So I bought the chuck roast........

that several told me would make the best stewing beef and low and behold the butcher had skirt steak. That's the first I'd seen it here.

SO now I have this skirt steak....now what?

PS : It better be good 'cause it wasn't cheap!

You don't want to make stew of skirt steak do you?
Marinate it and grill it...
Marinate in soy sauce, brown sugar and garlic....for at least 24 hours....1/2 cup soy sauce to about 3 T brown sugar with a couple of cloves of garlic crushed.
then grill.....and put into a big fat hard roll and enjoy!

I agree lindac, but I'd add a good glug of dry red wine, about a cup, to that marinade, cuts some of the saltiness of the Soy Sauce. Also, be sure to slice across the grain or it'll be tougher than shoe leather!

You can treat it like a pot roast, braise on the stove or in the oven. It will take longer than a chuck roast due to thickness. I always slice thin. What about doing it this way.... Stracotto di Manzo 1 ounce dried porcini mushrooms 2 cups beef stock Salt and pepper 1 (4-pound) beef eye of round 2 tablespoons olive oil 2 tablespoons pancetta, chopped 1 finely chopped onion 1 finely chopped carrot 1 finely chopped celery stalk 3 cloves garlic, minced 2 bay leaves 1 tablespoon chopped fresh rosemary 1/4 cup tightly packed parsley leaves, chopped 3 tablespoons tomato paste 5 cups red wine 1 (28-ounce) can whole tomatoes, drained and crushed Soak the porcini mushrooms in 1 cup of hot stock until softened, about 30 minutes. Strain the liquid through a coffee filter or a sieve lined with a double layer of cheesecloth. Trim any hard bits from the mushrooms. Set aside the mushrooms and liquid separately. Season the beef with salt and pepper. In a large casserole, heat 2 tablespoons of the olive oil over medium high heat until hot but not smoking. Brown the beef on all sides, about 15 minutes total. Transfer the beef to a plate. Pour off browning fat. Add pancetta, onions, carrots, and celery, stirring, until they are golden. Add garlic and cook 1 minute more. Season lightly with salt and pepper. Stir in bay leaves, rosemary, parsley, and tomato paste. Add the wine and simmer until it is reduced by half, about 20 minutes. Add the beef, tomatoes, porcini mushrooms, mushroom liquid, and enough beef stock to come 2/3 up the side of the beef. Bring to a simmer, cover, and cook at a gentle simmer for 2 1/2 to 3 hours, until the meat is tender. Turn the roast every 30 minutes or so. Transfer the meat to a cutting board and cover with aluminum foil to keep warm. Skim off any fat from the surface of the liquid. Strain the liquid, pressing on the solids with a spoon to extract as much liquid as possible. Discard the solids and return the strained sauce to the pot. Bring to a boil and let cook uncovered for a few minutes to further reduce and thicken the liquid. Season with salt and pepper, to taste. Slice the roast and serve with the sauce and soft polenta. Set aside. Saute bacon until barely crisp in Dutch oven or large covered skillet; remove bacon. Add meat to pan and brown evenly. Combine remaining ingredients and add to beef. Seeing your post made me rummage in the freezer for some small hunk of beef.....I think it's sirloin...but it might be filet :-) anyhow it is now simmering in some red wine with lots of onions and some red bell peppers... No mushrooms, and I am too lazy to go buy any. The rest of this martini, a small salad a hard roll and I have dinner....and maybe some of the pot roast craving satisfied!

Here's a recipe from Joy of Cooking that I use often. Simple and delicious. 1 duckling, 4 ½ to 5 ½ lbs, thawed Salt Preheat the oven to 250˚ and place an oven rack in the center of the oven. Remove the duck from its plastic wrapper and rinse under cold water, then pat dry with paper towels. Rub a little salt in the cavity, and sprinkle a little on the skin. Remove any excessive fat from around the opening and the neck. With a sharp paring knife or a skewer, make 20 or 30 small incisions in the skin into the fat. Hold the knife parallel to the skin so you penetrate the skin into the fatty layer, but you don’t want to penetrate the flesh. If you have a v-rack for a roasting pan, place the rack in the pan and place the duck, breast side down, on the rack. (But if you don’t have a v-rack, don’t worry. Just place the duck breast side down in the pan.) Place the pan in the oven and roast for 3 hours. Yes, three hours. Every hour check the duck and prick the skin a little more to let more fat escape. After three hours, drain the fat out of the pan (don’t discard it—it’s great to cook with) and turn the oven up to 350˚, and turn the duck breast side up. Roast for another 45 minutes. Remove to a platter and let the duck sit for 10 minutes before carving. You can make a gravy out of the juices and bits in the pan if you want. If you don’t have a v-rack, you can cook the duck without one but the skin won’t be as crispy. It’ll still taste great, though. Serve with whatever wine you like; the meat is hearty enough to stand up to a full bodied red like a Pinot Noir or Cabernet, but if you prefer a lighter red like a Zinfandel or a good white, go for it.

I have made at least one "cow's" weight in brisket with this recipe. Adapted from one my mother got in the 60s. First of all, cook it the day before you want to serve it. Take brisket and put it in the middle of enough foil to cover the brisket, sprinkle on liquid smoke, then celery salt, garlic salt and onion salt, turn over and repeat. Make sure fat side is up, then wrap in foil. Put it in a 300 oven and bake 5 to 7 hours. Take it out, while still warm, trim off the big hunks of fat. Wrap back in foil and put in the refrigerator. Save the juice from the pan and refrigerate that also. The next day, slice the meat (it will slice easily while it is cold), put back in the juices, cover the pan with foil and bake at anywhere from 300 to 350 until it is warmed through. I always serve my BBQ sauce on the side.

I love, love, love the beefy taste of skirt steak. It's a bit chewy, but it is soooo good.

I'm a purist when it comes to meat, favoring the taste of the meat with some complimentary herbs so I don't use soy-based products to marinate, just olive oil, fresh minced garlic, herbs (dry or fresh) similar to this Romanian steak recipe, although I put it in a zip lock bag with a bit more oil.

Here in the Northeast many of our 'diners' offer Romanian steak - and they do a great job.

It's best cooked medium rare. The more its cooked, the tougher it will be.

Not cheap here either!

No linda, the chuck is for the stew, the skirt steak was a whim....

So basically it's no different than flank? Seems to me I saw recipes specifically for skirt steak here. So just use it like I would flank?

Maybe I was thinking tri tip...another cut I've never seen here.

Skirt steak is great for fajitas. Here's the marinade I use:

Fajita Marinade

1/2 teaspoon salt
1 tablespoon freshly ground pepper
zest of one lemon
2 garlic cloves, grated
1/2 cup soy sauce
1/2 cup cooking oil
1/2 cup red wine vinegar

Sprinkle first four ingredients over both sides of meat. Mix the soy sauce, oil, and red wine vinegar and soak the meat thoroughly in the mixture. Refrigerate for 1 hour or more before cooking.

Grill for approximately 5 minutes on each side. Cut meat into about 5 inch pieces and slice against the grain.

Marinates 4 pounds of fajitas.

Well, no, they aren't the same, although they are from the same general area of the steer.

A flank steak is what is usually used for London Broil, it's usually a bit tough and full of connective tissue. A skirt steak is the diaphragm muscle, it is the cut that was originally used for making fajitas, or so I've been told.

In spite of the fact that it's not a particularly tender piece of meat, it's relatively pricey everywhere, I think.

Like Sue, I tend to lean toward minimal "flavorings" for beef, I like the taste of beef and don't want to cover it up, but these cuts definitely lends themselves to marinating.

Another application is braciole; roll up the skirt steak in a roll with some sort of stuffing, and slowly braise it for an hour or so.

Lots of recipes out there; google 'braciole' and you'll get hundreds.

Neat! I will admit, I've never bought a skirt steak beacuse they are expensive and I have a fear of having it turn out really chewy. I usually wimp out and buy London Broil for fajitas and slice it really thin across the grain. Tell us how it turns out - you may talk me into trying this one yet!
