Keep it simple, stupid--that's what I wish I had remembered. I made plenty of bread around 40 years ago, and I had really good luck making simple white sandwich type bread. I used all purpose flour and my bread was good enough for company or to give as gifts. So WHY did I buy bread flour last week when I decided to bake bread again? I am not having much luck finding bread flour recipes for simple toasting and sandwich bread. I did find a formula for adding water to an all purpose recipe if I chose to substitute bread flour. Still, I would prefer to have a tested recipe for bread made with bread flour. If I don't find one soon I will throw in the towel and use all purpose in stead. If anyone has a bread flour recipe for hand made bread I would appreciate it. Thanks.
