So I bought the chuck roast........

that several told me would make the best stewing beef and low and behold the butcher had skirt steak. That's the first I'd seen it here.

SO now I have this skirt steak....now what?

PS : It better be good 'cause it wasn't cheap!

You don't want to make stew of skirt steak do you?
Marinate it and grill it...
Marinate in soy sauce, brown sugar and garlic....for at least 24 hours....1/2 cup soy sauce to about 3 T brown sugar with a couple of cloves of garlic crushed.
then grill.....and put into a big fat hard roll and enjoy!

I agree lindac, but I'd add a good glug of dry red wine, about a cup, to that marinade, cuts some of the saltiness of the Soy Sauce. Also, be sure to slice across the grain or it'll be tougher than shoe leather!

You can treat it like a pot roast, braise on the stove or in the oven. It will take longer than a chuck roast due to thickness. I always slice thin. What about doing it this way.... Stracotto di Manzo 1 ounce dried porcini mushrooms 2 cups beef stock Salt and pepper 1 (4-pound) beef eye of round 2 tablespoons olive oil 2 tablespoons pancetta, chopped 1 finely chopped onion 1 finely chopped carrot 1 finely chopped celery stalk 3 cloves garlic, minced 2 bay leaves 1 tablespoon chopped fresh rosemary 1/4 cup tightly packed parsley leaves, chopped 3 tablespoons tomato paste 5 cups red wine 1 (28-ounce) can whole tomatoes, drained and crushed Soak the porcini mushrooms in 1 cup of hot stock until softened, about 30 minutes. Strain the liquid through a coffee filter or a sieve lined with a double layer of cheesecloth. Trim any hard bits from the mushrooms. Set aside the mushrooms and liquid separately. Season the beef with salt and pepper. In a large casserole, heat 2 tablespoons of the olive oil over medium high heat until hot but not smoking. Brown the beef on all sides, about 15 minutes total. Transfer the beef to a plate. Pour off browning fat. Add pancetta, onions, carrots, and celery, stirring, until they are golden. Add garlic and cook 1 minute more. Season lightly with salt and pepper. Stir in bay leaves, rosemary, parsley, and tomato paste. Add the wine and simmer until it is reduced by half, about 20 minutes. Add the beef, tomatoes, porcini mushrooms, mushroom liquid, and enough beef stock to come 2/3 up the side of the beef. Bring to a simmer, cover, and cook at a gentle simmer for 2 1/2 to 3 hours, until the meat is tender. Turn the roast every 30 minutes or so. Transfer the meat to a cutting board and cover with aluminum foil to keep warm. Skim off any fat from the surface of the liquid. Strain the liquid, pressing on the solids with a spoon to extract as much liquid as possible. Discard the solids and return the strained sauce to the pot. Bring to a boil and let cook uncovered for a few minutes to further reduce and thicken the liquid. Season with salt and pepper, to taste. Slice the roast and serve with the sauce and soft polenta. Set aside. Saute bacon until barely crisp in Dutch oven or large covered skillet; remove bacon. Add meat to pan and brown evenly. Combine remaining ingredients and add to beef. Kalbiqui Korean Spiced Barbecued Beef Ribs 2 lbs beef short ribs, cut into 3 inch lengths (with bone is tastiest, but not absolutely necessary) 1 T sesame seeds, toasted and crushed 4 T soy sauce 4 green onions, white & light green parts only, finely sliced 3-6 garlic cloves, crushed & finely chopped 1 1/2 T sesame oil 1 inch chunk of fresh ginger, peeled & grated freshly ground black pepper (I like lots!) 2 t rice wine or dry sherry (I have used dry vermouth or even once, whiskey when I didn't have the rice wine, to good effect.) 2 t sugar Slash each rib in several places to let the marinade soak in really well. This is important as the marinade will tenderize otherwise tough meat. Mix all the ingredients & pour over the meat, spending a little time to work the marinade into all the meat surfaces & the slashes. Marinate for at least 3 to 4 hours, preferably over night. Heat up your barbecue & grill the beef, brushing occasionally with the leftover marinade for about 12-15 minutes on each side. Timing, of course, depends also on the heat of your grill and air temperature, but the meat should be nicely brown with just a bit of char. Also, though I generally am a rare beef gal, they really shouldn't be any more rare than medium. These ribs are richly flavored, and a bit salty so they really need to be served with a bland side dish such as plain rice or boiled potatoes. The Koreans eat them with kimchi, rice and a couple of fresh salads, and, having developed quite a taste for kimchi myself, so do I. The amount of sugar can be increased, which will make the sauce into a sort of garlicky teriyaki, but more care with the cooking will be necessary as the sweeter marinade will burn more easily.

This was really, really good! I was happy with the recipe, but the meat itself was fantastic. I have never felt completely successful with pot roasts. I always seem to have dry meat under the gravy. This roast, which I wound up cooking almost three hours at 225Â° and then letting it rest for another 20 minutes while I strained all the juices out, let the fat rise to the top, removed the fat and returned the juices to the pot with all the chopped onion, was delicious. I cooked it to an internal temp of 175Â° worrying that it would be overdone, but it was perfect. I found a reference on the web suggesting an internal temp of 165Â° but it was not tender enough and the juices were too bloody for a pot roast. I blitzed the juices and the onion into a smooth sauce and added just a little, about a teaspoon, of cornstarch stirred into a couple of ounces of red wine to thicken it. The meat sliced smoothly and perfectly and was meltingly moist and tender. It was certainly the best pot roast I have ever made and I thought this is what you would get if you ordered a fancy braised beef in a good restaurant. Everyone enjoyed it and the simple sides of baked sweet potato and steamed green beans were perfect. I'm looking forward to cooking my other piece in a more savory manner, undoubtedly with mushrooms and red wine. I will be looking for more PRIME cross cut chuck. I love, love, love the beefy taste of skirt steak. It's a bit chewy, but it is soooo good.

I'm a purist when it comes to meat, favoring the taste of the meat with some complimentary herbs so I don't use soy-based products to marinate, just olive oil, fresh minced garlic, herbs (dry or fresh) similar to this Romanian steak recipe, although I put it in a zip lock bag with a bit more oil.

Here in the Northeast many of our 'diners' offer Romanian steak - and they do a great job.

It's best cooked medium rare. The more its cooked, the tougher it will be.

Not cheap here either!

No linda, the chuck is for the stew, the skirt steak was a whim....

So basically it's no different than flank? Seems to me I saw recipes specifically for skirt steak here. So just use it like I would flank?

Maybe I was thinking tri tip...another cut I've never seen here.

Skirt steak is great for fajitas. Here's the marinade I use:

Fajita Marinade

1/2 teaspoon salt
1 tablespoon freshly ground pepper
zest of one lemon
2 garlic cloves, grated
1/2 cup soy sauce
1/2 cup cooking oil
1/2 cup red wine vinegar

Sprinkle first four ingredients over both sides of meat. Mix the soy sauce, oil, and red wine vinegar and soak the meat thoroughly in the mixture. Refrigerate for 1 hour or more before cooking.

Grill for approximately 5 minutes on each side. Cut meat into about 5 inch pieces and slice against the grain.

Marinates 4 pounds of fajitas.

Well, no, they aren't the same, although they are from the same general area of the steer.

A flank steak is what is usually used for London Broil, it's usually a bit tough and full of connective tissue. A skirt steak is the diaphragm muscle, it is the cut that was originally used for making fajitas, or so I've been told.

In spite of the fact that it's not a particularly tender piece of meat, it's relatively pricey everywhere, I think.

Like Sue, I tend to lean toward minimal "flavorings" for beef, I like the taste of beef and don't want to cover it up, but these cuts definitely lends themselves to marinating.

Another application is braciole; roll up the skirt steak in a roll with some sort of stuffing, and slowly braise it for an hour or so.

Lots of recipes out there; google 'braciole' and you'll get hundreds.

Neat! I will admit, I've never bought a skirt steak beacuse they are expensive and I have a fear of having it turn out really chewy. I usually wimp out and buy London Broil for fajitas and slice it really thin across the grain. Tell us how it turns out - you may talk me into trying this one yet!
