Freezing Cucumbers...Oh YES!

Teresa in MN asked about this. Have made a frozen cuke and onion salad for over 40 years. My basic recipe is 4 or 6 mm processor sliced -not peeled- burpless cukes (organic is best.) Trim 1/4" off each end after washing. Slice onions (R,W or Y) alternately as desired. For each 14 cup amount (this is my processor's container volume), I sprinkle and fold in 1 T Kosher pickling salt. Let set, covered, at RT 3 hours or overnight in fridge. Drain well. Add 1/2 cup olive oil, 1/2 cup apple cider vinegar, 1 T maple syrup, 1 t each celery and mustard seeds. (Sometimes, I add fresh dill weed). Mix well. Package, dividing juices among pkts, and freeze.

My pkts are usually 1-2 cups in plastic sandwich bags, which are then stored in 1/2 gallon milk or ice cream cartons. We like them barely thawed-sometimes with a 1 cup pkt of frozen tomatoes...salt and pepper.

These are similar to the 'wilted' Slavic/eastern Europe cuke salad some may enjoy. IF you only like crisp cukes, you may not like these. Sometimes, I use a pkt of these frozen cukes in a stir fried beef...with Asian peppers, etc. A friend made these with 'pickling cukes' and the skin was tough-so now she peels any that are not Asian/European/burpless.

The first time I made these, I only made a quart. Enjoyed them...and now it is another "frozen treasure."
