Main Man made Steak Fingers last night. So delicious! They were on my Mind when I woke up, so I decided to have one for Breakfast too! LOL!

I'm thinking I'll make Spaghetti Pie tonight.

Cooked Buttered/Parmesan Spaghetti on the bottom.

Cottage Cheese slathered over the Spaghetti

Then Meat and Sauce.

Topped with Mozzarella Cheese and Olives

A nice Salad and Garlic Toasted Bread. OMG!

This always seems harder than it looks and sounds:) I heated up the pan, added a little olive oil, then a little butter that immediatly burned. Then shredded in some garlic that immediately burned - but I couldn't turn down the heat because I needed to sear the steak! Ok so then proceeded to do as instructed and that part seemed to go ok. I did marinate for say half an hour in some vinegar, olive oil and spices. Patted that off, put on some pepper before it went in the pan. Cooked 7 min a side and the doneness was actually pretty good (I was amazed!) But the steak didn't have much flavor. It was 14.99 a pound - looked nice. I'm not sure what happened there. Is it just that it wasn't grilled? I sure wish I could grill, smoke, spatter. Pfft.

I was going to suggest the pressure cooker. Without a manual, you can still get some good info online. I've included links below to the two most popular sources for pressure cooker recipes. Also, you could search online for the manual that accompanies your particular cooker. Once you get a general recipe for a pot roast that's about the weight of your cut of meat, you'll know how much liquid is needed and how long to cook it. I am making a stromboli, it calls for bacon and cheese but I think I am going to use mozzarella cheese and
pepperoni! I may even adventure back to the store and get some lettuce and tomatoes for a small salad.
It is so nasty out, we had freezing rain last night and today it is raining bad which may refreeze.

Oh, don't have to cook tonight. DD invited us for dinner for Valentine's Day (of course, she's reserving tomorrow night for the boyfriend). All I had to do was make dessert.

6 months into it, I'm enjoying being an empty-nester and getting invites to dinner at HER house for a change. (Even if I did have to spend most of Monday sitting in her apt., waiting for the heater repair guy--LOL)

We're going to a catfish place w/ DH's cousin and her husband. It's all you can eat (can you say pig?) We love their cole slaw. Yum. Tomorrow night I'm cooking b/c DD#2 is coming w/ the twins and 3 y o. I'm making a chicken dish a friend brought her when the twins were born. It has swiss cheese and stuffing mix and is delicious. She's requested chicken fried steak and the best is at a restaurant here. I'll let them splatter up their stove!

The other day I made Swiss steak, mashed potatoes and gravy and broccoli casserole. Casserole's gone but tonight we're having open-faced beef & gravy sandwiches. I shredded the beef into the gravy. I tell you, I can hardly wait! Pickled beets for a veggie. Leftover Hawaiian cake for dessert--if there's room.

I made a meatloaf (it's in the oven now ;0) ) and I'm going to fix buttered potatoes and green beans ....crud Gayle now I'm hungry I wish I hadn't opened this post lol.

Sigh it's going to be a long wait for DH to come in so I can......er we can eat ;0)

I put bean soup to cook slow all day in the crock pot, and rolls are rising on the stove. They both smell sooooo good. and best of all are the leftovers for lunch for a couple days. Dottie

Can't decide...lasagna or breakfast...I've got plenty of time...or maybe tacos for the boys and I...and figure out something for hubby when he gets home late tonight..
