I want to make your oatmeal cookies today--what kind of oatmeal should I use, quick cook (not instant) or old-fashioned?

If anyone else knows, jump right in here--Jasdip may not be available today and I feel like baking!

Jumping in because I made them on Friday, not knowing either so, I used half quick oats because that was all I had of that one kind ...steel cut looked too big, so I used a 12 grain cereal that had lots of oats in it to make up the rest. It came from the Bulk Barn and you use it the same way to make oatmeal/ porridge. They had to be the best oatmeal cookies I have ever had. I like the shortbread texture instead of chewy for a change. Making them again today with either raisins or cranberries added.

I just use the regular kind that I make my porridge with, that
takes about 5 minutes to cook.

I took about 2 dozen to the birthday party last nite, and we came home with an empty container. Everyone loved them.

Margarine, except for tub and squeeze) is virtually all 4 sticks in a flat (side by side) box. Butter is usually 4 sticks to a pound, 2 sticks stacked on top of 2 but you can get a 1# block of butter also. Occasionally you can buy a 1/2# of butter or margarine (2 sticks). We talked about the milk and it's kind of funny actually. Really, how heavy is a plastic carton? I'd venture a guess that the plastic jug is lighter in weight than that pitcher you have to put the bags in! LOL Sorry Jasdip, still not convinced! :) Although the pouch for kids, kind of like a juice pouch or box, but not sure how well they stand up although I suppose if they pleated the bottom it would work, but really, what's the benefit of that over a carton? Methinks the petropromoters are at work.

I like your project. After your child gets older, you could make a book of place names listed in alphabetical order. You could fill it with places from A to Z, or use only places both of you have seen. And then, you could make a family album including all photos you have of relatives. This would be a great way to keep your children in touch with relatives. Then, there could be a book of foods, then animals. Come to think of it, you do not have to wait until the kids are older. Start your books now and then introduce those to your children at appropriate times. Maybe you could entice someone to write bed time stories to go with the illustrations.

Buy a store-bought pound cake (I like marble or chocolate cake) , slice it the long way into four long rectangles (once down the middle then each piece sliced in half).Line a loaf pan with a large piece of plastic wrap. Lay one piece of cake down in the loaf pan (I have Corningwear, the old blue and white), brush cake with any liquer or booze you like.( Grand Marnier works fabulously), then a layer of softened ice cream (I like coffee ice cream). Continue layering, four layers of cake and three layers of ice cream, booze on each cake layer). The top layer is cake. Completely fold up in the plastic wrap, put a weight on top(I use 2 cans of soup) . Freeze solid at least 4 hours. Remove from freezer 15 minutes before serving.Slice and enjoy.( It might be difficult to transport.Sorry,I only serve at home.)

I always use parchment, and have never found it to cook any faster. Was the pan with the parchment a darker pan? Dark pans absorb more heat, and that would transfer to the cookies even through the parchment. Was the parcment sheet in the bottom of the oven (closer to the element?) and the silicone sheet on the top rack? That would have made a difference, and is why you're always supposed to rotate pans halfway through when baking. You say you always have to bake things longer? Have you checked your oven temperature? An oven thermometer is very inexpensive. Once you know if your oven temperature indicator is off, you can either fix it (it's a simple operation) or you can compensate by turning your oven up or down as needed. My oven is always 25 degrees slow, so I always turn it up 25 degrees.

Thank you both. I 'm going to try them using coconut oil, which isn't an oil at all but a solid fat. At least mine is. It's supposedly good for you. At least this week! If they don't turn out, it won't be Jasdip's fault! :-)
