Lars, Frozen mango..now what?

Okay I have 3 giant organic mangos in the freezer and I want to make Sol's mango sorbet.

They are whole. How do I peel and prep?

Thanks Marigene..That's a great link for fresh ones. LOL

But, I did figure it out on my own..
I let them sit on the counter for about 10 minutes, grabbed them with a paper towel and started peeling with a potato peeler. Sliced a bit off the bottom to set them upright and then pitted them.

The sorbet is in the freezer..I didn't bother putting it in the freezer bowl, since it was semi frozen in the FP from the Mangos being frozen.

I also think the infection is better than the kidney stones, providing the infection is cured before it does any damage. At this point, I don't even want to think about it, and I'm having a hard enough time trying to figure out how I will manage what I need to get done in Texas. On top of that, my boss wants me to take work with me to Texas, even though (as I discussed with the COO), I do not have any pressing or urgent projects that must be finished right away - I'm caught up for the present. I told her I would be taking my laptop, but it does not have AutoCAD on it, and so I cannot do any working drawings. I have not tried installing any other drawing programs, but I might do that eventually. Because the laptop has Windows 7, a lot of programs simply will not install, including my astrology program, and that was one of the main programs I wanted to use on it. For now, I'm just using it for music, pictures, internet, and movies, and so it is more for entertainment than work. Sony Entertainment gave Kevin a laptop so that he could work at home, and he will be taking his as well. I do not expect to feel up to working on furniture designs while I am in Texas, especially with the heat. Lars

I used to basically live on frozen pizza and burgers when I first moved into the house. So much going on and not much time to cook, it was easy to just throw one in the oven and pop open a beer. I've tried most all of them out there. I can't stand Digornios. It's like a piece of Texas toast with sauce on it. I want a pizza crust or something unique. I do like Freshetta though. That's much closer to a pizzeria crust and the flavor of the pizza is good. As long as I remember I've always liked Totinos for some reason. I really started to like them back when they put some sauce on them. Today it looks more like it's a dyed crust but I do like the crust on them. I doctor them up with cheese, bacon, sausage or whatever I have. Don't need to doctor up the Freshetta much except maybe some Romano. I haven't had a pizza of any type in a long time now. For a while I picked up the u-bakes from Aldi or someplace. 16" loaded with meat for less than $6, and occasionally under $5. Not a bad way to cover the craving. I can't remember the recipe I used to use for a quick dough when I'd make my own. I saw it on TV one time. It was a knockoff of Pizza Hut's pan pizza. I remember you used self-rising flour and club soda. Maybe that was all there was to it? I always added some Italian seasoning, garlic and maybe some onion to the dough with a little extra oil and it was pretty decent. Also made the "crazy crust" quite a bit for a while. Haven't done that for a long time either. I've tried the shelf crust like Boboli and I guess for desperation they'd work. I guess I'd prefer the Pillsbury to them if that's all that was available. After making one of the simple crusts, Boboli is not even given a second look by me anymore. The local store had their version available in a wheat crust but the bad memories left it sit on the shelf. I know people who buy the frozen bread dough to use for a pizza crust. I've never tried it.

If you are stir frying them with rice, you should defrost them in the microwave first, and then add them to the rice only at the last couple of minutes, or when you are finished stir-frying and just mix them in with the rice and cover. Have you tried dehydrating your vegetables? I have found that they retain more flavor and texture that way, but then I only use them in soups. I don't have a dehydrator - I just buy the dehydrated vegetables because they are easier to store, and then I always have them. I use wakame and mushroom the most. Unless you are at the beach, you would not be able to grow your own wakame, however. Lars

Of course, cookebook, I'd be happy to. I'm not as fond of cooked peas as I am of raw peas, so I make this more than I do cooked peas. I don't have a recipe, though, and I've been cleaning out the freezers. So I thawed a bag of peas (they used to be a pound, now I don't know, maybe 12 ounces?) Dumped in a couple of handfuls of roasted peanuts, minced half of a smallish sweet onion and sliced two stalks of celery very thinly. Crumbled up two slices of bacon left from the weekend's breakfast, and put all those things into a bowl. Mix sour cream or yogurt and mayonnaise, about a 50/50 ratio. I used about 1/4 cup of each and the mayo was homemade. The kids like it when I add a teaspoon of sugar, but I like it without. Stir it up and it's ready, but it's better if it sits in the fridge for an hour or two. It gets really watery after a day or two, so I don't make a huge batch, just enough for a meal or two. This is really nice when it's warm outside and a cool salad waiting in the fridge is a good thing, but it's still pretty good in the winter. Oddly enough, neither of my girls like cooked peas either, but they like this and if I grow peas in the garden they all get eaten raw far before I ever get a chance to cook any. It also made a nice combination with the well seasoned chicken, as a "cool" addition to the plate. Annie

Hey Terri -- Could you point me towards Sol's mango sorbet recipe? That sounds fantastic, and as I don't have an ice cream maker, am always looking for things that will work without one...

Hey Emily~

Here you go! I a made the simple syrup yesterday and refrigerated it. Added the other ingredients to it in the measuring cup, I chilled it in..peeled and chopped the frozen mango (still frozen) threw the chopped mango and poured over the other ingredients into my MINI processor and yummmm...

Sol's Mango Sorbet

Mango Sorbet

2 mangos, peeled and roughly cut into chunks
Â½ cup granulated sugar
1 cup water
2 tablespoons honey
1 tablespoon fresh lemon juice
pinch of salt

Make a simple syrup by combining 1 cup water with the Â½ cup of sugar in a pan. Bring to a boil, and cook until sugar completely dissolves. Cool slightly. Place all ingredients in a food processor and process until smooth. Chill mixture thoroughly. Then, freeze in ice cream maker, according to manufacturer's instructions.

I was in San Diego when you posted this - we just got back today.

Anyway, when I peel a frozen mango, I let it defrost a bit or run it under hot water for a few seconds. It's a lot less messy to peel when it is frozen, but you should peel it before cutting it off the seed or into pieces. Once you have the frozen pieces, all you have to do is put them in the blender with some sweetener (I use Equal), and you have instant sorbet.

Yes Lars, thank you, it was very easy to peel the whole thing and slice around the pit! I bet I loss a whole LOT LESS flesh that way too..
