What to do with Boneless Chuck Roast on Grill

Hi All,

I got a great deal a few weeks ago for Black Angus Boleless Chuck Roast for 99 cents a LB, so I stucked up. After making several POT roast which were great I would like to try these on the grill(MM what a great grill). Anyone have any great tasting recipes and will also make this roast tender(wife hates tough meat). Got about 6 of these left need help real bad. Let me know

I love, love, love the beefy taste of skirt steak. It's a bit chewy, but it is soooo good. I'm a purist when it comes to meat, favoring the taste of the meat with some complimentary herbs so I don't use soy-based products to marinate, just olive oil, fresh minced garlic, herbs (dry or fresh) similar to this Romanian steak recipe, although I put it in a zip lock bag with a bit more oil. Here in the Northeast many of our 'diners' offer Romanian steak - and they do a great job. It's best cooked medium rare. The more its cooked, the tougher it will be. Not cheap here either! That raspberry chipotle sounds awesome, Trixie! I am adding it to my list of things to look for/try! Here ia just another idea that we enjoy. Garlic Roast Pork Tenderloin 2-1/2 to 3-1/3 lb pork tenderloin 4 cloves garlic, peeld and cut into slivers A few sprigs rosemary Kosher salt to taste Fresh ground black pepper to taste 1/2 c white wine for deglazing Preheat oven to 500F. With the point of a sharp paring knife, make 1/2 inch slits toward the center all around the roast. Insert garlic slivers into the slits along with a sprig of rosemary. Rub roast with salt & pepper. Place in roasting pan and roast for 45-50 minutes or until internal temp reaches 140F. Removee roast to a plate, let rest while preparing the sauce. Place roasting pan on top of stove over high heat. Add wine and let come to a boil. Scrape pan with woodwen spoon to remove browned bits from bottom. Cook until reduced by half. Serve in a sauceboat along side roast. Linda

This was really, really good! I was happy with the recipe, but the meat itself was fantastic. I have never felt completely successful with pot roasts. I always seem to have dry meat under the gravy. This roast, which I wound up cooking almost three hours at 225Â° and then letting it rest for another 20 minutes while I strained all the juices out, let the fat rise to the top, removed the fat and returned the juices to the pot with all the chopped onion, was delicious. I cooked it to an internal temp of 175Â° worrying that it would be overdone, but it was perfect. I found a reference on the web suggesting an internal temp of 165Â° but it was not tender enough and the juices were too bloody for a pot roast. I blitzed the juices and the onion into a smooth sauce and added just a little, about a teaspoon, of cornstarch stirred into a couple of ounces of red wine to thicken it. The meat sliced smoothly and perfectly and was meltingly moist and tender. It was certainly the best pot roast I have ever made and I thought this is what you would get if you ordered a fancy braised beef in a good restaurant. Everyone enjoyed it and the simple sides of baked sweet potato and steamed green beans were perfect. I'm looking forward to cooking my other piece in a more savory manner, undoubtedly with mushrooms and red wine. I will be looking for more PRIME cross cut chuck. My husband cooks chicken thighs on the BBQ - bone and skin on and they're always juicy and good. I think it's just because he doesn't over-cook them. It's also a skin-down for most of the cooking. When I do them in a sauté pan, à la Jacques Pépin then they're good too. I do his little cut either side of the bone so they lie flat in the pan. I really think over-cooking is the worst culprit for the chicken. I know that in England a lot of the chickens are "enhanced" but happily we do't get that here.

I deserve no credit for this "recipe" as it was posted by dannos on the members mark discussion part 2. I just recently purchased a couple of roasts to try it though! I copied it directly from his posting. He also recommends a rib cooking method. If you are interested in that you can go to that string and search on chuck roast!

Quick, delicious, cheap...
$1.99/lb chuck roast. Get an injector kit and inject it with Cajun Creole Garic, liberally sprinkle it with Cajun seasoning (both avaialbe at Menards), put in on the rotisserie for about 2 hours - 160 degress in the thick part will yield slightly pink. Chuck roast isn't round, so the ends that are closer to the IR burner will be extra crispy and spicey. I get my chuck roasts at Sam's - there's two in a package and I cook 'em both at the same time. Try the cajun seasoning on pork chops on the grill - it's great, but go easy on the Cajun seasoning cuz chops are a lot thinner than chuck roasts.

Whatever you do, cook it a low heat, slowly. That will help break down the gristle, which chuck has a lot of. Personally I like the taste of good quality chuck - it has more taste than many more expensive cuts. But it can be a bit chewy. And sometimes the cheaper grades can taste kind of lousy.

Found this recipe for you. I think the secret to grilling a chuck Roast will be in a longer marinating to make the roast tender.
