Chicken Marbella (Silver Palate)

Even though I'm not a fan of fruit in my meat dishes this meal got raves on another forum I lurk at. I think I'll try it sometime soon.

2 lb chicken thighs, boneless and skinless, cut into 4

1/2 head garlic, finely pureed

1 1/2 tbsp dried oregano, crumbled

salt and pepper

1/3 cup red wine vinegar

1/3 cup olive oil

12 pitted prunes cut in half

6 dried apricots, cut in half (optional)

1/2 cup pitted Spanish green olives

1/4 cup capers with a bit of juice

3 bay leaves

1/4 cup brown sugar

3/4 cup white wine

1/2 tsp chili powder

1/3 cup parsley, chopped

In a large bowl combine chicken, garlic, oregano, salt and pepper, red wine vinegar, olive oil, prunes, olives, capers, bay leaves, brown sugar, chili powder and white wine. Cover and marinate overnight.

Preheat oven to 350. Arrange chicken in a single layer in a large shallow baking pan. Spoon marinade over evenly. Bake 1 hour, basting frequently. Chicken is done when juices run clear yellow and not pink.

With a slotted spoon, transfer chicken, prunes, olives and capers to a serving platter. Moisten with a few spoonfuls of pan juices and sprinkle generously with chopped parsley.
