Whole wheat pastry flour

A cousin will be visiting us this week, and I'd like to make him a birthday cake on Friday. He's diabetic and taking several medicines, but he doesn't need insulin and doesn't test his glucose levels or count carbs; he seems to be doing OK by just avoiding sweets and eating regular foods in moderation. I'm going to make a small, simple cake that doesn't need frosting: maybe an applesauce cake or a banana cake, or maybe some gingerbread. I found a good web site with recipes for diabetics, but many of the cake recipes call for whole wheat pastry flour. My supermarket has regular whole wheat and bleached whole wheat, as well as bread mixes, but nothing says "pastry flour." Can I use the regular whole wheat and just mix it with all-purpose flour or cake flour (in what proportions?), or where else can I look for pastry flour? Would a health food store carry it? Any other suggestions?
