Help - Homemade Pizzas

I've been making fresh pizzas for awhile and they're coming out pretty good but I'd like to make some and then freeze them. Do you cook your crust or the whole pizza a bit before you freeze them or do you just freeze the whole thing uncooked?

Thanks for any help.

I don't freeze a dressed pizza. I will freeze a partially prebaked crust. When I want a pizza I just take the crust out of the freezer, add sauce and toppings and into a 550ÃÂ°F oven on to a preheated pizza stone.

I'll freeze a dressed pizza....but I par bake the crust first....however they are much better when you add fresh ingredients to a thawed crust.

Gorgeous bagels Shaun! I'll take a poppy please. We like the no-knead dough for pizza, the Cook's Illustrated recipe 3 Cups AP flour 1 2/3 cups water, room temp 1 1/4 tsp salt 1 1/2 tsp instant yeast (I used my bread machine yeast and it was fine) 1 1/4 tsp sugar (I used agave nectar) 5 Tbs EVOO Mix flour, water & Salt in mixer fitted with a dough hook for a few minutes on low, just to combine everything. Let dough rest 20 min. Sprinkle yeast and sugar over dough. Mix on low speed, just to incorporate all the ingredients, scrape the bottom. Increase mixer to high for about 5 - 10 minutes (I only needed 5) until dough is smooth and glossy and pulls away from sides. Coat a large bowl with olive oil, transfer dough to bowl, turn dough over in bowl so it's coated, cover with plastic wrap and let it rise at room temp for 2 - 2.5 hours. You'll see large bubbles and it will have tripled in size. Before rising, I put mine in the refrigerator wrapped, then pulled it out about 4 hours before I needed it to let it come to room temp and rise all the way. Put a pizza stone in oven and preheat to 450. Let the over rest at 450 for a while, so the stone gets good and hot. Rim a baking sheet with oil and turn dough out onto the sheet, stretching it with your fingertips. If it shrinks back a lot, let the dough rest for a few minutes and stretch it again. Let the dough rest in the pan until a little bubbly, maybe 10 minutes. Poke the surface with a fork all over, sprinkle with salt and bake until golden brown, 20 to 30 minutes. Pull it out and top it with whatever makes you happy and put it back in the oven for a few minutes. Often though, I'll make a batch of half whole wheat half bread flour pizza dough in the bread machine. It's so quick and easy, less than 5 minutes to load the machine and then I stick a couple bags in the refrigerator for whenever we're going to have pizza that week. That pizza looks yummy Ann. Cookie8: Here is a Pizza Dough recipe and baking tut for prebaked dough. If you want I'll put in a tutorial for a Calzopizza , " Stuffed Crust Pizza " A 12 inch round pizza will take from 8 to 12 ounces of dough. According to thickness you want. After the dough is made weigh it out and roll into balls. Oil the pans and place a dough ball in the pan and flatten slightly, working the dough towards the side of the pan, with the palms. Then let it rest a few minutes. Repeat this every so often until the dough reaches the side and up, enough for a crust about 1/2 ? inch. Let it raise slightly , pinch the dough all over, with a fork and put into the oven to bake at 400 deg. If it bubbles while baking pinch it with a fork again. When light tan specks show ,take them out onto a rack to cool fast. Then you can use them right away or freeze , to use later. When cooking the Pizza, place the Pre Baked dough back in the oiled pan , Or cook on your Stone. Put a latel of sauce on the dough and swish it around, sprinkle some Parmesan or Romano , put it in the oven for a few minutes. Take it out and spread the topping of your choice and the Cheese Topping. A good topping cheese is a mixture of Mozzarella and Provolone chopped and mixed. The provolone gives it a good flavor and doesn't get like rubber when it cools. I use all Provolone. A little trick for baking. Keep a cup of water and brush handy, to baste parts that are cooking too fast. If you can get new metal pans, (uncoated) they have to be cured in the oven, so they won't stick. Coat them with oil and bake them for at least 6 hours. Never clean them with soap and water. Just rinse with water & wipe with a paper towel. Dough recipe: 1 cup of warm water (not hot) 1 Package of Active Dry Yeast 1 tablesps sugar ,in a half cup of warm water 1/4 Cup of Veg. Oil 1 teasp. Salt About 3 1/2 cups Flour Â½ cup of Whole wheat flour or up to 1 cup Place in a mixing bowl, the Water, 1 cup of flour, wheat flour , yeast if risen Add the oil and salt and more flour. Add enough flour to make a soft ball of dough, that doesn't stick to your hands. Knead until smooth. Put it back in the bowl , Smooth side up and Rub on some Veg. Oil Cover and set in a warm place to rise until it doubles in bulk. I put it in a warm oven, Covered with a damp towel and place a pan of hot water on the bottom shelf. It rises in about 1 hour. When doubled, punch it down and knead it well. Divide into Balls , about 11 to 12 ounces and place in oiled pans. 12" round Dough should be about 3/16 " thick on the bottom and about 1/2 in. around the edge. For Sicilian Pizza , I used most of the dough in a 11" X 16" pan ( a bit thicker ) Follow the previous instructions. Good luck, Lou

blueiris24: Here is another recipe that doesn't have tomatoe chunks. I used it in my Pizzeria. Pizza Sauce and Spaghetti Sauce ( Gravy ) You can use canned tomatoes but make sure they are Italian or a deep red color. Some choices are Contadina , Red Pack , HuntÂs , All Red, = Tutto Rosso, Chento Pizza Sauce 1 Large can of Tomato Puree and Crushed Tomatoes I use Powdered Spices now, and get the same results ADD: 1 level teaspoon Garlic pwd. (add more later to taste) 1 tablespn. of onion powder. 1 teasp. Salt. 3 teasp. Sugar ( add more if it tastes too acidy ). An Italian pinch of pwd.cloves. 3/4 teasp. Oregano ( or to taste ) it is strong. 1 teaspoon of Parsley, 1/2 teasp. basil. 1/4 teasp. black pepper. Â½ teaspoon + of ( Chicken flavored Soup Base ) Large handful of Parmasan Cheese, when done , after 1/2 hour. Continue for Spaghetti Sauce This recipe can be used for Spagetti Sauce ( maybe you would want to cut down on the Oregano ) also just add a can of Tomatoe Paste and water to thin a little , if it is too thick it will burn easily. It will thicken as it cooks. Â½ cup of fine chopped Onion. And 3 bay leaves . Don't forget the Chicken flavored Soup Base. Add uncooked Meatballs, Sausage and Chicken Thighs, when you start cooking. (cook at least 1 Â½ to 2 hours ) Take the chicken out when it is done. ( About 1 hour ) Add the Parmasan Cheese after the sauce is cooked & stir ALSO !!! season to your own taste. Yes, thanks Ann. Lean is without eggs or dairy. This is just flour, water, salt, and yeast. I was thinking that, too. I'm not sure of the smell difference of sour and bad, but if it's alcohol-ly, well, still, can I call it a sourdough starter? Only half joking but it may be less than 2 weeks. Thanks for your advice, Ann. I can and will mix up some fresh dough, if necessary. Or add fresh flour and water, and a bit of salt, no extra yeast. I just printed out your pizza recipe and am anxious to try it. Thanks for all your contributions. And the flour container and other toys are already on the counter. Oh, I just had an idea. What if I marked the calendar on the date that I mix up some dough. I need to do that!

Thanks so much for your help. Our house is the teenage hangout house so we go through A LOT of food over the weekends.

I don't think I would like reheated frozen pizza much, but a pack of hungry teenagers tends to be a lot more easy to please! You might consider precooking some of the vegetables that have a lot of water in them. If you freeze fresh bell peppers, onions and mushrooms their cell walls are destroyed and they come out a soggy mess when you defrost. If you don't want to cook them, you might consider partially dehydrating the vegetables before freezing.

I have found if you plan to freeze the pizza, just don't put cheese on top until you bake it again.

Reheating previously melt frozen Mozzarella cheese is never the same.

tjmb - do you make your crust from scratch? I'm looking for the best pizza dough recipe (or is this a hijack that should be it's own thread?) Thanks

I haven't tried making my own crust yet; I've been buying the pizza dough from Trader Joe's for $1.00. I make two kinda squarish pizzas from the dough and the kids have all liked them. I haven't quite mastered a round shape!

I'm going to try Peter Reinhart's pizza dough recipe or there's tons of discussions about dough recipes at Serious Eats Pizza website: http://slice.seriouseats.com/recipes/ . They're pretty fanatical about their pizza.

Tjmb, I buy pizza dough too (because it's easy) but try the Whole Foods dough. I buy TJ's too 'cause it's cheap, but the WF's dough is fabulous. I have several lumps in the freezer.

I ask for the frozen dough at WF at the pizza counter.

Thanks to Annie and the person who replied to me personally. I guess I didn't use the right search words with my initial attempt, as nothing had come up. Glad I didn't try to start another thread about it!

All this talk about Pizza jared my memory.

I had a prebaked Sicilian Pizza Dough in the freezer and my grandson was on his way here from NY,

with his girlfriend.

So we had pizza for supper.
This one had a combo of Cheeses, Mozzarella,Provolone,Parmesan,Romano, Fontina, and Asiago.
Used a a Meat Sauce.
