Sherry Vinegar

Yesterday I visited a gourmet shop in town. The resident chef recommended a Spanish Sherry vinegar (aged in oak) as I looked for a red wine vinegar. I got both. He suggested sauteing rock shrimp for a couple of minutes, removing them from pan and deglazing the pan with the Sherry vinegar, add a bit of butter and pour over the shrimp. Sounds good!

Does anyone else have suggestions of how I can use this big bottle of aged vinegar?
