MLC in mini bundt pans

I want to make my first molten lava cakes today for my bunco group tonight. I have some mini bundt pans and also a rose shaped cupcake pan. Do you think either or both of those would work? Thanks for your help!

how many ounces do your pans you want to use hold?

The rose pan holds 5 oz and the mini bundt holds 8 oz.

This is a killer chocolate recipe. You must love chocolate though!! Chocolate Chocolate SoufflÃ©s (recipe courtesy of Emeril Lagasse) Yield: 4 servings 2 teaspoons unsalted butter, softened 1/2 cup sugar 8 ounces semisweet chocolate, break up into chunks 4 large egg whites 3 large egg yolks 1/4 cup Grand Marnier Confectioners' sugar, for dusting Grand Marnier Chocolate Sauce 1 cup heavy cream 1 tablespoon butter 1/4 cup Grand Marnier 4 ounces semisweet chocolate, finely chopped In a small saucepan, heat the cream and butter. Add the Grand Marnier. Whisk then bring to a boil. Remove from the heat and whisk in chocolate pieces until all the chocolate is incorporated. Serve with the souffle. . Preheat oven to 400 degrees F. Butter 4 individual ramekins and sprinkle with about 1 teaspoon sugar for each ramekin. Melt the chocolate in the top of a double boiler set over simmering water, stirring occasionally until smooth. Remove from heat. In a bowl beat the egg whites with 1/4 cup of the sugar until stiff and glossy. Whisk the egg yolks into the melted chocolate 1 at a time, add the Grand Marnier, and whisk in the remaining 2 tablespoons sugar. Fold in the egg whites until thoroughly blended. Transfer mixture to ramekins and place on a baking sheet. Bake until puffed and somewhat firm, about 20 minutes. Emeril recommends serving with the chocolate sauce, but I felt it was rich enough and very delicious without the sauce.

You might try applying a coat of DAWN Platinum Erasing Dish Foam (foam plus a little water to make it spread farther and stay wetter) and let it sit on the problem areas of the pan long enough to soften the baked-on crud, then clean as normal. I have the 12-cup mini-Bundt pan similar to the one in your picture and use it all the time without the build-up problem. I spray my pans with Bakers & Chefs Cooking Spray making sure I carefully wipe off any over-spray that is on the flat surfaces before filling the pan. I've been using this cooking spray for around 20-years and don't have gunky pans, and I make all our baked goods all the time using somepans that are as much as 30-40 years old. I've also been cleaning my baking pans with the DAWN foam products since they came out on the market. -Grainlady

Can't subtract this morning. The rose pan holds about 3 oz.

Someone feel free to correct me (I'm at work not home, so I don't have the recipe), but doesn't the MLC container need to be 6 oz? If so, the rose won't work. But, if the hole in the center doesn't matter, the bundt might. And be a good spot for ice cream. Anyone else know if a bundt might work?

I doubt that the bundt pans will work. The heat going up the center would bake the lava part too much and you would just end up with chocolate cake.
The rose pans might work if you reduce the time and watch very carefully. The trick will be in getting the MLC out. Individual pans or custard cups are really the easiest. Baked correctly, the cake part is pretty fragile and the inside like sauce. I've always removed mine directly onto each serving plate.

I think the best thing for me to do is go to Target, buy the ramekins and just do it that way. If this weren't formy bunco group I'd experiment, but today I don't have time to ake a second dessert if this one doesn't come out.

Dorie Greenspan suggests disposable muffin pans. She even washes them and reuses them. I thought..now what is my excuse??? I have muffin tins and disposables too, leftover from a class treat last year.
Still haven't made the MLC though..I'd be the only one that ate them ALL!!!
