Dropping in with a Pickle Question

Been a long time since I've posted, but I do check in 2 or 3 times a week.I'm all set this weekend to make Chase's dills and Annie's salsa for the 3rd year. If I don't run out of steam, Nancy's peach butter is also on the list.

My question is regarding the dills. In an effort to make them last longer, I'd like to make spears rather than whole dills and my question is: do I cut them into spears before or after their ice bath? I will have a case of "picked today" cukes waiting for me to pick it up after work, so will bathe them tonight and pack tomorrow.

I'd also like to try some brandied peaches, but curious if anyone has a T & T recipe for such that uses Amaretto instead of brandy?

I look forward to your replies and hope to be able to start contributing again.

I think I'd cut into spears just as you pack the cukes into the jars.
I made mine (first year) 2 weeks ago.......I'm trying to be patient, but I want to try them!

It's salsa weekend for me too. I ordered 25# of canning tomatoes and will pick up on my home from work. I've got onion, jalapenos, etc. already. Prep tonight, can tomorrow! Wahoo!!!!!

I have tried baking soda with little effect a mix of ascorbic acid and water may also help a little. The mildew happens rapidly and once you see a single yellow leaf, it has begun. I spray with a fungicide called Serenade, which works quite well. Its done every 7 days during the bearing of the cukes. Bees love the blossoms and I usually have many bees busy all day long. I go out and pick at sunrise as its a little cooler and easy to find them on a vertical trellis. The honey bees must be local as they are busy all day and the area sounds like a huge bee hive. They usually are just fine even if I am out there picking right next to them, as they are not very aggressive. I posted links above to web site for pickling cucumbers, and if you don't know how to get these links copied to an internet browser, just simply point at an end or start of the HTML line (above), and hold down the left mouse button and move to the left or right to highlight the whole line. I use a powered product called Serenade and its worked quite well in reducing the damage of mildew. None of my sprays for the garden are petrolium based or chemcial based. There is water nearby and most has only been swampy, but my garden doesn't contribute any contaminates to the environment. When I do pickles, its usually in quarts. Add Jersey Green Sand to the garden to raise the potash level. I just applied 60 pounds to my garden as it was quite low in Potash/potasium. It always seems hin in phosphorous even though I never add any. My recent soil test also told me my nitrogen is low, so out went fish meal. All these get tilled under. I do most of my sprays in early morning or late after the sun passes over. If you have squash vine borers, there can be two kinds of protection, A form of Bt injected into the stems near the soil and about 1 foot away, then 2 feet away. If you are concerned about Bt, you could also use beneficial nematodes and inject them instead. I use an insulin syringe to do the job, and it usually only needs one treatment. The cuke beetles carry the mildew around on their feet. I use yellow sticky traps and scent lures for catch the beetles. There are two kinds of cuke beetles, spotted and striped. Here its striped and they can also infest the melons and squash plants. Last summer after 3 weeks, I had to replace the sticky traps, as they were all loaded. To further confuse things, for every "rule" there's bound to be an exception. One notorious recipe is for peppers marinated in bottled lemon juice and oil then canned. That is a perfectly safe recipe tested to achieve sufficient acidity to compensate for the oil. But it took some skilled lab work to develop it. People working at the NCHFP and the Extension services carefully test recipes to arrive at optimal safety AND optimal flavor. If they can find a safe way to process a pickle with less vinegar, they will do it. But those recipes are lab-tested and verified. The difficulty is when people pack cucumbers too tight in the jars, use jars of a larger size than the recipe calls for, use lower-acid vinegar, fudge on the processing time (start counting before the water's up to temp), add ingredients the recipe doesn't call for (i.e. garlic or hot peppers or fresh herbs) then you can have problems. Canning recipes have to be pretty precise. Garlic is healthy. So are a lot of other low-acid veggies. But when you seal garlic in an anaerobic environment (i.e. no air) then you create the conditions things like botulism enjoy. Botulism spores like warmth (but not pressure canner temperatures), low acid and lack of air. That's why it was mentioned that some vegetables require a higher % than 50-50. It just depends. The peeling is optional with any recipe. The need for it depends on the type of pepper and how thick the skin is. Cutting slits in the whole peppers is recommended. The soaking in vinegar is optional. The slits will allow the brine access to the interior. Just takes time. So pre-soaking them could speed up the process. Personally I've never done it. As for the pickle crisp, the amount used depends on the brand used, there are several and some are more or less coarse ground so different amounts would be called for. So use the directions on whichever brand you have, To determine if it is enough or not try some of the ones you have already done and see if you may need a bit more. That will be the best indicator and with time and testing you can decide how much works best for you. But you need to know that using too much can affect the flavor badly and that "very crisp" may not be a realistic expectation with home-canned pickled products. Heat processing just doesn't allow for "crunchiness" so homemade will never be as crisp as store bought which are processed quite differently. JMO Dave

tobyt, I cute mine into spears just as I was ready to pack them into the jars, they got their ice water bath first. It worked for me, although Chase is probably the expert on her own pickles!

Hi Toby, we miss you.

Actually I have never cut them into spears, but if I were to I would do it after the ice water bath not before.

Thanks for all the answers. I was my inclination to cut them after their bath, but I needed validation, so thank you. I'm going to do 24 quarts, as last year I did 12, which lasted us til February. I have also warned my daughters that although it is nice to give away canning, I would appreciate it if they wouldn't hand every guest we have a jar of pickles as they leave!
The salsa is great, we all love it. It is truly a labour of love for me, as I tend to suffer from excema on my hands and a day of working with tomatoes, onions and peppers, even with latex gloves, makes me itch just thinking about it! What I need is latex eveing gloves, the kind that go up to your elbow!
