I have several.....some from other posters here and some from other sources....here we go!!

When I was a kid we went to a diner in NJ quite regularly, and they had a kind of health salad. Of course back then no one called anything health salad. In fact today you probably can't leave food sitting out on the table in a restaurant ... they used to have a bowl of this sitting on every table along with a bowl of pickles. Anyway a few years ago I ran across this recipe, and I'm convinced that it is the exact same - which it might be since the name of the salad is the same as the diner - and I'm talking 35+ years ago.
Claremont Salad
1/2 small head green cabbage sliced thinly
1 green pepper, quartered and thinly sliced
1 cucumber thinly sliced ( I like the english or seedless)
1 carrot thinly sliced
1 small onion finely chopped
1/4c + 2T sugar
1/2c white vinegar
3T water
1/4c oil
1 1/2t salt
1 minced garlic clove
Combine vegs in large bowl. Blend remaining ingredients together until well combined. marinate overnight stirring occasionally

Napa Cabbage Slaw
Fresh and crunchy, this salad will remind you of traditional coleslaw, but without the mayonnaise. Pale green napa cabbage and a touch of ginger give this slaw an Oriental flavor.
1-1/2 pounds carrots, finely shredded
4 cups finely slivered napa cabbage
1/3 cup white wine vinegar
2 tablespoons sugar
1 clove garlic, minced or pressed
1 teaspoon minced fresh ginger
Salt
In a salad bowl, gently mix carrots, cabbage, vinegar, sugar, garlic, and ginger. Season to taste with salt. If made ahead, cover and refrigerate for up to 4 hours.
Yield: Makes 6 servings.

My favorute....this week!
Cole Slaw, Fred Harvey's
Shred one medium head of cabbage and one medium onion (use the 1 mm slicing blade on the Cuisinart)
Add 1/2 c. sugar
Heat together 1 1/2 tsp salt
1 tsp dry mustard
1/2 cup peanut oil (I use canola)
1/2 c cider vinegar
1 tsp celery seed
Pour over cabbage, stir and let sit at least 4 hours I sometimes add black pepper and green pepper.
You can triple the recipe and only need to double the dressing.

Napa Coleslaw
NOODLE MIX
3 packages original flavor Ramen noodles -- crushed
4 tbls black sesame seeds
8 oz sliced almonds
stick melted butter
THE DRESSING
1 c. peanut oil
2 tsp. soy sauce
1 c. caster sugar
1/2 c. rice vinegar
1/2 tsp. salt
2 flavor packets from the noodles
THE ASSEMBLY
1 large head of napa cabbage  shredded entire head for a party
1 bunch green onions  thinly sliced

The Dressing
FOR NOODLE MIX: Combine to coat with butter and heat in 300F oven for approximately 15-20 minutes, watching that the mixture does not get too brown. Cool. It keeps well in a zip-lock.
FOR THE DRESSING: Combine and blend well. I use the stick blender.
FOR THE ASSEMBLY: Make all components separately the day before. When ready to serve, combine cabbage, dressing, and noodle mix and toss.

And one more
the side or top the bbq with it.
Spicy Cabbage Slaw
INGREDIENTS (serves 4-6)
2 Tbsp butter
1/2 cup chopped onion
1 tsp caraway seed
1/3 cup water
1/4 cup white wine vinegar
3/4 tsp salt
1/4 tsp tabasco hot sauce
8 cups shredded cabbage (about 1/2 cabbage)

PROCEDURE
(1) Melt butter in a large skillet. Add onion and
caraway seed. Cook 5 minutes or until onion is
tender.
(2) Add water, vinegar, salt, and hot sauce, and mix
well. Then add the cabbage, and mix well again.
(3) Cover and let simmer about 15 minutes, or until
the cabbage is crisp-tender.

Th...th.....that's all folks!

These all sound good to me, but how do I cut down on the amount and not lose the flavor? Since there is only myself now, I don't want to be eating this stuff forever. Thanks for the recipes though. I used part of the cabbage for vegetable soup, and I ended up with way too much of that. I am freezing the rest of it. Barb

The napa salad slaw and the Fred harvey'sa re easily halved....and the slaw keeps easily for a week.
No mayo? Remember?

1 tablespoon sugar
1 tablespoon vinegar ( I prefer distilled )
2 teaspoons oil
salt & pepper ( I prefer white pepper ) to taste

I 'melt' the sugar in the microwave with half the vinegar then add everything else... For a variation add a tiny bit of celery seed.

Try this one. The recipe can easily be halved.

SILVER LAKE INN COLESLAW

½ Cup Sugar
½ Cup White Vinegar
½ Cup Water
1/4 Cup Salad Oil
½ Tablespoon Onion Salt
½ Tablespoon Garlic Salt
½ Teaspoon Black Pepper
5 Finely Chopped Green Onions, White and Green parts
1 Teaspoon Celery Seed
2 Bags Preshredded Slaw Mix
1 Green Pepper, finely minced

Mix and refrigerate for 24 hours. Serve Chilled.

Just a comment that a local restaurant uses chopped walnuts in their cole slaw. I don't much care for walnuts but they do have a good slaw.

I like cole slaw a lot & make some every few weeks; I made it for lunch today with this dressing:

Corky's Memphis-Style Coleslaw Dressing

1 tsp grated onion
1/2 c. mayonnaise
1/8 c. sugar
1 - 2 Tbsp Dijon-style mustard
2 -3 Tbsp cider vinegar
1 tsp celery seeds
1/4 tsp salt
dash of pepper

Mix until sugar dissolves.

These dressings are from the Better Homes & Garden Cookbook, 1968. They're my fail-safe recipes; I use them a lot. I also like that they make small amounts.

Coleslaw Oil & Vinegar Dressing
2 - 3 Tbsp sugar
3 Tbsp vinegar
2 Tbsp salad oil
1 tsp salt

Coleslaw Mayonnaise Dressing
1/3 c. mayonnaise or salad dressing
1 Tbsp vinegar
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. celery seed

I use this one because it has no oil:

Celery Seed Slaw

3 - servings

1 pounds medium head cabbage, coarsely shredded
1/4 cup finely shredded carrot
1/4 cup chopped green pepper
1/3 cup sugar
1/3 cup white vinegar
1 teaspoons salt
1/2 teaspoon celery seed

In a large bowl, combine the cabbage, carrot and green pepper;set aside. In a small saucepan, combine the sugar, vinegar, salt and celery seed; bring to a boil. Pour over cabbage mixture; toss to coat. Cover and refrigerate for 4 hours or overnight. Serve with a slotted spoon.

Oh, and I leave the green pepper out, I don't care for it in slaw. I really like this as a sandwich topping for pulled pork too, so it does double duty.
