Wedding Brunch -- Take 2

The cybergremlins ate my first post, so I'll try again.

I've offered to host a brunch for my niece the morning of her wedding. Although I'm looking forward to doing it, this will definitely take me outside my entertaining 'comfort zone' because of the numbers involved. We usually max out at about 20 for Thanksgiving and other special occasions. Between out-of-town guests, immediate family and wedding party, there will probably be more like 75 - 80 on the guest list.

So that brings me to my first question... Those of you who have experience dealing with larger crowds, do you think 50 is a reasonable starting point for planning? I'd much rather overestimate the number who will show up and adjust downwards later rather than vice versa, so maybe initially counting on 60 would be better?

I've decided on most of the main dishes, but I'm definitely open to all critiques/suggestions. Boiled shrimp will be cooked and peeled the day before, and the sauces (cocktail and remoulade) can be mixed several days in advance. I'd love to do homemade biscuits for the ham, but the thought of getting/keeping them warm terrifies me. Do you remember that old recipe using Pepperidge Farm party rolls with deli ham, Swiss and mustard? They can be prepped that morning and just popped in the oven. It's been years since I made them, but they were always popular. Does anyone know how they'd hold up sitting out on a buffet?

I'm planning on doing an old standby egg dish with a crescent roll base, sausage and Cheddar. It isn't the most elegant, but it's hugely popular with men. Logistically, it works well because it only takes 20 min. to bake instead of an hour, so it's much easier to cook multiple batches. It sort of seems like, with a crowd this size, you might need 2 egg dishes. What are your thoughts on that? I've been reading recipes for chile rellenos casseroles that sound delicious and different. Oddly enough, there don't seem to be any vegetarians in the group, but it would be nice to have a meatless main dish in case...

Side dishes will include a hash brown casserole and jalapeno cheese grits for a little kick. (Hey it's the Deep South. All suggestions welcome EXCEPT smart-a$$ comments about taking grits off the menu. lol) I have great recipes for both those.

Now it gets into the problem areas: fruit, breads and dessert. I desperately need help with things that look and taste wonderful but won't take gobs of last-minute preparation.
