is kind of mushy, it wouldn't hold it's shape. You can also buy really nice steel loaf pans and line them with parchment paper. I love the stuff, it solves a lot of my baking problems! I can use my cheapo steel cookie pans with parchment paper and I don't have the burning problems I had when I used them without the paper. Might work for your meatloaf pans too. I don't know about the grease problem, maybe just switch to a less fatty meat? I don't know much about meatloaf, we make ours with ground turkey or a vegetarian version.

Although all-purpose flour has commonly been used for making raised yeast doughnuts I suggest bread flour. But when it comes to cake doughnuts (leavened with baking powder), you want lower-gluten flour, so try them with cake flour. I like to make mine with low-gluten spelt flour. Keep mixing to a minimum so you don't get a lot of gluten development. Deep frying hints: -Temperature of the fat, the temperature of the food, the amount of fat in the fryer, and the amount of food are an all-important mixture to be considered. -When the food is fried at a high temperature, the item browns quickly and needs to be taken out of the fat before it runs out of moisture. When it runs out of moisture, it begins to soak up fat and get greasy. -The shorter the frying time, the less fat is absorbed. -You need enough fat in the fryer to maintain the temperature when the food is added. If too much cold food is added, the temperature will drop. So don't overload your fryer. -Use a fat with a smoke point much higher than the frying temperature. -Old helpful hint - Add 1 T. vinegar or 1 t. ginger to oil before heating. This prevents the dough from absorbing too much grease while frying. -Something interesting to do with the doughnut holes: (source: Recipes from the Old Mill) Doughnut Hole Sticky Muffins (make with raised dough) Grease 12 muffin cups. In the bottom of each cup place 1 T. brown sugar, 1 t. light corn syrup, 1/2 t. water, and 1 t. chopped nuts. Arrange 4 doughnut holes in each cup. Cover with plastic wrap (or a cloth) and let rise until double. Bake at 350-degrees F for about 20-25 minutes. Carefully invert pan as soon as they come out of the oven on a parchment paper lined baking sheet. -You can also bake raised doughnuts. Cut the dough with a doughnut cutter that has a large hole. Place on a greased cookie sheet and let raise until light. Bake at 375-degrees F for about 12-15 minutes. Oooh that looks good! The recipe makes 12 small cakes but how many of these mini doughnut cavities it will fill, do you know?

It fills about 12 muffin cups...so I'd say a maybe a 2 dozen donuts?? Or make a half batch and see..They freeze really well. And make great "breakfast" nibbles in hubbies lunch box. (I think I'll make some this weekend, since he's returning to work Monday after a 2 week vacation.)

Althetrainer, I'd bet your do-nut pans came from King Arthur. They also sell mixes for baked donuts, which is what you use the pans for. How do I know? I have them....wanting to get away from fried donuts for DH. Not crazy about the texture of the donuts. Not the first thing I ever bought that was not wonderful. I'll be interested if you post what you use them for.

jude31, I don't know what made is the pan. I have looked everywhere but there was no mark/label found. I did an online search and found a picture of the KA mini that had a different shape. But the 6-cavity one looked very similar. Norpro and Fox Run make them as well and they all look pretty much the same.

Since we don't eat doughnut I won't be too disappointed with the texture of it. I definitely will try the poundcake today or tomorrow. The family is returning Sunday so I want to make sure the dessert will be dessert, if you know what I mean?

If all goes well, I will post a picture. If you don't see a picture, you will know it did not turn out well. LOL

You mentioned Fox Run which triggered a memory. 30 years ago, when I was doing craft shows, Fox Run was only doing cookie cutters. Good to see someone branch out and doing well.

I found two sets of doughnut pans in boxes with recipes at rummage sales and I paid $2.00 for each set. 3 pans in each set. I have made some doggie treats in some of them. Still hope to get around to baking some doughnuts.
