Need Corn Cake HELP!

I'm hoping you can help me. I've been testing Corn Cake recipes for a special dinner. The basics are 1.5 cups of raw corn pureed with a tbs. of buttermilk, and one egg; 3 ears of roasted corn, 1.5 oz. of corn flour and 1.5 oz. AP flour, tsp. baking powder, garlic, green onions, a dash of hot sauce, salt and pepper.

I wanted to showcase the beautiful fresh corn of the season and layers of corn flavor. The first batch was just plain bland and heavy. Plenty of fresh corn flavor but no depth. The second batch I added a adobo, and substituted egg whites whipped stiff to add some lightness.

This second batch had a better texture and were lighter but adobo didn't pair well. for the third batch, I though I'd try a riff on Mexican Street Corn so I added a touch of crystalized lime, mayo, chili powder and a little bit of cheese and one more whipped egg white. I also browned the corn flour to give it a more complex and less raw flavor.

These didn't cook well; they stayed raw in the middle and they tasted fishy! I did make the puree last night, could that be it?

These will be served with Seared Sea Scallops with Citrus glaze and an heirloom tomato salsa.

Anyone have any suggestions or a TT amazing corn cake recipe?

Fishy? haha, ew.
Seems you want a fresh background of corn and let the main dish compliment.
They are usually so darn heavy. I do think most recipes are difficult because of the differences in flours we have on hand and the corn really should 'shine' in a fresh cake. (jealous that you have fresh corn already!? Ours is only knee-high right now).
We have adapted Ruth Reichl's fabulous pancake recipe for our corn cakes. You need to adjust for sizes of your eggs and how heavy your flours are and how juicy your corn is...we try a first test batch, eat, yum, and adjust for more or less milk....
I would keep it very simple and look for lightness. I've even near doubled the corn in this recipe...and have side dished a simple corn and cherry tomato salsa. (light vinaigrette, fresh basil)

Ingredients:
3-4 ears white fresh corn, (or tri-color) aprox 4 cups
(blanched 30 seconds in simmering water)
2 scallions and/or chives
1 cup white whole wheat flour
1 cup cornmeal, fine ground white
1 tablespoon sugar/honey/maple syrup-your choice
(if corn is super-sweet, extra sugar is not needed)
2 teaspoons baking powder
1 teaspoon salt
2 large eggs, separated
1/4 cup vegetable oil, plus more for skillet if desired
1 cup milk, i use skim but buttermilk is also good
2 tblsp non-fat plain greek yogurt. (if on hand, not necessary but i love the tart tang)

Directions:

Snap ears of corn in half, slice off the kernels, slide back of knife over ears to gather the milk. In its own bowl add finely chop scallions/chive and yogurt.

Whisk together flour, cornmeal, sugar, baking powder and salt. Set aside. In a separate bowl, whisk together yolks, oil and milk. Add to flour mixture and stir until just combined. Let batter rest for 5 minutes, batter will thicken. (If batter is too thick to fall from spoon, add another tablespoon or 2 of milk.)-if using honey/maple syrup add with wet ingredients.

Beat egg whites until stiff peaks form. Fold into batter until well combined.
Gently fold in corn, corn milk, green onion/chive mixture.

Cloud swift, I'm short too, under 5 feet by a bit and I don't like the idea of pouring the sugar water either and it is sticky. Not sure about changing the chocolates or the sugar, but hubby was just looking over my shoulder, read what you said and his comment was "don't you dare change a thing in this recipe." Wonder though, if he would notice any changes as long as it was rich enough and tasted chocolate enough. I'll let someone else here on the board attempt the changes. I had enough trouble figuring out the recipe. As for the 9x13 inch roasting pan and the 9 inch cake pan didn't like each other very much. Roasting pan had the last laugh, as the cake pan wouldn't fit in it. So took out my oval deeper roasting pan that is very sturdy but light weight and that worked fine. Only thing is that it is 4 inches deep. So if baking time is affected by how deep the roasting pan is, that explains that the cake was still not done in 25 minutes, just like the first time I made the cake. It took about 45-50 minutes, but that was fine and it was easy to take in and out of the oven. I posted the recipe on the what's for dessert thread and on the recipe exchange forum as well. Loves, here are some pics. 8 oz chopped unsweetened chocolate 4oz chopped semisweet chocloate 1 cup margarine and 5 eggs 9 inch round cake pan with parchment paper ready to use oval roasting pan ready for the cake to go in sugar water waiting to boil "cake batter" ready to pour into pan cake pan in roasting pan ready for the oven cake done and cooling on rack cake done and on plate piece of cake before hubby attacked it. I agree with Christine. A quarter sheet cake pan will hold 12 to 14 cups of batter. So a recipe that yields 5 to 6 cups of batter, would still be good, but would be pretty flat baked in a 9"x13" sheet pan. Btw, you don't really need to invest in a Bundt pan. If you have an 8" round cake pan, you can create your own "Bundt" pan. Use either an aluminum drinking cup (like the retro aluminum tumblers) greased the same as the pan, and centered into the prepared pan. Or, you can buy a cake Heating Core to transform any pan into an Angel Food or Bundt pan. Another option, is to make your own Heating Core. Sounds a little pioneering, but it's actually commonly done by bakers, and here is how: Stack several layers (about 4-5 pieces) of heavy aluminum foil. Tightly wrap around a form, such as a smooth-sided drinking glass, remove and grease before placing it in the center of your baking pan. Hold it in place as you pour the batter into the pan. If you'd rather not bother with any of the above, just take an empty, clean soup can, grease and place it in the center of your cake pan, and bake. After 5-10 minutes, remove the can, by gently twisting it out of the baked cake. Sol

Wow, it sounds like you're having such a hard time! My advice here is that you should always go with the color you love. If you love green, and it's in a dark area of the house, go for a lighter shade. Before you paint anymore walls, get small sample jars from your local paint store and test the different colors/shades on the wall. Check out the page below on the different types of painting schemes...read the section on different types of color schemes, I think it will really help you find the righ color! Good luck! Need help with my Angel Food Cake
Q

Angel Food cake is the fine Lalique of the cake world. It has the highest percentage of sugar of most sponge-type cakes. However, the egg whites also play a major role in giving the cake its volume and structure. Btw, for those who may be wondering, Angel Food pans should never be greased - not the bottom, not the sides. The pan should always be grease-free for this type of cake. And (you probably already know this but for the occasional baker), it is important to note that as soon as A.F. cake comes out of the oven, you should immediately hang pan upside down, until cake is completely cool, to keep it from collapsing.
