A pound of pepper jack...

I was gifted with a pound of pepper jack cheese. I can only make so many omelettes. Other than snacking on it how else can I use this bounty?

Dice it up to add to a black bean and corn salad. I can post a recipe later.

Cube it up, put in a freezer zip bag and freeze it for future uses where it will be melted.

Make quesadillas with grated zucchini. I have a recipe for this also.

Fix a plate of nachos with fresh or pickled jalapenos, diced bell peppers, chopped onion, lots of cheese, and a drizzle of salsa and sour cream after baking.

I didn't weight it and didn't bother to look closer at it, but they look large. I used to eat this when I was a child in the Philippines and the jackfruit tree was very commonly grown where I lived; some of the fruit does become too large and two people has to carry it. Getting the sweet, yellow flesh out of the fruit is a tedious work--and, which one thing I hated about the fruit, sticky! Call Frankie's Nusery if they have the strain of jackfruit you wanted, they may have connection of who has it, since they do specialize in tropical fruit trees.

A friend of mine sent me this recipe, and she makes them. She's never baked them in the microwave. I doubt if I would either because I wouldn't bake just one, but it might be worth a try. It sure would be a handy dough to have on hand. Refrigerator Applesauce Wheat Muffins Favorite Recipes --The Muffin Cookbook Mix up this batter and refrigerate in a tightly covered plastic bowl. If you cook for one, you can scoop out batter for one muffin at a time. Bake in the microwave oven for 30 to 50 seconds, or in conventional oven. 3/4 cup All-purpose Flour 1/2 cup Whole Wheat Flour 1/2 tsp cinnamon 1/4 tsp Salt 1 cup Quick-cooking Rolled Oats 1/2 cup Packed Brown Sugar 1 tsp Baking Powder 1/2 tsp Baking Soda 3/4 cup Buttermilk 1/4 cup Applesauce 1/4 cup Vegetable Oil 1 egg, beaten 1/4 cup Raisins Directions: In large bowl, combine flours, oats, brown sugar, baking powder, baking soda, cinnamon and salt. In small bowl, combine buttermilk, applesauce, oil and egg until blended. Stir into flour mixture just until moistened. Fold in raisins. Cover and refrigerate overnight or up to 10 days. Microwave: Line 6 microwavable muffin-pan cups with double paper liners. Spoon batter into each cup filling 1/2 full. Microwave at HIGH (100%) power, 3 to 3 1/2 minutes or until wooden pick inserted in center comes out clean. Rotate dish 1/2 turn halfway thru cooking. Let stand 5 minutes. Remove from pan. Repeat procedure. For last 3 muffins, line 3 muffin cups with double paper liners. Microwave at HIGH 1 1/2 to 2 minutes. Let stand 5 minutes. Remove from pan. Makes about 15 muffins. Conventional: Preheat oven to 400 F. Grease or paper-line 12 (2 1/2 inch) muffin cups. Spoon batter into cups. Bake 18 to 20 minutes or until toothpick inserted in center comes out clean Makes 12 muffins. Note: Have never cooked in the Microwave

Too many danged events in a row, so I've been slow in reporting back. :( Apologies! You all were so very helpful! Thanks to you, I have a much bigger variety of options in my arsenal! Even though there is cheese in it, I went with Mtnrdredux's beet-endive spears. It's mostly not cheese. :) I had both red and white endive, and there was a bag of something at Trader Joe's called "heirloom red spinach" which I'd never seen before. The leaves are colored much like a begonia, with bright red on the bottom and reddish green on top. To complete the picture, I should have done both red and gold beets, but I had leftover beets just using the red. So I alternated endive colors, and added an alternating red/red-green spinach leaf to each one, and they looked really pretty. This is the best picture of a plateful that I could get: The chevre was thinned a little with some vermouth and some white balsamic vinegar, and seasoned with Penzey's Greek seasoning blend along with a salt free garlic pepper blend (this was after midnight before the event I was working and the party, so I just went with what was already mixed and sounded tasty rather than trying to invent a flavor for the occasion. I also added a little chipotle powder and a bunch of dried thyme from a friend's garden. There was a little leftover filling and it was delicious on whole wheat bread. :) I only got a little tester, but I think it must have been good because it all went fast. :) Thanks again to everyone and Happy Holidays!

I bet a recipe of hot spinach dip or artichoke dip would be good with grated pepper jack added! And that dip will freeze as well.

This dip is a T&T recipe; I would sub the pepper jack for the parmesan and omit the jalapenos unless you want it really spicy.

Jalapeno Popper Spread

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese

Directions:
1. Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
2. Microwave on High until hot, about 3 minutes.

Melt a slice on a grilled burger or chicken breast for a sandwich with a little kick.

It would be good subbed for the cheddar in this salad.

Layered Mexican Salad

Dressing:
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup jarred salsa
2 T chopped fresh cilantro
2 tsp fresh lime juice

Salad:
1 romaine heart, torn into bite sized pieces (about 4 cups)
1/2 small red onion, sliced thin
2 cups cherry tomatoes, halved (quartered if large)
1 cup fresh or frozen corn kernels
1 (16 oz) can black beans, drained and rinsed
2 ripe avocados, pitted, skinned and chopped
1-1/2 cups shredded sharp cheddar cheese (I used Mexican blend)
2 cups crushed tortilla chips

For the dressing: Whisk all ingredients in medium bowl.

For the salad: Place lettuce in large serving bowl. Spread half of dressing over lettuce, then layer with onion, tomatoes, corn, beans, avocados and cheese. Spread remaining dressing over salad. Sprinkle with tortilla chips. Serve. (Salad can be refrigerated for 1 day; reserve tortilla chips until just before serving). Serves 6-8.

Grilled cheese (on sour dough) and topped on burgers are two of my favorite pepper jack ideas. Simple pleasure.

I love to put pepper jack cheese in my meatloaf -- just cube it and mix it in.

It doesn't take me long to just snack my way through a pound of pepper jack cheese. It's my favorite snacking cheese. But I also use it in some of the ways mentioned above, such as the grilled cheese, shredded into tacos, shredded on top of baked potatoes...etc. Basically, I use pepper jack in all the ways I use cheddar.

I'd also be snacking on that....but it's also grated on top of a green salad.

Great ideas! I kept looking at it and drawing a blank. For snacking cheese I like an aged cheddar or aged gouda. Enchiladas and that salad sound perfect as I can use it in a dish to gift back to the person who gave it to me.

Or use it to make burritos for your freezer. I posted the recipe I used in New Recipe Reviews for July.

You could make mac and cheese and add some for a little extra flavor.

Wow, I think you need more pepper jack now. I don't think a pound will be enough for all of these suggestions!

Make a "pizza"..crust...pressed out thin, docked and parbaked spread with pesto, very thinly sliced sweet onions and roma tomatoes ( blotted to remove moisture)....topped with grated pepper jack and baked about 10 minutes at 425.
I just made that up!!
