Cross rib roast aka Chuck Roast?

A friend butchered recently and brought us some wrapped meat. One of which says Cross Rib Roast. Is this the same as Chuck Roast? To be used as say a pot roast? I want to cook it but I'm not exactly sure what to do with this cut of meat.

Kate, that isn't common terminology here, but I think you basically have a chuck roast or blade roast or arm roast, etc. That would be from the front shoulder and would make a great pot roast.

I agree with Annie, but haven't heard that term used in a lot of years.
It also will do for a medium rare oven roast.
But it's a great potroast!

I deserve no credit for this "recipe" as it was posted by dannos on the members mark discussion part 2. I just recently purchased a couple of roasts to try it though! I copied it directly from his posting. He also recommends a rib cooking method. If you are interested in that you can go to that string and search on chuck roast! Good luck- Lee Quick, delicious, cheap... $1.99/lb chuck roast. Get an injector kit and inject it with Cajun Creole Garic, liberally sprinkle it with Cajun seasoning (both avaialbe at Menards), put in on the rotisserie for about 2 hours - 160 degress in the thick part will yield slightly pink. Chuck roast isn't round, so the ends that are closer to the IR burner will be extra crispy and spicey. I get my chuck roasts at Sam's - there's two in a package and I cook 'em both at the same time. Try the cajun seasoning on pork chops on the grill - it's great, but go easy on the Cajun seasoning cuz chops are a lot thinner than chuck roasts.

Yes, very tender medium rare London broil that was. How do you cook a rump roast or bottom round roast?

I recently cooked a bottom round roast. In my case, I cut it into thick steaks, at least an inch thick, add salt (not as much as G. Ramsey), ground pepper, and garlic. Sous vide at 133 F for about 24 hours for medium rare - if for more medium try 140 F. Sear on a skillet or grill briefly, serve. For mine I made a horseradish gravy using the drippings from the bag. This was vey good - not as good as a regular steak, of course, but still tender. Note that my cut was extremely lean (read: potentially tough) since it was what ended up in my house through a local beef share from cattle that are fully pastured all their lives. Equipment needed: a sous vide immersion device (they are really coming down in price - I got mine for $60 something about a year and a half ago), a stock pot, foil to cover the top so water doesn't evaporate while this does its thing. I also bought reusable silicon bags with a tight zip locking feature so I'm not adding to the plastic stream (or making food taste like plastic). Those are pricy but you can use them again and again. (Click image to see a larger photo) You can also cook the whole thing that way, but since I didn't want to cook it all at once, the steaks helped make good portions. I might go a couple more hours if a whole roast, just to give the interior time to reach temperature before "counting".

When I want rare roast beef for sandwiches like the stuff in the deli, my choice is sirloin tip, but I've been known to use eye of round. I have a small slicer and if I get those very thin slices, it's all tender. I'm not a fan of pot roast because I like my beef rare. I used to make them for Mother, but now she says they are "too tough", even if they are falling apart and she especially dislikes the "strings" of chuck roast. The difference in rump and chuck is that I find chuck to be "stringy" more than rump roast. When I do make either, I put them in the crockpot with vegetables, cook them all day, then thicken the juices for gravy. I give the beef to the dog and eat the vegetables, LOL. Sometimes I make hot beef sandwiches, but Elery has decided that "carbs are evil", so he won't eat mashed potatoes or bread and he dislikes gravy. Mother also dislikes gravy, although she'll eat it if I call it "sauce". (grin) She'd starve before she'd eat mashed potatoes, so it's a big treat for me when I make those. She loves the vegetables in pot roast, though, and I can't figure out how to get the vegetables that way without the roast! Annie

It comes from the Chuck so I would cook it like a Pot Roast wit Veggies.

Oh goody. Thank you all very much. I just love pot roast. Furthermore it is around 4lbs so I'll have some leftover for a small kettle of soup.

I love this forum. Thanks again. Now I feel like less of a goof for not knowing what Cross Rib was also.

In this part (west coast)of Canada - a chuck is known as a cross rib. I had to ask my butcher, because chuck is always mentioned in US publications and I had never seen one, although I had been cooking and eating cross rib roasts for years!

Kate, that roast will be way too nice to make soup out of the leftovers!
Open face hot beef sandwiches will be good as would be roast beef hash.
Soup would be lovely, but you can make soup out of a lesser cut of beef.
