Anybody have a good recipe for a Virgin Pina Colada?

After searching the web, it seems that a typical virgin PC consists of a about 1/2 - 1/3 as much coconut cream as pineapple juice.

That's too syrupy for me. What about a little club soda or 7-Up?

I clipped this recipe off the internet a couple of weeks ago. It was from the best of the LA times.

I was intrigued because I thought the lime would add a neat depth of flavor and cut some of the sweetness. I know, I know.... it may not be "authentic", but it sounded good!! :) Also like the minimal amount of cream of coconut and the use of the fresh pineapple instead of just juice.

I know it isn't virgin, but I wonder how it would be if you left out the rum?

1987: Coconut Daiquiris

This recipe appeared in an article in The Times by Marian Burros. The drink came from David Margolis, a friend of Mayor Ed KochÂs.

1/2 very ripe pineapple, cut into chunks
Juice of 1 lime
2 tablespoons Coco Lopez cream of coconut
71/2 ounces Bacardi light rum
20 ice cubes.

Combine the ingredients in a blender and whiz until smooth. Serve immediately without garnishes. Makes about 5 daiquiris.

I'm sure some enterprising cabana boy could create a recipe. Surejell has a recipe for pineapple jelly to use as a starting point. I'm imagining substituting some coconut rum for pineapple juice. Here some more: J-26 - I knew I should not have gone for it but I had to. Zills described it as "like a Van Dyke"...pretty spot on but a little more tart than a Van Dyke (as most of Zills' late season fruit have been. next was "80" (not sure what happened to the picture I took of the uncut fruit but here it is cut). creamy, taste of citrus, and again, overly tart. next was one that I have no ID for, I believe it was a 40-33. This creamy mango had good flavors or peach and citrus, moderately sweet but again more tart than I believ it should be. and last, but of course, this is not least. Actually, saving the best for last. Also, this was NOT from Zills...it was the last Maha Chanook of the season. This again, one of my top mangoes, was amazing but not as great as the ones from the heart of the harvest. This was very sweet, creamy and juicy, with tropical flavors found in Thai varieties. All in all, Zills' mangoes I have had in August have had an issue with excessive tartness. I know some feel it is due to their lack of fertilization but I don't think I buy that as the mangoes from June and July were not fertilized either and those, for the most part, were not like this. Any thought on this anyone, Sheehan, Harry, Jeff ?

Not sure if this is the type of dressing you are looking for, but I bet it wold be good over the salad you described..... Theother possibility is to use some Pina Colada concentrate (in the frozen juice concentrate section) and add it to a basic vinaigrette recipe. I started to order a virgin pina colada at a retirement party a few weeks ago, they were having a happy hour drink special...except for pina coladas. They made them with Bryer's ice cream so they weren't included in the special pricing and were almost $8!!!!

Yes, Jenn. You want 2 - 3 parts Pineapple juice to 1 part Coco Lopez. The best way to make it really delish (It would be very thick just poured over ice) is to toss it in the blender with about 10 - 12 ice cubes. Voila! Frozen virgin Pina Colada.

Thank you Alexa --- that's what I'm talkin' about! :-) I hope I can find Coco Lopez at our local grocery store.

If I find coconut milk (not cream) instead, would that work as well? I could use less ice than for the cream. Then again, more ice + cream might produce a similar consistency.

gbsim: Thank you, that sounds delicious. I'll try it sometime.... I've clipped lots of great "best of" recipes from the L.A. Times.

I/m sure you will be able to find Coco Lopez, even our 7-11 stocks it since I guess you never know when you could have a Pina Colada emergency in the middle of the night LOLOLOL! Oh and if you want to get really crazy, throw in a few frozen strawberries and you will have a Strawberry Colada. YUMMY!

Thanks Alexa! If I can find it at 7-11 then I'm sure I'll find it at any of the stores where I need to shop for the luau food this afternoon.
