Can I add more cucumbers to a jar as they ripen?

I only have one cucumber plant -- one very, VERY big cucumber plant -- with lots and lots of flowers on it and a few cukes so far. Two have gotten plenty big, and there are a few little ones.

I'd like to make pickles, but I don't think I'll have enough big ones at any one time for more than one jar, if that.

I'm not planning on sealing them in a water bath, just using sterilized jars and keeping them refrigerated.

Can I open the jars and add more cucumbers as they ripen? Someone on the Harvest forum told me no, at least not after a day or two, as the pH level will have dropped as the cucumbers give up their water -- or else I could dump the liquid and start over each time I add.

My mom said, "Probably not, but no one's going to arrest you."

I don't want to poison anyone, though.

Or -- should I pick all different sizes and just plunk them in together? Or aren't the little ones ripe?
