I ordered a big bag of Ceylon Cinnamon from Penzey's because we eat cinnamon daily and according to what I've read, Ceylon Cinnamon only contains trace amounts of Coumadin and is much better for the liver than Cassia. I was also planning to use it for baking. However, after ordering I read some more and some sources stated that Ceylon has a much weaker flavor than Cassia and is not that great for apple pie and other baked goods. Have any of you guys used it for baking, and were the results okay? Did you have to use larger amounts than Cassia?
