The Odd Couple----Scallops and Bacon

Bacon and scallops, what an odd couple! Two foods with such different personalities.

You do find many recipes of wrapping scallops with bacon.

As you know, the problem is it takes much longer for bacon to be done than for scallops. By the time you have the bacon crispy-ed up, the scallops will be way overcooked and hard as rubber.

Applying the law of physics, thermal dynamics and mechanical engineering, (LOL)here is how I have overcome the problem. I pre-bake the bacon in the shape of rings to exactly the way I like bacon done, crispy and most of the fat rendered out. I then insert the uncooked scallops in the bacon rings and bake again. The scallops will be done just right.
