Recipe for freezer slaw

Last year, my friend gave me a recipe for freezer slaw. I really loved the way it was seasoned, but I cannot find the recipe, and unfortunately she has passed away. I found one in the Ball book, but it has mustard in it. I do not remember that my recipe had mustard, but was wondering if anybody has a tried and true recipe. I have the cabbage all ready to go but need some help. Is any available? Thanks in advance - Barb

Freezer Slaw Holy Cross Church Cook Book 1982

1 med. head cabbage, shredded
1 carrot grated
1 t. salt
1 green pepper chopped

Mix salt with cabbage. Let stand 1 hour. Squeeze excess liquid. Add carrots and peppers. While cabbage is standing, make dressing.

1 c vinegar
2 c sugar
1 t. mustard seed
1/4 c water
1 t. celery seed

Combine all ingredients and boil 1 minute. Cool before pouring over slaqw. Put in freezer containers, cover and freeze. It will thaw in a few minutes. Leftover slaw can be re-frozen.

This church was closed by the Dioses two years ago. The book has been out of print for many years, and has many of my DMIL's recipes in it. I completely tore my battered book apart last year and scanned the whole thing for my kids and neices/nephew. It has become a family heirloom, and a rememberance of our Church, that my DH's grandfather helped build. My book is well used! Hope this helps.

I have a few recipes. The first one is the one I used a few times. I'm not a big mustard fan so I'd just leave the mustard out or substitute another seasoning I like better. Possibly some onion flakes or skip it completely.

Freezer Coleslaw

You can serve this recipe without freezing the coleslaw or you can make it up ahead of time (such as before Thanksgiving or Christmas dinner) and store it in the refrigerator or the freezer until you're ready to use it.

1 medium head of cabbage OR 2 to 3 packages of shredded cabbage (ever since I scraped my knuckles raw grating cabbage for 150 people for a church dinner, I have preferred to use the shredded cabbage you can buy at the grocery store.
3 sticks of celery chopped
1 teaspoon of celery seed
1/2 green pepper chopped (optional)

Boil the following for 1 minute:
1/2 cup white vinegar
1/2 cup water
2 cups sugar
1/4 teaspoon salt

Then: Pour over the cabbage, celery and green pepper mixture. (If it seems like it's way too soupy, which will depend a lot upon the moisture content of the cabbage you're using, add the third package of shredded cabbage. If you're going to freeze it, however, you do want the coleslaw to be covered with liquid.)

At this point, you can let the coleslaw sit in the refrigerator for 1 to 2 hours or overnight and serve, or you can put it into containers and freeze. The coleslaw will keep in the refrigerator for 1 to 2 weeks.

Note: this recipe works very well for red cabbage, which makes a pretty side dish.

Introduction
Yes, it's crisp--and freezes beautifully. Allowing the vegetables to stand with salt releases liquid that would interfere with freezing. Be sure to drain well before adding dressing!
Ingredients
1 medium cabbage head --about 10 cups shredded
1 carrot, shredded
1 green pepper, shredded
1 teaspoon salt
1 cup vinegar
2 cups sugar
1 teaspoon celery seeds
1 teaspoon mustard
Directions
In a large bowl, combine shredded vegetables and salt. Let stand for 1 hour.

Place remaining ingredients in a saucepan, bring to a boil, and boil for 1 minute. Cool.

Drain vegetables and add vinegar mix. Stir gently.

Freeze in tightly-sealed freezer containers.

To serve, thaw and serve chilled.

Freezer Cole Slaw

This can be made with either red or green cabbage.

Chop 1 med head cabbage fine, add 1 tsp salt. Let stand 1 hour to drain well.

Chop fine and add: 3 stalks celery, 2 carrots, 1/2 green pepper, 1 small onion.

Boil the following 1 min. 1/2 c water, 2 c sugar, 1 c white vinegar, and 1 tsp celery seed. Cool down, and mix with veggies.

This makes 5 pints, put in containers (zip lock works well) and freeze.

Will keep one year frozen, and 2 weeks in the fridge.

If you just want to freeze cabbage you can.

Quarter your cabbage, cut into wedges and steam, then freeze. Is great for different casseroles.

I didn't notice any odor to speak of from the daikon. The onions I used were quite strong, so it smelled like that, plus the celery and mustard seed and vinegar. My daikons are just perfect this year, and exceptionally mild. We've had a ton of rain since late July, and mild temps, so they're super happy. I've been eating this stuff for a couple of days now -- I kept some back in the fridge. It's really good. I pulled the last of the vegetables Saturday, and am going to do the rest of them up the same way so they don't go to waste.

Yesterday I made a somewhat Japanese style cole slaw, just using my imagination, and then today I wrote the recipe down. Then I just found this thread which contains recipes that are extremely similar to what I made, especially Becky's. Here's my recipe: Vegetables: 1/2 Head red or purple cabbage (can substitute Napa cabbage); 2 cups when sliced 1/2 carrot, grated 1/2 red (or white) onion 1/2 bell pepper (red, green, or yellow) Dressing: 1 Tbsp grated fresh ginger 2 Tbsp Ponzu sauce* (or soy sauce or seasoned soy sauce) 1-1/2 Tbsp Black rice vinegar (or white vinegar, preferably rice) 3 Tbsp toasted sesame oil 1/4 tsp Sriracha sauce ( or other hot sauce), to taste 3 Tbsp mayonnaise Slice the cabbage into julienne strips, about 1/16”-1/8” thick Thinly slice the onion from root to top in 1/8” strips Cut the bell pepper into julienne strips, no more than 3/4” long x 1/8” thick All of this can be done on a mandolin or in a food processor with the slicer attachment, especially if making a larger batch. Toss all of the vegetables together and place in a bowl with tight fitting lid. Whisk together all of the ingredients for the dressing (except mayonnaise) in a small bowl and then whisk in mayonnaise. Use a stick blender for larger batches. Pour dressing over vegetables and toss until combined. Cover with lid and refrigerate for at least an hour (or overnight) before serving. Can serve sprinkled with toasted sesame seeds or Furikake. *Note: If not using Ponzu sauce, you can add Yuzu or lime juice for the citrus flavor. If you do not have sesame oil, you can use 1 tablespoon tahini plus 2 tablespoons salad oil. ------------------------------------- I think next time I might use miso in place of Ponzu sauce, but then I would have to add Yuzu or lime juice. I like the KFC cole slaw, too. I found a similar, and for me, better tasting slaw at the Wegman's Kosher deli. I would suggest you google Kosher (style) mayo-less cole slaw and see what you come up with. Good luck.

Garlicky Coleslaw Makes 6 to 8 servings 2 cloves garlic, minced 5 to 6 green onions, chopped 1/2 head thinly sliced or grated cabbage (about 6 cups) 1/2 carrot, coarsely shredded (about 1/4 to 1/3 cup) 1/2 to 2/3 cup Miracle Whip salad dressing Salt and pepper to taste In large bowl, combine garlic, onions, cabbage and carrot. Stir in about ÃÂ½ cup dressing, adding more as needed. Season with salt and pepper to taste. Refrigerate for a few hours before serving. Calypso Slaw 1 cup vegetable oil 1/4 cup sesame oil 1/4 cup pineapple juice 1 cup Teriyaki sauce 1/4 teaspoon ground ginger 1/2 teaspoon garlic powder 1 or more packages broccoli slaw (usually a mixture of broccoli, red cabbage, and carrots) or you can cut your own veggies For dressing: Combine all ingredients but the packed slaw and mix well.
