What to serve with corned beef tongue?

I'm looking for suggestions to round out a meal of corned beef tongue that are relatively quick and easy, and healthy!

I'll be out shopping and playing all day with my mom and daughter and want something fairly quick to serve for dinner.

The tongue will be cooked the day before and chilled. I have plenty of time to prep/cook the day before.

I'm think about roasting a bunch of veggies and just serve with a good crusty bread.

Other ideas? It's supposed to be hot the day I plan to serve it so even cool menu items are fine. I'd prefer NOT to serve sandwiches, but maybe....

To me a cold corned beef tongue needs to be in a sandwich with a good Jewish rye, spicy German mustard, a good imported Swiss cheese....served with sides of slaw or kraut and potato salad.

For me too LindaC!!

However....mom has difficulty chewing a big sandwich like that. Any ideas for modifying to make it easier to eat?

Those aren't words I would expect to find in the same sentence together. I've never eaten tongue, but I eat liver and hocks and other parts of animals - the tongue is just too unconstructed for me to come to as an adult with no one holding my hand. We smoke bluefish. I put live and kickin' lobsters in a boiling pot of water. So I'm sure I'd love smoked tongue - I'd probably dice it and put in a cabbage bean soup with a little hot sauce and some cornbread???? seagrass

DC, I do something similar with our corned beef. My husband is on a salt-restricted diet, but he & I dearly love corned beef. So when it's on sale for St. Patrick's Day, I get a hunk and soak it for two days, changing the water at least 2 times a day. Then I cook it in fresh water in my slow cooker. Once the water comes to a simmer/boil in the slow cooker, I change the water again. I know I'm losing flavor, but these are necessary steps for his health's sake. Yet in spite of all that water, the corned beef tastes pretty good -- much milder than regular but tasty nonetheless. So we can enjoy a corned beef & cabbage dinner and corned beef sandwiches for lunch the next day. And no swollen, painful feet or congested lungs from over indulging.

Because of this thread, I bought and cooked corned beef brisket last week. It was wonderful!! Very tender and very flavorful. I wondered why I don't cook them more often. Because of this thread I learned to buy a "flat." Until this thread, I did not know there was a difference, or even a choice. I opted for the long simmer in the oven, rather than the bake. I wanted something that would take little of my attention because I was in the middle of making the "car bomb" cupcakes. Rather than cooking the veggies with the brisket, I cooked them separately, mainly because I wanted to make skillet-roasted potatoes (not a fan of boiled potatoes). We got 2 meals out of it, then I got a corned beef sandwich and to finish up the "crumbs," I made a dab of corned beef salad to munch on with crackers. I ♥ CF

Thanks islay, i will soon make that. A rustic easy prep is my game indeed. I don't have muffin tins of any kind, never have for some reason but will improvise with ramekins? Also late to the party having just spent the weekend harvesting yet again. I just made a wonderful vegetable soup using a smoked chicken stock from the freezer, creating during the drive home 'think tank'.. A nice pureed veg soup of roasted fresh harvest. Tomato. leek, shallot, celery, corn, green beans...had some left-over caramelized onions and half a baby white pumpkin i had roasted. All in the small 2 qrt soup pot when the stock came to heat...Un-packed the truck and it was ready...immersion blender and done. Nice that it did not have oil or any butter or fat at all but so rich with flavor. -I drove and husband snored the entire way home. He was shocked at the speedy outcome but cooking in my head while driving made the trip zippy fast. All the roasted veggies were from last nights dinner and a fresh tomato corn salsa. I don't consider it leftovers as i like to roast and prep soups a day ahead anyway.

How about a chef's salad with strips of the tongue and Swiss cheese and served with homemade Russian dressing and toasted rye bread on the side?

Serve your mother all the sandwich components separately on her plate....slices of tongue, slice of cheese, bread and the salads.

Maybe an open faced sandwich would work too. Eat with a fork. Hmmmm.....

I had an omlet with Tongue, Swiss and kraut about 15 years ago at Wolfie's in Miami Beach. Maybe that would work for you?

I think I'll sub buttered cabbage for the kraut...mom/DD not big fans and I'm out of my homemade kraut anyway.

So I'm thinking at this point, sliced tongue (warmed), buttered cabbage (thinly sliced like kraut, quick saute'), good rye bread and brown mustard.

Eat as is or make a sandwich on your plate, your choice!

I may toss in some red pepper and broccoli or sliced brussel sprouts for color. Otherwise, it's a pretty drab meal!

Alexa, I love the omelet idea for leftovers the next morning!
