Help - Homemade Pizzas

I've been making fresh pizzas for awhile and they're coming out pretty good but I'd like to make some and then freeze them. Do you cook your crust or the whole pizza a bit before you freeze them or do you just freeze the whole thing uncooked?

I don't freeze a dressed pizza. I will freeze a partially prebaked crust. When I want a pizza I just take the crust out of the freezer, add sauce and toppings and into a 550ÃÂ°F oven on to a preheated pizza stone.

I'll freeze a dressed pizza....but I par bake the crust first....however they are much better when you add fresh ingredients to a thawed crust.

My Biker Billy jalapenoes lacked typical jalapeno flavor and tasted like an Habanero, but I picked them when red. I often add toppings to frozen pizza. There are two brands that I recommend because they are cheap and of relatively high quality for the price: 1. Teresa Pizza 18 oz (Teresa Foods, Inc., Peotone, IL) - $2.50 at Ultra Foods in Forest Park, IL. Thin cracker-like crust, lots of meat, could use more cheese. 2. Home Run Inn 10" - $4.00 at Aldi - Most cheese I've seen on a pizza, too much crust around edges. 3. Mama Cozzi (Aldi brand) French Bread Pizza - $2.00 at Aldi - Not as good as Stouffer's but much cheaper. BTW, Mama Cozzi's thin crust pizza is the worst I've encountered.

Gorgeous bagels Shaun! I'll take a poppy please. We like the no-knead dough for pizza, the Cook's Illustrated recipe 3 Cups AP flour 1 2/3 cups water, room temp 1 1/4 tsp salt 1 1/2 tsp instant yeast (I used my bread machine yeast and it was fine) 1 1/4 tsp sugar (I used agave nectar) 5 Tbs EVOO Mix flour, water & Salt in mixer fitted with a dough hook for a few minutes on low, just to combine everything. Let dough rest 20 min. Sprinkle yeast and sugar over dough. Mix on low speed, just to incorporate all the ingredients, scrape the bottom. Increase mixer to high for about 5 - 10 minutes (I only needed 5) until dough is smooth and glossy and pulls away from sides. Coat a large bowl with olive oil, transfer dough to bowl, turn dough over in bowl so it's coated, cover with plastic wrap and let it rise at room temp for 2 - 2.5 hours. You'll see large bubbles and it will have tripled in size. Before rising, I put mine in the refrigerator wrapped, then pulled it out about 4 hours before I needed it to let it come to room temp and rise all the way. Put a pizza stone in oven and preheat to 450. Let the over rest at 450 for a while, so the stone gets good and hot. Rim a baking sheet with oil and turn dough out onto the sheet, stretching it with your fingertips. If it shrinks back a lot, let the dough rest for a few minutes and stretch it again. Let the dough rest in the pan until a little bubbly, maybe 10 minutes. Poke the surface with a fork all over, sprinkle with salt and bake until golden brown, 20 to 30 minutes. Pull it out and top it with whatever makes you happy and put it back in the oven for a few minutes. Often though, I'll make a batch of half whole wheat half bread flour pizza dough in the bread machine. It's so quick and easy, less than 5 minutes to load the machine and then I stick a couple bags in the refrigerator for whenever we're going to have pizza that week. That pizza looks yummy Ann. Artisanal Pizza Dough posted by Becky 3 cups bread or all purpose flour 1/2 teaspoon active dry yeast 3/4 teaspoon kosher salt 1 1/4 cups 2% low-fat milk 2 tablespoons olive oil -- plus more for bowl Whisk the flour, yeast and salt together in a large bowl, then pour in the milk and oil. Mix together with a large fork or your hands. Knead once or twice to form a ball. It may be sticky, but that's okay. Oil a bowl and set the dough in it. Lay a sheet of waxed paper loosely over the top, then cover with plastic wrap. Place a clean dish towel over the bowl and allow to rise at room temperature and undisturbed for 24 hours. Turn the dough once in the bowl about 3 hours before you want to use it. The 24 hour fermentation process takes the place of kneading the dough. When you are ready to make your pizza, divide the dough in half on a lightly floured board, then proceed with your pizza making. The dough can be frozen for up to a month; Thaw at room temperature before using. Weed's Missouri pizza thread: 1 16 oz. can whole tomatoes, diced fine 6 oz. can tomato paste 1 1/2 TB sugar 1 t. crushed dried basil 1/2 t. salt 1/4 t. dried thyme Mix together, let sit, do not cook. Makes enough sauce for 4 pizzas.

I do it all from scratch. YUM! Yes....jarred spaghetti sauce is fine to use. Crust: I use a bread machine. 3 cups regular flour 2 1/2 tsp baking yeast(sold @ health food stores, it's "not" quick rising) 1 1/4 cups water The machine mixes and kneeds the dough, lets it rise then kneads again. Ready in 1 1/2 hours. 16" pizza pan, grease with butter, sprinkle with corn meal(if you want to), flour your hands, spread dough onto pan. 8oz tom sauce 1 roma tomato diced 1/4 cup diced onion 1 clove garlic minced 1 red bell pepper diced Mushrooms or olives....or other toppings 1/2 tsp dry basil 6oz sliced pepparoni OR 1 lb sausage(cooked) 12oz motzarella cheese, grated put on pizza in the order listed....bake @ 450 for 25 minutes,If you have a convection oven put a cookie sheet on the rack above the pizza, remove the pan after 25 minutes, bake another 5 minutes to toast the cheese a little.

Thanks so much for your help. Our house is the teenage hangout house so we go through A LOT of food over the weekends.

I don't think I would like reheated frozen pizza much, but a pack of hungry teenagers tends to be a lot more easy to please! You might consider precooking some of the vegetables that have a lot of water in them. If you freeze fresh bell peppers, onions and mushrooms their cell walls are destroyed and they come out a soggy mess when you defrost. If you don't want to cook them, you might consider partially dehydrating the vegetables before freezing.

I have found if you plan to freeze the pizza, just don't put cheese on top until you bake it again.

Reheating previously melt frozen Mozzarella cheese is never the same.

tjmb - do you make your crust from scratch? I'm looking for the best pizza dough recipe (or is this a hijack that should be it's own thread?) Thanks

I haven't tried making my own crust yet; I've been buying the pizza dough from Trader Joe's for $1.00. I make two kinda squarish pizzas from the dough and the kids have all liked them. I haven't quite mastered a round shape!

I'm going to try Peter Reinhart's pizza dough recipe or there's tons of discussions about dough recipes at Serious Eats Pizza website: http://slice.seriouseats.com/recipes/ . They're pretty fanatical about their pizza.

Tjmb, I buy pizza dough too (because it's easy) but try the Whole Foods dough. I buy TJ's too 'cause it's cheap, but the WF's dough is fabulous. I have several lumps in the freezer.

I ask for the frozen dough at WF at the pizza counter.

Thanks to Annie and the person who replied to me personally. I guess I didn't use the right search words with my initial attempt, as nothing had come up. Glad I didn't try to start another thread about it!

All this talk about Pizza jared my memory.

I had a prebaked Sicilian Pizza Dough in the freezer and my grandson was on his way here from NY,

with his girlfriend.

So we had pizza for supper.
This one had a combo of Cheeses, Mozzarella,Provolone,Parmesan,Romano, Fontina, and Asiago.
Used a a Meat Sauce.
