I have a tiny vintage tv in the kitchen pantry run and often have the two cooking/food networks on for background noise....zip back and forth between the two as some are 'nails on chalkboard'. CooksIllustrated tasted hams yesterday and I think Cook's won by a landslide. Barely paying attention because I thought testing only three was not a good and fair test. They did test without heating and glazing. (I think it was Cook's brand. It was a clear package) I just checked and they have tested a few times but I don't have access to their site.. Then looked for other 'best' reviews. Many winners. Then found my method posted above and it is a JuliaChild recipe I'm sure where I first came upon it....simmering in aromatics. I used Kirkland because it jumped in my cart passing by.

I saw a show on FoodTV last holiday season on Honey Baked Ham & it is a sugar/spices dry rub melted to create a glaze with blow torches. Each ham is individually torched. Unfortunately, I didn't pay attention to what they were putting in the rub mix. :( I'm not even sure there's actually honey in the glaze?! Search the FoodTV website...you might be able to find an article with "clues". I'm pretty sure I saw the episode on "Unwrapped". /tricia

We will be back to shopping in the freezer for brothy soups and seafood chowders after this plays out. Julia's braising makes a CityHam just perfect. Draws out some salt. Made up a dry rub for the ham and for the beans this morning. Bit of a Turkish kick with some spices i have. Toast and warm up in some maple sugar i think. Winging it. I'll take some meat from the hock end for the beans. Biscuit recipes are all over the place. Make them so rarely. One fold and roll out...7 folds and roll out....never roll out, but that is a drop biscuit. (Mom Nelly's method). Rest for an hour, never rest, lol. I do know not to use a thick edge drinking glass and never spin-cut. I'll find something. I only have my EnglishMuffin rings. BigDaddy size. Tin can is fine...like the ones for beans. BananaCream Pie?! Mom Nelly had a Diner and was expert in pies. That was my favorite.

Using the google to search the interwebs to find something never occurred to me. LOL. Of course that was the first stop, and where I found that the local store had closed and that the closest store about an hour away. Since my brother's idea was directed toward lessening the burden of hosting the family on my wife and me, having us drive two hours over the mountain wouldn't really accomplish that. The suggestions of Trader Joe's or Costco or Wegman's are helpful. There is a Trader Joe's and a Costco just a couple of miles away, and a new Wegman's maybe 5 miles away. IIRC Costco requires a membership, so I'll likely try Trader Joe's (if I can get a sample), or use this as a reason to go to the new Wegman's. One question I had is how are the "Honey Baked" type hams different from the ham at the deli? When I was at my usual grocery store a day or so ago, they had Boar's Head Sweet Slice ham on sale, and it is really good ham. Could I buy a whole ham unsliced, and heat it and glaze it and slice it and expect good results?
