I have tried to search to find the thread that you posted this on but I'll be darned if I can find it.:)

Just wanted to thank you for the heads up on freezing lemons whole. I can't believe how great they are that way. Here I was squeezing the juice and freezing like that when all I had to do was take the whole lemon, stick in a ziplock and freeze. When needed, I just take the lemon out and defrost and squeeze away and so easy to get ALL the juice.

Great tip and I thank you. Lemons are pricey here right now so when on sale, in the freezer they go.

Thanks for posting the info again.

So.....the juice squeezes out easier?? Is the zest still a viable option as well or does it get soggy/mushy?

Deanna IMO yes it does squeeze out easier. It defrosts in like an hour or less and it is soft but not mushy. The juice came out great.

As far as zest, I have not used it for that yet but I know many people that freeze lemon zest in ziplocks with no problem and judging by the lemons that I have frozen, I don't see a problem.

They are not mush when I take them out but soft.

I use lemon in so many recipes and with the cost of lemons these days, this works great for me. I am also doing it with limes.

Update: The Shaker Lemon Pie was to die for! I took it to a church potluck on Sunday and thought some of those "good-Christians" were going to battle for the last piece. It's VERY easy. Slice 2 lemons very, very thinly (I kind of let them get too soft and the mandoline didn't like that...grin). Add 2 cups of sugar and macerate overnight in the fridge. The next day, add 4 beaten eggs and mix well. Pour into pie crust, top with second crust and bake at 350 degrees for ~45 minutes or until knife comes out clean. Delicious. I made lemon curd from 2 more lemons. Served with angel food and fresh strawberries. No pics……..we gobbled it up! Maybe this weekend I’ll try a recipe from the cookbook. Of course I'll be taking party pictures, Annie..... Whether or not I post them is a whole 'nother question. :) Deanna

Here are some trees from the Olivas de Oro ranch. Kevin took this photo because I kept forgetting to take my camera with me. Olive trees need a lot of space, as they drain a lot of nutrients from the soil. There are a few oak trees still interspersed among the olive trees. Annie, there are a lot of places to go for olive oil tasting. I found out that there is a very good olive farm in Ojai, less than an hour from L.A. Ojai is a delightful town with nice restaurants, spas, and beautiful countryside. There are also olive farms in Temecula, where there are vineyards as well. I think Kevin and I will go there soon, as it is an easy day trip - we've been to Ojai several times, but will go back also. Ann, I do think that bread (especially your sourdough) is a very good way to appreciate the olive oil. I especially like the Arbequina Reserve for its fruity flavor, but I also like the Mission Reserve, which was one of my favorites. The Arbequina won a silver award, but I did not know that at the time I bought it. Annie, I look forward to your next visit to California! Lars

Congratulations on the granddaughter! That has to be exciting for you, and I can see how it will take up a lot of your time - but in a wonderful way. I was afraid that I had not sent you enough for all the garlic that you sent me, but the timing was a bit off. I'm getting more chilies now, but will be making them into sauce so that I have that for later. The leaves freeze nicely, and so those should be good for whenever you want to use them. You might want to dilute the Habanero sauce I gave you - think of it as a tincture of chili - a little goes a long way, which is why I put it in such a small bottle. You can dilute it with water or a flavorful vinegar, such as white Balsamic (which is what I use). I also mix it with mayonnaise for use on my sandwiches.

Raven, click on either the App Store or Play Store Icon (whichever is appropriate for your devices) that's on the bottom of the 7 Little Words website, and you can download the game, free. You'll get a pack of free games to start with, and 2 or 3 free games every day. And if you miss days of playing, they accumulate so you don't have to miss any of them. Great, I've got two lemons on my counter and no real use planned right now. I think I'll toss them in the freezer and give it a try.

Darn! Wish I'd seen this earlier. Noticed big bag of lemons were on sale today, but couldn't imagine how I'd have time to use them all before they went bad.

I didn't know that you could freeze lemons. Wow....I will remember that one too!!! I really enjoyed the fresh lemons that Ann ( Spacific )sent me in the last swap. They seem to last so much longer in the fridge, than the store bought ones. I guess thats because the were so fresh. Not picked months before. They had such a strong lemon favor, than those terrible store bought ones. Thanks for reposted this info Dixiedog....and Thank you too Lars !!! It's amazing the things we can learn here!!!
