A pound of pepper jack...

I was gifted with a pound of pepper jack cheese. I can only make so many omelettes. Other than snacking on it how else can I use this bounty?

Dice it up to add to a black bean and corn salad. I can post a recipe later.

Cube it up, put in a freezer zip bag and freeze it for future uses where it will be melted.

Make quesadillas with grated zucchini. I have a recipe for this also.

Fix a plate of nachos with fresh or pickled jalapenos, diced bell peppers, chopped onion, lots of cheese, and a drizzle of salsa and sour cream after baking.

Here is one. Recipes that call for a # of peppers would be same # thawed or fresh. Since yours are already chopped (not sure why you would chop before freezing?) all I can think of is to get a fresh one, chop it, and measure it for comparison. is there a formula for x pounds of low acid ingredients need x cups of vinegar to acidify safely for jam? No. Each has to be tested individually. I used 1 1/3 pounds of peppers would 1 cup of Apple Cider Vinegar and 5 cups of Sugar be safe? Can't say. It would just be a guess. Finally, I do not blend my peppers such that there is a variance in how many peppers are in each jar, I try and even it out but sometimes jars get more peppers and sometimes less when I pour in the jam. Could this pose a safety risk? Not if it is properly acidified when made. The pH level would be uniform. If I make jam and refrigerate (not process in BWB) is there a general rule for safe refrigerated shelf life (6 weeks? 2 weeks?) If using a tested and approved recipe then in theory it should be safe from anything but molds. The general guideline is 3-6 weeks but that is open to all sorts of variables. Cape May Point The southern tip of NJ . I'm heat zone 1 due to the fact I'm totally surrounded by water, like being 20 miles out at sea. When it gets 95 just 10 miles up the road its only 85 here. Makes for a slower warmup in the spring but holds off the frost in the Fall well into Nov. most years. The Bay is 4 blocks west , The Ocean 6 blocks east. I can hear the waves pounding when working in my gardens Ill have 6 in ground this year and others in pots. Im trying to do as much isolation as possible between species this year as well as a mix at a local Vineyard and also on a friends farm . I own no land myself but have friends who will let you grow on their land and even get water. I work construction and helped build a winery so I have an in there and another friend with a truck farm has let me use a 60 by 100 ft plot with a well. All within 3 miles of home. Can ride my bike from plot to plot watering and weeding as I go. Can even sell peppers to customers at both the Winery and the farm stand in front of my friends farm. Peppers do real good here, Im blessed with a good climate , good soil,and good friends. Even got a friend with a John Dear with a 6ft tiller that helps me out.Life is good for a pepper grower in my neck of the woods.I also do tomatoes,eggplant, Herbs etc. Perennials are also a passion for me . Also plan some crosses under controlled conditions this year

A friend of mine sent me this recipe, and she makes them. She's never baked them in the microwave. I doubt if I would either because I wouldn't bake just one, but it might be worth a try. It sure would be a handy dough to have on hand. Refrigerator Applesauce Wheat Muffins Favorite Recipes --The Muffin Cookbook Mix up this batter and refrigerate in a tightly covered plastic bowl. If you cook for one, you can scoop out batter for one muffin at a time. Bake in the microwave oven for 30 to 50 seconds, or in conventional oven. 3/4 cup All-purpose Flour 1/2 cup Whole Wheat Flour 1/2 tsp cinnamon 1/4 tsp Salt 1 cup Quick-cooking Rolled Oats 1/2 cup Packed Brown Sugar 1 tsp Baking Powder 1/2 tsp Baking Soda 3/4 cup Buttermilk 1/4 cup Applesauce 1/4 cup Vegetable Oil 1 egg, beaten 1/4 cup Raisins Directions: In large bowl, combine flours, oats, brown sugar, baking powder, baking soda, cinnamon and salt. In small bowl, combine buttermilk, applesauce, oil and egg until blended. Stir into flour mixture just until moistened. Fold in raisins. Cover and refrigerate overnight or up to 10 days. Microwave: Line 6 microwavable muffin-pan cups with double paper liners. Spoon batter into each cup filling 1/2 full. Microwave at HIGH (100%) power, 3 to 3 1/2 minutes or until wooden pick inserted in center comes out clean. Rotate dish 1/2 turn halfway thru cooking. Let stand 5 minutes. Remove from pan. Repeat procedure. For last 3 muffins, line 3 muffin cups with double paper liners. Microwave at HIGH 1 1/2 to 2 minutes. Let stand 5 minutes. Remove from pan. Makes about 15 muffins. Conventional: Preheat oven to 400 F. Grease or paper-line 12 (2 1/2 inch) muffin cups. Spoon batter into cups. Thanks for the kind words. JasDip, thankfully his reactions were limited to only the rather malodorous ones! MarlinGardner, he's a Deutsch Drahthaar, a versatile hunting breed controlled through a German association. They hunt any and everything, from quail to bears. Harry and Sam are used mostly for ducks, geese, pheasant, grouse, rabbits, and squirrels. Some DDs are used as blood trackers to find people, live or dead. Their hunting abilities are their only qualifies. There are no "breed standards" as to size, color, coat density, etc. They simply have to hunt, hunt hard, and hunt everything. We've never tried him on an elephant, LOL, but I'm sure he'd love to tract one, and then come running back to me because it would be "so scarry, Mom." They are very kind, gentle dogs and don't know a stranger. Little dogs, puppies, children, even babies are handled with "kid gloves" by Harry. He is an absolute love bug, lap dog, sweetie pie. Liz GA Harry had a modified BARF diet for his first year. Since he had no desire to eat (he wouldn't stay still long enough to eat even a small bowl of food) I tempted him by making "Groovy Gravy" to add to his dry food. It was made from brown rice, chicken thighs, broccoli, carrots. He was so active, and growing so fast, I was constantly trying to get calorie dense foods into him. I bet a recipe of hot spinach dip or artichoke dip would be good with grated pepper jack added! And that dip will freeze as well.

This dip is a T&T recipe; I would sub the pepper jack for the parmesan and omit the jalapenos unless you want it really spicy.

Jalapeno Popper Spread

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese

Directions:
1. Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
2. Microwave on High until hot, about 3 minutes.

Melt a slice on a grilled burger or chicken breast for a sandwich with a little kick.

It would be good subbed for the cheddar in this salad.

Layered Mexican Salad

Dressing:
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup jarred salsa
2 T chopped fresh cilantro
2 tsp fresh lime juice

Salad:
1 romaine heart, torn into bite sized pieces (about 4 cups)
1/2 small red onion, sliced thin
2 cups cherry tomatoes, halved (quartered if large)
1 cup fresh or frozen corn kernels
1 (16 oz) can black beans, drained and rinsed
2 ripe avocados, pitted, skinned and chopped
1-1/2 cups shredded sharp cheddar cheese (I used Mexican blend)
2 cups crushed tortilla chips

For the dressing: Whisk all ingredients in medium bowl.

For the salad: Place lettuce in large serving bowl. Spread half of dressing over lettuce, then layer with onion, tomatoes, corn, beans, avocados and cheese. Spread remaining dressing over salad. Sprinkle with tortilla chips. Serve. (Salad can be refrigerated for 1 day; reserve tortilla chips until just before serving). Serves 6-8.

Grilled cheese (on sour dough) and topped on burgers are two of my favorite pepper jack ideas. Simple pleasure.

I love to put pepper jack cheese in my meatloaf -- just cube it and mix it in.

It doesn't take me long to just snack my way through a pound of pepper jack cheese. It's my favorite snacking cheese. But I also use it in some of the ways mentioned above, such as the grilled cheese, shredded into tacos, shredded on top of baked potatoes...etc. Basically, I use pepper jack in all the ways I use cheddar.

I'd also be snacking on that....but it's also grated on top of a green salad.

Great ideas! I kept looking at it and drawing a blank. For snacking cheese I like an aged cheddar or aged gouda. Enchiladas and that salad sound perfect as I can use it in a dish to gift back to the person who gave it to me.

I stoppped in just to see the suggestions. I seem to just snack it away on crackers too but there are some great ideas here!

Make a pork fajaita with lots of cheese.
Pulled pork seasoned with cumin, chilis, etc., onions peppers, and your cheese in a soft tortilla. Make a bunch and freeze 'em!

Make a "pizza"..crust...pressed out thin, docked and parbaked spread with pesto, very thinly sliced sweet onions and roma tomatoes ( blotted to remove moisture)....topped with grated pepper jack and baked about 10 minutes at 425.

I like to sprinkle cheese on scrambled eggs & hashbrowns. Pepper Jack wold be great on both.
