The cake hubby wants for his 60th b'day party...I have questions!

Hubby will be 60 next month, so it's time to celebrate! The snacks will be jalapeno poppers dip, tortilla chips, and popcorn.

Along with chili and all the fixins', we'll have tamale casserole and cornbread and a big tossed green salad.

Hubs wants a yellow sheet cake with blueberry frosting. Hmmmm, I've never made blueberry frosting before.

Here's what I'm thinking.... I'll make some puree with blueberries, just like the recipe in The Cake Bible. I'll use that puree in the "Cloud Cream" recipe, also in the same book. The Cloud Cream uses 2.5 tsp gelatin dissolved in a bit of warmed puree, then added to the rest of the puree, which is then folded into a couple of cups of cream that's been whipped--or something like that--I'll re-read the directions. I'll taste it and adjust by adding superfine baker's sugar if needed.

It's been really hot and is likely to continue to be hot so I want to make sure to stabilize the frosting.

Should I add a packet, or two packets, of Whip It--in addition to the gelatin?

I know the gelatin in it will make it more firm, but I made this recipe before using raspberries, and because blueberries are much different, I was wondering if it needs to be even more stiff? I've never pureed blueberries before, but I doubt it's exactly like raspberries, which just seem juicier!

Of course, I could make a batch and try it out and if it's awful, hey, we can eat the mistake--except for this darn spare tire we both seem to have! lolam

Just a thought... What about using a Blueberry Butter? It could be added to a regular buttercream frosting. There is pectin in it and is pretty firm. American Spoon makes it and I'm sure there's others also, if you can't find it locally. You could also spread Blueberry Preserves between the cake layers for added flavor.

However I think I'd just do a cream cheese frosting and fold in fresh blueberries. (smashing them a bit as they are mixed in)

"illegitimate"? You have GOT to be kidding me, right? Tell me there aren't people out there who still believe this. Hopefully, they're old enough to die soon before they pass that myth along. My granddaughter was not born from a marriage. Sadly, the parents did marry later, which was the dumbest thing I've seen happen since....., since, since, I'll get political. She will grow up to save us all from cancer, altzheimers, or toenail fungus. She's the best, however she got here and a blessing from God. Sorry, OT. For the original topic: If my best friend from work excluded me from the baby/wedding shower because I didn't "know" the kid, I'd be relieved. I see that as a grab for gifts. I would be more inclined for a baby, after the fact, wrap a bunch of Baby Wipes and diapers for when she has the baby, or after the wedding, a bottle of vodka.

Quite frankly, I don't think it's ANYONE's responsibility to buy gifts for anyone... kids make stuff. My kids always made me stuff in school for Mother's Day & Christmas... they made me card or picked me flowers on my birthday. Or they just gave me a hug and said I love you mom... and that's pretty much all I ever needed. It's nice if parents get along well enough to take kids to buy something and if they want to... no problem. If it's an issue where you want nothing to do with ex and kids ask to buy something, I'd say "why don't you make something?" I'm probably alone here, but my opinion is that the world is too darn commercialized and everyone has to buy a card for this or that or send flowers or buy a present. Thank you to Hallmark! We see aisles of gifts for Christmas BEFORE Thanksgiving.. sometimes before Halloween. We see gifts for Halloween... who gives a gift to their teacher on Halloween? WHY? It's a holiday to trick or treat, not give a card or gift. I just think it's silly and really should be a non issue. From the time my kids were 7 or 8, maybe I would give them a little cash & let them buy each other a Christmas present at a dollar store or Target... just a little something. (not always, but a few times & my daughter always bought me a scented candle at dollar tree... I loved it because it was from her, but a hug would have been enough too) I don't get why it is such a big deal nowadays. After my parents divorced, neither of my parents took us shopping for the other... I would have thought "why is he/she doing that?" since I was well aware that they are divorced. (and yes, I was witness to my mom doing some of the things SM's complain about BM's doing for the DH's... and yes, her motive was to piss off my SM and hoping my dad would want her back.. so although I know all BM's don't do it for that reason, I will admit that I am biased as that goes.) As a child of divorce, it was very uncomfortable for me when my mom would say or do things to interject herself in dad's life because I knew dad didn't want her to but he also didn't want to be mean to my mother... because she was my mother. So, I get why these DH's do put up with a lot, but I also wish my dad had stood up for himself more than he did. If he had put her in her place, my life would have been less uncomfortable.

Thanks for the responses. When I had my 50th birthday party, I wasn't thinking about gifts at all, so it didn't occur to me to write "no gifts" on the invite. But judging from the number of gifts I received, most people think a gift is obligatory for a birthday party, no matter the age. I suspect that my friend's situation is similar--she didn't write "no gifts" because she's thinking "party," not "birthday." The guest list is expansive, not just "ladies." Family, friends, husbands, kids are all invited. Come to think of it, gifts may be completely overwhelming. Nonetheless, I did get something for my friend, so I will do at least a card, and maybe a token gift, for her friend as well. The evite had a slide show of the two of them going back to 1987. It was very cute and sweet.

Here is my mother's china etc storage in her dining room. Cabinets on top, four banks of drawers below for "bits" and linens. The base isn't as deep as a kitchen counter is, it's maybe 16-18". Mom is very petite so the cabs are hung low. The doors and countertop surfaces are wood-look Formica (hey, it was the 70s). I opened the doors so you can see how much they hold. There's an electrical outlet for hot trays. The pass through is to the kitchen. And large folding doors close it all off; you can just see the edges of the doors.

Nancy, I don't really want to make BC frosting, and esp if the recipe uses vegetable shortening. Just not a "food" I want to put in my mouth. I've never used a blueberry butter, but thanks for the suggestion.

Terri, I have that very same Meyer Lemon website bookmarked as an option, and I also had the Blueberry Almond Cupcakes noted too but that last website photo just didn't look "solid" enough.

I'll be frosting a 9 x 13 cake, and I like Nancy's idea of preserves between the layers.

Thanks! I may actually have to do this ahead of time, using one-third or one-half a recipe and see how it turns out.

Ohhhh, Terri, you rock!!! Thanks for that link--I think it's a "must try" for the Blueberry Swiss Meringue Buttercream frosting! I've never done the Swiss (or any other) Meringue Buttercream, but I do have all the stuff to make it. However, the party and getting ready for it does *loom* so I have to organize myself better! ha ha

Did you check out the Salted Caramel Cupcakes??? Ohhhhhhh, yum!

Yes, I check it all out...but trying as I might..I don't eat much wheat......and attempting to cut out refined sugars too...

Cupcakes are a no no...LOL(I do make a chocolate cupcake for the boys and I'll eat one unfrosted sometimes.)

I think the latest recipe is the one I was thinking of before..but couldn't find it again..

I have a bookmarked salted caramel ice cream recipe too..What's not to love about caramel with a bit of salt???

Hi, Terri,

I made the cupcakes today, using the recipe on the link you posted above from Sept. 3. Darn good cupcake! You can see my self-taught icing techniques could use some work. I also filled the cupcake in a different way--this time, in the pix below, I stuck a big rose tip into the middle of the cooked and cooled cupcake and shoved in a bunch of vanilla creme custard. Sure is faster than cutting a chunk out of the centers, filling, then putting the tops back on!

Here is the good-tasting cupcake!

Terri, I *could* tell you the cupcakes were made with magic, no wheat at all! And I *could* tell you that no sugar was involved--just the sweetness of more magic!

Yeah, I could tell ya that.

But, hey, good for you in your efforts to avoid wheat and refined sugar! I try to avoid white rice, white bread, and potatoes, just to name a few, and I also try to not eat things with sugar in them (okay, that doesn't always work! LOLAM). Cupcakes, cookies, cake--most of the time, I don't have them in the house.

Another really GOOD thing about being a retired teacher is that I don't get "exposed" to all the goodies in the faculty room, the donuts every Friday (right next door to my room!!!!!), or the special yummy things from the students!

Thanks for the compliments! They encourage me to keep on trying to improve!

Well magic cupcakes would work for me. LOL But they probably wouldn't taste very good. :oP

You are right about the faculty room..In several of the schools I've subbed in, some have candy dishes on all the tables!!!
I am one of those "bad" parents that ply the staff with goodies too...LOL

~Hey if you could figure out how to make those lovely frosting piles with out a pastry bag to squeeze, I'd be forever in your debt. I can "squeeze" about 3 cupcakes or cookies, before my grip aches! (to many years of counting down vault shipments by hand!)

In case you're interested, Spices Etc has a wonderful blueberry flavoring that I use in BB miffins, cakes, etc. I am sure it would be wonderful in the icing for added flavor. It is natural and very good tasting.

Sue, thanks for the link!! I was considering cakeart.com and now I have another resource!

Here's the latest photo--I think it will appeal to just about everyone in case I run out of time making cupcakes, then the lemon curd for the filling and the cream cheese blueberry frosting. Plan B -- yellow cupcake with a whole cherry stuck inside it and a bit of vanilla creme custard on top of the cherry, and the frosting is Cool Whip (I know, I know).
