Bing cherries

The bing cherries are wonderful right now. I usually freeze a selection of berries to enjoy throughout the year. By the next season, none are ever left over!

I've never frozen bings before and I would like to. How can sweet cherries be used in baking?? I usually eat them out of hand, but they are so big and sweet, there's gotta be a way to put them in dough!

Arlene, I use them in Jo's summer torte, and I've used them as tart filling. I've also used them as filling in Ann T's cream cheese danish and I've made Black Forest syrup (which was supposed to be jam, but it didn't "jam", LOL). That's not dough, of course, but it was awesome as a sauce over the summer torte.

I've also used them to make crisp and cobbler and they are really good in those too, I don't put any sugar in them, just in the topping because they are so sweet.

they were amazing here too, I put a lot of them in the freezer this year and I've been known to add the frozen ones to fruit salad.

Bing cherry Sangria?

I have made cherry wine. It was pretty good.

Cherries are a bit strange when it comes to pollen donors. Each variety has two S-alleles to determine its group. THEN, there are a total of six total alleles. As long as the pollen donor has one allele that is different, you are good to go. For example, Bing is S3S4. Rainier which is S1S4 is a good pollen donor for Bing because the S3 and the S1 components are different. Royal Ann, which is also S3S4 will not pollinate a Bing. After doing a tiny bit of looking, Kwansan is Prunus serrulata where Bing is Prunus avium. The S-Alleles still may be compatible, but to be certain, further research would be needed.

Hoosier, my point is I found conflicting information. The problem is that pollination data is not very accurate as it is hard to test. Also many people don't understand that for cherries it is more than bloom timing that matters for pollination. At some point I found this guide that listed the different groups that cherries fall under but I can't seem to find it now. Well, here is one without a lot of data, see below. Oh, here is a link that says Stella may not work for Bing in some areas: link. Pollination compatibility for most fruits is fairly simple, but not for sweet cherries. For the original poster, I would say there is a good chance the Stella will work, or there is a wild or flowering cherry in the area that will do the job. But, it is not certain. Thanks, Jean. I didn't realize that. Though I'm pretty sure I had whiteflies, or aphids. When I touched the branches a cloud of them would come up. And there were ants, which is a sign of aphids/whiteflies, since ants eat the sweet dew they produce. When the whiteflies/aphids went away after treatment, the ants left a couple days later. So the holes being unrelated, the horticultural oil took care of whatever it was that was making them, since the holes stopped and are now only on old leaves.

Annie, I'm not into crisp right now--repetitive, you understand. Today a new recipe from Cooking Light really fit the bill!

BITTERSWEET CHOCOLATE-CHERRY SORBET WITH FRESH CHERRY COMPOTE

Sorbet:
3/4 cup red cherry jam (i.e., Bonne Maman) Publix has preserves, not jam, so that's what I used
1/2 cup Dutch process cocoa
1/4 cup sugar
1/8 teaspoon salt
2 cups water
COMPOTE:
1/4 cup sugar
1 lb. fresh Bing or tart cherries, pitted and halved.

To prepare sorbet, combine first 4 ingredients in a heavy saucepan, stirring with a whisk. Gradually add 2 cups water, stirring with a whisk. Bring mixture to a boil, stirring well with a whisk. Cool to room temperature; cover and chill overnight. (I chilled it for 5 hr.)

Stir sorbet mixture with a whisk (of course, that darn whisk again!!!!). Pour mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions. Spoon sorbet into a freezer safe container; cover and freeze 1 hr. or until firm.

To prepare compote, combine 1/4 cup sugar and cherries; toss well. Let stand at room temperature 1 hr. Serve compote with sorbet. Yield: 7 servings (of course it does!).

My chocoholic hubs loved this! I did too, but had seconds on the cherry compote. Easy to prepare and delicious!

I went overboard and got way too much of a good thing (they were a bargain).

What is the best way to freeze cherries?

petaloid, I wash them, pit them and freeze them in ziplock bags. I usually put 4 cups per bag because that's enough for a pie or cobbler or two will make a batch of jam later, when it's not so hot.

Beachlilly, THANK YOU...(I think) for my new favorite addiction-- Chocolate Cherry Sorbet!!! This recipe was declared a winner not only by me, but DH and our dinner guests too!
We love a really deep chocolatey flavor and this sorbet delivers with a punch! Bonne Maman is on sale at our local Gelson's Markets this week, so I'm rushing over to stock up on more cherry preserves to keep on hand!

The only change I might make is buying a cherry pitter and adding some type of liquor to "enhance" the compote.

Again, many thanks for sharing this wonderful recipe

Glad you like it Ellen! Doesn't that sorbet taste just like a fine quality truffle??? YUM! Your thought of adding a liquor sounds good but my knowledge is lacking in that area. If you find one that works, please post! I'd be happy to try.

That sorbet recipe looks great to me too and I think a splash of frangelico would be perfect. It's my favorite liquor with fruit.

Mmm, Frangelico? I'm a lightweight, and unfamiliar with this liquor. It's almond, right? I guess it's time to buy some!

Note to readers- make sure to buy UNsweetened cocoa, not the Ghirhardelli sweet cocoa!

Happy to report that the remainder of the cherries soaked in rum were delish! They might overpower the sorbet, so I guess I'll sacrifice myself and buy some frangelico for a taste test!
