Anybody have a good recipe for a Virgin Pina Colada?

After searching the web, it seems that a typical virgin PC consists of a about 1/2 - 1/3 as much coconut cream as pineapple juice.

That's too syrupy for me. What about a little club soda or 7-Up?

I clipped this recipe off the internet a couple of weeks ago. It was from the best of the LA times.

I was intrigued because I thought the lime would add a neat depth of flavor and cut some of the sweetness. I know, I know.... it may not be "authentic", but it sounded good!! :) Also like the minimal amount of cream of coconut and the use of the fresh pineapple instead of just juice.

I know it isn't virgin, but I wonder how it would be if you left out the rum?

1987: Coconut Daiquiris

This recipe appeared in an article in The Times by Marian Burros. The drink came from David Margolis, a friend of Mayor Ed KochÂs.

1/2 very ripe pineapple, cut into chunks
Juice of 1 lime
2 tablespoons Coco Lopez cream of coconut
71/2 ounces Bacardi light rum
20 ice cubes.

Combine the ingredients in a blender and whiz until smooth. Serve immediately without garnishes. Makes about 5 daiquiris.

Email me directions I'm coming. Especially if you aren't roasting a pig, grin. I'd pick either a cabbage salad or the tossed salad - either with an Asian dressing. I don't think you need both. If you've found a recipe that works with canned salmon for the Lomi Lomi, you're OK, but I think it is started with fresh salmon, and marinated/salted overnight. I wouldn't reach for a canned salmon version but you know your family and your schedule best. Lose the corn in favor of rice or a rice salad. Yeah, I know its corn season. Hey you could chase down poi....he heh. I see lots of potato and macaroni salads on Hawaiian menus, FWIW. Serve a pineapple or coconut based dessert. Don't forget the macadamia nuts! If you are short-cutting with a box mix for the cupcakes, you could sub a tropical juice for the water. Here is a cabbage salad that has me drooling - I'm a sucker for Asian salads. SESAME CABBAGE SALAD 1 head cabbage chopped 1 bunch green onions chopped 1/2 cup chopped celery or peppers 3 packages Ramen chicken soup (dry soup pks) 1 bag frozen peas 1/2 cup vegetable oil 1/4 cup cider vinegar 2 Tablespoon sugar 8oz chunk almonds, toasted 4 Tablespoons sesame seeds, toasted Mix cabbage, green onions, and celery. Break up dry Ramen noodles and toss in. Mix dressing of vinegar, oil, and soup mix. Toss dressing and toasted almonds and sesame seeds with salad mix. This yields a lot of salad and is best served same day. Serves 15-20 people.

What else is needed? ;-) Light lunch munchies: shrimp cocktail, orange chicken nuggets w/teriyaki dip (forget the actual name; bought them in the freezer section at TJs, they were good), fresh fruit tray with vanilla yogurt dip (with cinnamon, orange zest and orange juice), and Multi-grain pita chips w/ sesame seeds (Trader Joe's), and cashew macadamia dried fruit mix (also from TJs). Yes, Jenn. You want 2 - 3 parts Pineapple juice to 1 part Coco Lopez. The best way to make it really delish (It would be very thick just poured over ice) is to toss it in the blender with about 10 - 12 ice cubes. Voila! Frozen virgin Pina Colada.

Thank you Alexa --- that's what I'm talkin' about! :-) I hope I can find Coco Lopez at our local grocery store.

If I find coconut milk (not cream) instead, would that work as well? I could use less ice than for the cream. Then again, more ice + cream might produce a similar consistency.

gbsim: Thank you, that sounds delicious. I'll try it sometime.... I've clipped lots of great "best of" recipes from the L.A. Times.

I/m sure you will be able to find Coco Lopez, even our 7-11 stocks it since I guess you never know when you could have a Pina Colada emergency in the middle of the night LOLOLOL! Oh and if you want to get really crazy, throw in a few frozen strawberries and you will have a Strawberry Colada. YUMMY!

Thanks Alexa! If I can find it at 7-11 then I'm sure I'll find it at any of the stores where I need to shop for the luau food this afternoon.
