What are you preserving/canning?

The farmers' markets are just opening up here and I'm digging out all my canning stuff. I'm drying basil, parsley, oregano, and thyme. Pretty soon I'll be putting up raspberries and blackberries. I only discovered last summer that sugar is not a preservative -- LOL, it's true. So this year I'll not put much into the berries.

Also, about 20 years ago I met a woman from Italy and she told me about preserving tomatoes and basil in olive oil. She raved about it and how easy it was to prepare. All this time I've been wanting to try it, but never could get up the courage. So guess what. Mary Ann Esposito did an entire show on this technique, and it really is easy. She also does eggplant the same way. I intend to try both because you don't have to worry about cooking or sealing. Here's the method:

1. Dehydrate some plum tomatoes, using a dehydrator or the oven (omit this step for eggplant).

2. Re-hydrate the dried tomatoes by simmering them in some red wine vinegar (begin here for the eggplant, sliced in �" pieces). Drain on paper towel.

3. In the bottom of the jar, sprinkle some salt and peppercorns.

4. Add a few leaves of fresh basil.

5. Add two or three tomatoes.

6. Repeat until the jar is filled, then pour EVOO to completely cover.

7. Store on the shelf or in a refrigerator.

To serve, Ms. Esposito rubs fresh garlic on a good quality toasted bread, and tops it with two toms and a slice of the eggplant, then grates a bit of parmesan on top.
