Do you have lettuce? If so you could make a version of Lettuce Cups. You can probably wing it using what you have on hand.

Asian Lettuce Cups

Use this as an outline.
Measurements are just approximate. I don't measure anything.

1 or 2 tablespoons peanut oil
1 pound of chicken breasts ground, or
lean ground pork
1 minced garlic clove
1 or 2 teaspoons minced ginger
1/2 cup chopped onion
chicken broth
salt
3 green onions chopped
Bean sprouts
fresh chopped cilantro
Lettuce Leaves

Heat oil and saute the onions, when soft add the ground chicken or pork. Do not brown. Add the garlic and the ginger. Add a little chicken broth to stop the meat from sticking. Simmer until meat is cooked. Season with salt. Remove from the heat and add the green onion.

Sauce
(season to suit own taste)

1/2 cup rice vinegar
1 or 2 tablespoons of garlic chili sauce or Thai sweet chili sauce.
minced ginger
minced garlic
sesame oil to taste

Additional ingredients.
Peanuts (Optional)
toasted sesame seeds
Chopped water chestnuts

To serve, spoon on to lettuce leaves and drizzle on a little of the sauce. Top with bean sprouts and cilantro

I like Ann's idea and will definitely make those the next time I have ground meat (which will be turkey, but is a good substitute for pork).

Here's my recipe for gyoza, which would not use that much of your pork, however.:

Gyoza

2 minced green onions
2 tsp minced ginger
2-3 cloves minced garlic
2 tbsp minced basil (optional)
1 tbsp black rice vinegar
1 tbsp soy sauce
1 tsp chili paste
1 tbsp corn starch
1 egg, lightly beaten
1/2 cup chopped spinach
2-3 finely chopped mushrooms
1/2 pound ground turkey (or pork)
one package dim sum wrappers (about 24-30)
grape seed oil, for sautéing

Dipping Sauce:

1/4 cup soy sauce
2 tbsp toasted sesame oil

If you want to use a mini food processor, you can put the onions, ginger, garlic, basil, vinegar, soy sauce, chili paste, and cornstarch in it a process until everything is sufficiently minced. Otherwise, do the mincing by hand, and then stir together with the rest of the ingredients, except the wrappers and grape seed oil.

Fill the wrappers with about a tablespoon of the mixture and moisten one edge so that you can make a seal when you fold it over. Be sure the press out all air before sealing. When all are filled, sauté for 2-3 minutes on each side at high heat in the grape seed oil in a large sauté pan that has a good cover. When browned on both sides, add a tablespoon or two of water, cover, and reduce heat to simmer. Allow to simmer for 10-15 minutes, or until done. Cooking time will depend on how big they are.

Wontons are my go to for ground pork. Or I mix it with ground beef for cabbage rolls but neither is too summer friendly.

This is another simple recipe. Serve with rice.

Bean Sprouts with Pork

3/4 pound of ground pork
1 white onion sliced
1 stalk celery sliced thin on an angle
2 garlic cloves, minced or grated
1 inch piece of ginger, grated
2 or 3 Thai red chili peppers, sliced
2 to 3 cups Bean Sprouts
Peanut oil
Scallions sliced on an angle
Salt
Pepper

Heat Wok over high heat. Add just a little peanut oil and add onions and celery. Cook for a few minutes stirring often. Remove from pan.
Add a little more peanut oil and saute ground pork until no longer pink. Season with salt and pepper. Add minced garlic and grated
ginger. (I use a microplane). Return the onions and celery to the wok. Add the sliced chili peppers. Stir to combine. Cook for a few
more minutes. Add the bean sprouts, cook just long enough to heat through. Add the chopped scallions and serve with rice.

Ann, your Bean Sprouts with Pork is going to be dinner. I don't have the sprouts so DH will go grab those at the grocery store in about an hour, or so. We're going to wait until around 8:00-8:30 pm for dinner. Won't need the whole package for this recipe so will brown off and freeze the extra so I don't have it hanging around. It'll come in handy.

Speaking of shrimps and ground pork. Here is an idea that is great for those who really like to have the dish very smooth and wet, kind of sauce like.

If you Google a classic recipe "Shrimps With Lobster Sauce"

It is a recipe which has no lobsters, just ground pork with shrimps. You can substitute shrimps with scallops or fish.

It's dish you can order in many Chinese restaurants.

I didn't post whe I saw the question, because both recipes I came up with were Asian. I thought, maybe she doesn't want Asian. My point? Almost all the recipes here are Asian? Weirdness! The only other one I can think of now that it's morning, is LindaC's meatball recipe.

That bean sprouts with pork looks delish will try this week sometime.

Probably too late, but I love stuffed cabbage, but hate making it, so I invented my own version of stuffed cabbage soup where I use all the same ingredients....rice, beef broth, cabbage, tomato sauce, bacon fried in onion, dill...and I usually brown up some diced pork, but there's no reason why you couldn't use pork meatballs instead....just a thought.

How about a pate? I love Cretons in hot weather. Chill and serve with a nice crusty bread, Dijon mustard and pickles.

Porkburgers with applesauce!
