jalapeño/plum sauce questions

So I made a batch of plum sauce a couple weeks ago. It contains a jalapeño pepper, from Mexico, I'm pretty sure. What should I do with these jars of sauce? Is the cooking of the sauce and hot water bath enough to kill any potential salmonella? What would you do?

Also I'm going to make another batch. Any substitution suggestions? Maybe I can find California jalapeños.
