Thanks for the good wishes!!...Yes Jessie it was Saturday....I can't seem to get it changed in my page....and ever it had been thus...so it's a nice surprise when I get all your good wishes!
This was a weekend focused on #5 grandchild. He's a swimmer and this weekend was the state meet and one of my daughter's kids is a swimmer and as he is at the top of his age group and very good he qualified for 11 events. So that was a 3 day commitment on their part...but Pat the autistic one would not be up for sitting poolside for 3 days....and also he was due at camp on Sunday. So Pat stayed with me on Saturday and we went to the celebration in town and and rented a lot of videos and on Sunday his dad picked him up and took him to camp. Sunday night after the meet, Becky and Dan stopped here and I fed that boy all the rare steak, baked potatoes, "remembered rolls" salad, corn on the cob and fresh strawberries he could hold.
He medalled in 3 individual events, a gold in the mile a silver in the 400 free and a bronze in the 100 and won 2 gold and 2 silver in relays....grandma's very proud!

Well since we're just remembering today, you're allowed to have a second birthday. Hope this one is filled with a nice single malt. Happy Birthday!

And here's a perfect dessert for you:

MINT "FORGOTTEN COOKIES"

2 egg whites
1/2 tsp. cream of tartar
Pinch of salt
Green food coloring
3-4 drops mint extract
3/4 c. sugar
1 pkg. chocolate chips

Heat oven to 375 degrees for 15 minutes. Beat to peak: egg whites, cream of tartar, salt. Add green food coloring and mint extract; beat until mixed in. Add sugar gradually while beating mixture. Stir in chocolate chips. Drop by teaspoons on parchment paper or wax paper on cookie sheets, using an upward twist of the spoon to form peaks. Turn off oven - leave overnight. [Optional: leave in oven for 3 weeks!]
