1 egg to 1/4-1/3 c. milk
(One egg should do 2-3 slices of bread if you just dip the slices in the batter. More batter is needed if you soak the bread slices.)

I'll also use liquid flavored coffee creamer or commercial egg nog (during the holidays) instead of milk. The coffee creamer will make the mixture very thick; and the different flavors are well received on French toast around here.

I use a lot more egg and milk in my French toast.....because I mainly like it soaked and then cooked fairly firm on the inside. I want the custard stuff all the way through the bread.
I use about 1/3 cup milk to an egg....and add a bit of vanilla and maybe a teaspoon of sugar. That amount will do 2 small slices of bread the way I do it.

I have also used canned condensed milk and egg to make the liquid mixture and it gives a more custard like feel to the toast and I also put cinnamon in the milk egg mixture and stir it up. Then I LOVE to put peanut butter on after it's cooked instead of using butter and syrup...YUMMMMMY I want to go make some now.

I would say you'd want to cook them completely then freeze. And then just reheat, Otherwise you may end up with really soggy bread. I had some once I had cooked up and had a lot extra, and did just that, froze it and pulled it out later for a desert I made with it for a brunch.

and make sure that they are totally cool and "dry" before freezing them together..

Like Linda, I have a much higher ratio of egg to milk. In fact I actually like to just add a small amount of cream. I don't measure but if I had to guess it would probably be less than 1/2 a cup per 4 eggs. Seasoned with just salt and pepper. I let the bread soak up all the egg too. I don't like French toast that is just coated with egg on the outside. I like it to be custardy (???) all the way through. Moe has his with maple syrup but I like mine with just butter, salt and pepper.

My recipe is a feeding a family of 5.

4 eggs, couple splashes of milk, a Tablespoon on sugar, a few shakes of cinnamon and nutmeg, lastly about 1/2-3/4 loaf of bread

I often use orange juice and some Cointreau and orange zest instead of the usual milk and cinnamon for French toast. I often do French toast and freeze a batch. Same with waffles. We find we actually like the homemade/frozen/toaster waffles better than when they are fresh from the waffle iron.

Ingredients for French Toast:
6 eggs
1/3 cup strawberry preserves
1 1/2 cup milk (may use a combination of milk and half & half)
1 loaf French bread (1pound) sliced 3/4 inch thick
1 quart fresh strawberries cleaned and sliced.
Sugar to taste

Strawberry Butter:
1/3 cup strawberry preserves
1/4 cup softened butter

Also:
Powdered sugar
Almonds, sliced and toasted
Whipped topping

Beat eggs with milk and preserves. Dip slices of French bread into egg mixture. Place bread in large pan. Pour any extra egg mixture over bread. Cover and refrigerate overnight. Make strawberry butter by blending ingredients in a food processor or combine well with a spoon.

Cook French toast in a greased griddle heated to 300 F. Turning several times until golden brown.

To serve: place two slices of French Toast on each plate. Generously spread strawberry butter on each slice of toast. Top with sweetened sliced strawberries. Sprinkle on toasted sliced almonds. Top with a spoonful of whipped topping. Dust with powdered sugar. Serve with favorite breakfast meat, if desired.

Makes 6-8 servings.

Thanks, everyone. I ended up making a loaf and a half with whole wheat toast bread. I decided I would let the kids eat what they wanted for dinner and freeze the rest. There was one piece left over! I guess I will have to do this when the kids aren't home. LOL
Lou, I have your waffle recipe. The plan is to one morning make french toast, pancakes and waffles. I'll let you know how it comes out.
