Fantastic melon recipe from my grocery store...

I found this recipe on the back of their weekly sales circular and made it for a party I attended on the 5th.

I had to make some changes to it based on expediency and the fact that the one guy didn't like one of the ingredients. I also added an ingredient...

The basic recipe is:

 2 avocados, pitted and peeled and cut into 1/2-inch chunks

 2 limes, juiced

 1/2 red onion, peeled and thinly sliced

 1-2 lbs watermelon, seeded and cut into 1-inch chunks

 1 Tbsp extra-virgin olive oil

 1/2 bunch cilantro

 Kosher salt and pepper to taste

 Add all the above ingredients

You chunk the avocado and toss it in the lime juice to keep it from browning.

Then you add everything else and toss.

It's very simple, and it is EXCELLENT. My friends raved over it.

The changes I made were to substitute Vidalia onion in place of red onion. I forgot to pick up a red onion and I wasn't going back to the store.

Replaced the cilantro with mint. My friend Jim HATES cilantro with a passion. What a cretin.

I ADDED about 4 ounces of proscuitto ham cut into small strips. I tried the salad before and after, and the proscuitto really took the flavor to the next level.

All in all, a very successful and very easy salad to make and VERY refreshing on a hot summer day.
