What Can We Do To Preserve The Sealer on Our Granite Counters?

Once we are done with our kitchens, I'm sure we'd all like to wait as long as possible to re-do sealer,etc. I know that some cleaning prducts can take it off; I'm just using water or Windex with Vinegar (which has been tested on sealed granite.)
Anything else we should be doing? For example, is it important to wipe a counter dry vs. letting water on it just air dry? Or does that make no difference? I often let muine air dry after wiping and it just occured to me that may be I shouldn't....
