T&T Sourdough pancake recipe?

Looking for a great recipe for pancakes to make with our new babies (yeastie critters in fridge). TIA! And Happy Fourth!

I use my homemade multi-grain (whole wheat flour, spelt, cornmeal, oatmeal and multi-grain cereal) version of Bisquick (aka baking mix), but this recipe will work with Bisquick or any baking mix product.

SOURDOUGH PANCAKES/WAFFLES

1/2 c. active sourdough starter
1/2 c. milk (OR kefir, buttermilk, sour cream of nut milk - your choice)
1 egg (or egg replacer)
1 T. fat (I use butter or coconut oil - melted)
1/2 c. baking mix
1/2 t. baking soda

In a small bowl mix the baking mix and soda together.

In a small bowl, or a 2-cup measuring cup, mix milk and fat and heat to take the chill off the ingredients (zap in the microwave for 30-seconds). Add the egg and mix well. Add the starter, mix again.

Add the wet ingredients to the dry ingredients and mix BY hand. Do not over-mix.

Drop onto a preheated griddle or bake in a waffle iron.

This makes approximately 6 small pancakes or 4 waffles.

If I don't have any baking mix can I just use flour? Is there any leavening in a baking mix?

I particularly love that this recipe is for a small batch.

Before I started back working full time, I was making a lot of sourdough, but I had a starter that my friend Maartje gave me. So far, I haven't had luck making my own starter. She made hers by accident. Maybe I'll try to get her to make me some more - her kitchen might have a special magic for it that mine lacks. I can buy fantastic sourdough from La Brea Bakery, which is sold at all the local markets, but it's a bit expensive. I like La Brea Bakery sourdough much better than the sourdough I used to get when I lived in San Francisco, although I like what I made myself even better. Thanks for the instructions! Lars

OK, I typed these. I have not tried these yet.. SOURDOUGH SCONES 2 cups AP flour 2 tsp. baking powder 1 tsp baking soda Â½ tsp salt Â¼ tsp turmeric 2 Tbsp granulated sugar 5 Tbsp butter or margarine, cold Â½ cup raisins 1 cup sourdough starter Preheat oven to 425 degrees; grease a cookie sheet. In a large bowl, combine the flour, baking powder, baking soda, salt, turmeric and sugar. Cut in the butter with a pastry blender. Add the fruit and pour in the sourdough starter. Mix quickly. Turn the dough onto a floured surface and knead lightly. Pat into an 8 inch circle and cut into 8 wedges. Transfer the scones to the cookie sheet and bake for 15 minutes. Cool on a wire rack. The scones may be glazed with egg white and sprinkled with sugar, if desired. Roll in sugar. Makes about 3 dozen STRAWBERRY SOURDOUGH BREAD 1 Â½ cups all-purpose flour 1 Â½ cups strawberries, sliced Â½ tsp. baking soda Â¾ cups granulated sugar 2 eggs 1 cup walnuts, chopped Â¾ cups sourdough starter . Heat oven to 350 degrees F. Butter and lightly flour an 8 Â½ x 4 Â½ inch loaf pan. In a large bowl lightly beat the eggs. Mix in the oil and sugar, and sourdough. Add the flour and baking soda. Stir until flour is just blended. Fold in the strawberries and walnuts. Do not over-blend or the bread may be tough. Pour the batter into pan and bake on center rack in oven for 1 hour and 20 minutes until an inserted pick comes out clean. Turn out onto wire rack to cool. Cut and serve.

These are the only pancakes I make. The recipe is from The World of Breads by Dolores Casella. Use a nonstick pan or griddle, brushed with a little butter. Half the recipe is enough for two people. Cornmeal pancakes Mix in one bowl in the order given: 2 c. sour cream or yogurt (I always use whole milk yogurt) 1/2 c. flour 1 tsp sugar 2 large eggs 1 tsp soda 1 c. coarsely ground cornmeal Mix all of the ingredients in a bowl with a whisk. If too thick, thin with a little milk or add another egg. Serve with butter and maple syrup.

1. I haven't tried just flour, and yes, there is leavening in the homemade baking mix.

2. How about making the baking mix? You can find lots of recipes on-line for baking mix. If you don't want a large batch, cut the recipe in half or fourths. Since I don't use shortening, I've made it successfully with butter - I just had to freeze it so it keeps longer.

I have one just use the basic ingredients. It's a large recipe but I always half it, even cut it in 1/3 since we have a small family.

Full recipe yields 10 - 12 servings:

3 C of full ripen sourdough starter (I used 166% hydration)- one cup of sourdough starter mixed with two cups of flour and two cups of water and let it sit out overnight

1 or 2 eggs

1 tsp salt

1 TBSP sugar

2 TBSP fat (any fat i.e. melted butter, oil)

1 tsp baking soda

I usually use only one egg but when I use 1/3 of the recipe I just use egg white from a carton.

With a fork, beat everything but baking soda together until well mixed. The reason I save the baking soda for last is that I love to see the interaction between the sourdough and baking soda. It's so exciting to watch the batch "grow" in front of your eyes.

Cook on pre-heated griddle until most bubbles burst then flip over to finish cooking. My 7-year-old loves my SD pancakes and he will eat it plain without any butter or jam.
